Tips for success
For a more intense coffee flavor, add a pinch of instant espresso powder to the dry ingredients. If you prefer a less boozy dessert, reduce the coffee liqueur to 1 tablespoon and add an extra tablespoon of espresso.
The cakes are best served fresh from the oven, but you can prepare the batter ahead and refrigerate it in the ramekins for up to 24 hours; bake directly from the fridge, adding 1-2 minutes to the baking time.
To achieve a clean unmolding, make sure the ramekins are well buttered, and do not skip the 2-minute rest. If the cakes stick, gently loosen the edges with a small spatula.
For a decorative touch, dust the plates with cocoa powder before placing the cakes. The espresso foam can be made ahead and kept in the refrigerator for up to 2 hours; give it a quick shake before serving.
Variations
- Mocha Lava Cake: Add 1 tablespoon of unsweetened cocoa powder to the flour and increase the espresso to 2 shots for a deeper chocolate-coffee flavor. Omit the coffee liqueur and add 1 teaspoon of vanilla extract for a non-alcoholic version.
- Salted Caramel Lava Cake: After inverting the cake, spoon 1 tablespoon of warm salted caramel sauce over the top before adding the espresso foam. The sweet-salty combination pairs beautifully with the bitter coffee notes.
- Peppermint Mocha Lava Cake: Add 1/4 teaspoon of peppermint extract to the batter along with the eggs. Serve with a dollop of whipped cream and a sprinkle of crushed peppermint candies for a festive twist.
- Gluten-Free Lava Cake: Replace the all-purpose flour with a 1:1 gluten-free flour blend. Ensure the blend contains xanthan gum for structure. The baking time may need to be reduced by 1 minute; check for doneness at 10 minutes.

Store any leftover cakes (without foam) in an airtight container in the refrigerator for up to 3 days. The foam is best used fresh but can be refrigerated for a few hours.
Reheat the cakes in a 350°F (175°C) oven for 5-7 minutes until warmed through, but note that the lava center may set upon reheating.
The cake batter can be prepared up to 24 hours ahead and kept in the refrigerator in the ramekins. When ready to bake, preheat the oven and add 1-2 minutes to the baking time. The espresso foam can also be made a few hours ahead and stored in the refrigerator; shake well before using.
Serving ideas
Serve the cakes warm, directly after unmolding, with the cold espresso foam spooned on top. The contrast of temperatures is part of the experience. Garnish with three roasted coffee beans per cake for a visual nod to the espresso martini. This dessert is rich, so a small portion is satisfying.
Pair with a shot of espresso or a small glass of coffee liqueur to enhance the cocktail theme. The cakes are also delicious with a dollop of lightly sweetened whipped cream if you prefer a less coffee-forward presentation.
For a special occasion, serve on dessert plates with a dusting of cocoa powder or a drizzle of chocolate sauce.

Espresso Martini Molten Lava Cake

Ingredients
- 6 oz dark chocolate (70% cacao), chopped
- 1/2 cup unsalted butter, plus more for ramekins
- 1 shot fresh hot espresso (about 2 tbsp)
- 2 tbsp coffee liqueur (such as Kahlua)
- 2 large eggs
- 1/4 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/2 cup cold espresso martini foam (shaken espresso, coffee liqueur, and cream)
- 12 roasted coffee beans
Instructions
- Preheat the oven to 425°F (220°C). Butter four 6-ounce ramekins and place them on a rimmed baking sheet. In a medium microwave-safe bowl, combine the chopped dark chocolate and 1/2 cup butter. Microwave in 30-second bursts, stirring between each, until melted and smooth. Alternatively, melt over a pot of simmering water.
- To the melted chocolate, add the hot espresso and coffee liqueur. Whisk until combined. Add the eggs and brown sugar, and whisk vigorously until the batter is smooth and glossy. The mixture will thicken slightly.
- Sprinkle the flour over the batter and fold it in with a spatula until just combined. Divide the batter evenly among the prepared ramekins. Smooth the tops.
- Bake the cakes for 11 minutes, or until the edges are set but the centers are still slightly soft. The tops should look just set, and the cakes should have a slight jiggle in the center.
- Remove the baking sheet from the oven and let the ramekins rest for 2 minutes. Run a thin knife around the edge of each ramekin, then carefully invert each cake onto a serving plate. Allow them to sit for another minute so the lava can settle.
- Spoon the cold espresso martini foam over the top of each warm cake. Garnish with three roasted coffee beans on each cake. Serve immediately.
