Before you start
Before starting, measure all ingredients and have them ready. Butter the ramekins and place them on a baking sheet. Preheat the oven to 425°F (220°C). Make the espresso and let it cool slightly.
For the espresso foam, combine 1/2 cup cold espresso, 2 tablespoons coffee liqueur, and 1/2 cup heavy cream in a jar with ice, shake vigorously for about 30 seconds, then strain. Keep the foam cold until ready to use.
Ingredients at a glance (9)
- 6 oz dark chocolate (70% cacao), chopped
- 1/2 cup unsalted butter, plus more for ramekins
- 1 shot fresh hot espresso (about 2 tbsp)
- 2 tbsp coffee liqueur (such as Kahlua)
- 2 large eggs
- 1/4 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/2 cup cold espresso martini foam (shaken espresso, coffee liqueur, and cream)
- 12 roasted coffee beans
Instructions
Make the Batter
- Melt Chocolate and ButterPreheat the oven to 425°F (220°C). Butter four 6-ounce ramekins and place them on a rimmed baking sheet. In a medium microwave-safe bowl, combine the chopped dark chocolate and 1/2 cup butter. Microwave in 30-second bursts, stirring between each, until melted and smooth. Alternatively, melt over a pot of simmering water.Look for The chocolate mixture is glossy and fully melted, with no lumps.Tip Do not overheat the chocolate; it should be just melted to avoid seizing.
- Whisk Wet IngredientsTo the melted chocolate, add the hot espresso and coffee liqueur. Whisk until combined. Add the eggs and brown sugar, and whisk vigorously until the batter is smooth and glossy. The mixture will thicken slightly.Look for The batter is smooth, shiny, and has a pudding-like consistency.Tip Whisk thoroughly to ensure the eggs are fully incorporated for a stable structure.
- Add Flour and Fill RamekinsSprinkle the flour over the batter and fold it in with a spatula until just combined. Divide the batter evenly among the prepared ramekins. Smooth the tops.Look for The batter is thick and evenly distributed.Tip Do not overmix once the flour is added; a few streaks are fine.
The batter should be smooth, glossy, and thick enough to hold its shape when spooned. It will have a rich chocolate aroma with notes of coffee and liqueur. The ramekins should be filled evenly, and the tops smoothed. This phase should take about 10 minutes.
Bake and Unmold
- Bake the CakesBake the cakes for 11 minutes, or until the edges are set but the centers are still slightly soft. The tops should look just set, and the cakes should have a slight jiggle in the center.Look for The edges are firm, the center is soft and slightly wobbly, and the aroma is intensely chocolatey.Safe temperature 160°F (71°C) internal temperature (egg dishes)Tip Do not overbake; the lava center relies on the short baking time.
- Invert and RestRemove the baking sheet from the oven and let the ramekins rest for 2 minutes. Run a thin knife around the edge of each ramekin, then carefully invert each cake onto a serving plate. Allow them to sit for another minute so the lava can settle.Look for The cakes release cleanly and hold their shape, with a soft center.Tip Resting helps the cakes release without breaking.
After 11 minutes, the cakes will have puffed slightly and the tops will look set. The edges will be firm, but the centers will feel soft when lightly pressed.
The kitchen will smell intensely of chocolate and coffee. Let them rest for 2 minutes, then invert onto plates; they should release cleanly and hold their shape.
Finish and Serve
- Top with Espresso Foam and GarnishSpoon the cold espresso martini foam over the top of each warm cake. Garnish with three roasted coffee beans on each cake. Serve immediately.Look for The foam contrasts with the warm cake, and the coffee beans add an aromatic finish.Tip For a dramatic effect, spoon the foam just before serving.
The cold espresso foam should be spooned over the warm cakes just before serving. The foam will start to melt slightly, creating a marbled effect. Garnish with three coffee beans per cake. Serve immediately to enjoy the contrast of warm cake and cool foam.
Common mistakes
Overbaking is the most common mistake—it turns the lava center into a solid cake. Stick to the 11-minute bake time and check early if your oven runs hot. Another issue is not buttering the ramekins enough, which makes the cakes stick and break when inverted.
Use a generous layer of butter and run a knife around the edges before unmolding. Also, do not skip the resting step; it allows the cakes to release cleanly and the lava to settle.
How to tell it’s done
The cakes are done when the edges are set and the tops look just firm, but the centers still have a slight wobble when the pan is gently shaken. This usually takes about 11 minutes at 425°F (220°C).
To be safe, insert an instant-read thermometer into the center of a cake; it should read at least 160°F (71°C) to ensure the eggs are fully cooked. The cakes will continue to cook slightly from residual heat after removal.
