Tips for success

To add an extra layer of flavor, consider tossing the dry stuffing cubes with a small amount of poultry seasoning or fresh parsley before scattering them over the gravy. This enhances the aromatic profile of the dish. If you find the celery is not softening enough for your preference, you can lightly sauté the slices in a pan with a little butter for two minutes before adding them to the baking dish.

If you want to introduce more texture, you can sprinkle a handful of toasted pecans or dried cranberries over the top during the last five minutes of baking.

These additions provide a sweet and nutty contrast to the savory turkey and gravy, elevating the dish to feel more like a traditional holiday stuffing. Just be careful not to add them too early, as they can burn under the direct heat of the oven.

Variations

  • Sausage and Apple Bake: Replace half of the ground turkey with mild Italian sausage and add a layer of thinly sliced tart apples between the meat and the gravy for a sweet and savory twist.
  • Creamy Mushroom Variation: Stir a half cup of sautéed mushrooms into the gravy before pouring it over the turkey to add an earthy depth and a heartier texture to the base of the dish.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze for up to 1 month in a freezer-safe container.
Reheat
Reheat in a 350°F oven until warmed through or microwave individual portions.

Store any leftovers in an airtight container to maintain moisture. Let the dish cool at room temperature for no more than 2 hours before placing it in the refrigerator. The dish can be kept in the refrigerator for up to three days.

When storing, try to keep the stuffing layer slightly separated if possible, or accept that the cubes will soften significantly as they absorb the remaining gravy over time.

You can prepare this dish up to the point of baking by assembling the turkey, celery, and gravy in the dish. Cover it tightly and refrigerate for up to 24 hours.

When ready to bake, add the stuffing cubes and butter slices just before putting the dish into the oven. This prevents the stuffing from becoming overly saturated with gravy while sitting in the refrigerator, ensuring it remains perfectly crisp once baked.

Serving ideas

Serve this dish directly from the baking dish to maintain the presentation of the golden, crispy stuffing top. Use a large serving spoon to scoop through the layers, ensuring each portion includes a generous amount of the turkey and gravy base along with the toasted stuffing.

It pairs wonderfully with a side of steamed green beans or a fresh, crisp garden salad to balance the richness of the main course.

For a more formal presentation, you can portion the bake into individual ramekins before baking, adjusting the time accordingly. This creates an elegant look for dinner parties or holiday gatherings. Regardless of the serving style, keep the dish warm by placing it on a heat-safe trivet at the center of the table, allowing guests to serve themselves this comforting, hearty meal at their own pace.

Frequently asked questions

Can this be made ahead of time?
Yes, the dish can be assembled up to the point of adding the stuffing and butter and stored in the refrigerator for up to 24 hours. Add the remaining ingredients just before baking for the best texture.
Why is the stuffing soggy?
Soggy stuffing usually occurs if the stuffing is packed down too tightly or if the gravy-to-stuffing ratio is too high. Ensure the stuffing is added in a light, even layer to allow for proper crisping.
Can this be frozen after baking?
It is possible to freeze the baked leftovers, but note that the texture of the stuffing will change significantly upon reheating. It is best to freeze in individual portions and reheat in the oven.

  • 2 cups turkey gravy, store-bought or made ahead
