Before you start

Before beginning, ensure that your baking dish is clean and dry. Keep your ground turkey in the refrigerator until the very last moment to maintain food safety, never leaving it out for more than 30 minutes.

Preheat your oven to 375°F (190°C) well in advance so that the baking process begins immediately once the dish is assembled. Have all your ingredients measured and ready, including slicing the celery and the butter, to make the assembly process seamless and quick.

Ingredients at a glance (5)
  • 1 lb ground turkey
  • 2 stalks celery, thinly sliced
  • 2 cups turkey gravy, store-bought or made ahead
  • 4 cups dry herb stuffing cubes
  • 3 tbsp butter, thinly sliced

Instructions

Assembling the protein base

  1. Prepare the base
Keep the raw ground turkey chilled in the refrigerator until ready to assemble, leaving it out for at most 30 minutes before baking. Spread the turkey evenly across the bottom of a 9x13 inch ceramic baking dish. Scatter the thin celery slices evenly over the top of the ground meat layer.
Look for The turkey should form a relatively even layer at the bottom of the dish.
Tip Keep the meat cold right until assembly to prevent bacterial growth before baking.

At the end of this phase, the ground turkey should be spread in a thin, uniform layer across the bottom of the dish, topped with a scattering of celery.

The surface should look clean and ready for the liquid and dry components. Check that the turkey is distributed evenly, as clumps will take longer to cook through than the surrounding meat.

Layering the stuffing and butter

  1. Assemble the layers
Pour the turkey gravy evenly over the ground turkey and celery mixture. Once the gravy is added, shower the herb stuffing cubes over the top to create a generous layer. Finally, distribute the thin butter slices evenly over the stuffing cubes.
Look for The stuffing should be mostly covered by the gravy but remain textured on top.
Tip Do not pack the stuffing down; keeping it loose allows the top to become crisp while the bottom absorbs the gravy.

Once the gravy is poured and the stuffing is added, the dish should look fully assembled with the cubes sitting partially submerged. The butter slices should be placed strategically across the top. Ensure the gravy has reached the corners of the dish to keep the turkey moist as it begins to cook in the hot oven.

Baking to golden perfection

  1. Bake and serve
Place the dish in a preheated 375°F (190°C) oven and bake until the edges are bubbling and the turkey is fully cooked through to an internal temperature of 165°F (74°C). Remove from the oven and let it rest for 5 minutes before serving.
Look for The top should be golden brown and the edges should show bubbling gravy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the top browns too quickly, tent the dish loosely with aluminum foil during the final 10 minutes of baking.

The final result should be a beautiful, golden-brown top layer with bubbling sauce visible around the edges. The aroma of herbs and roasted turkey should be prominent. Before serving, verify that the center is hot and the turkey has reached the required safe internal temperature, ensuring a safe and delicious meal for everyone.

Common mistakes

A common mistake is packing the stuffing cubes too tightly into the dish, which prevents the heat from circulating and results in a soggy rather than crispy top. Another error is neglecting to check the internal temperature of the turkey; since it is poultry, it must reach 165°F (74°C) to be safe.

Finally, avoid using a dish that is too small, as this will lead to uneven cooking and potentially overflowing gravy during the bubbling phase of the baking process.

How to tell it’s done

The dish is considered done when the turkey has reached an internal temperature of 165°F (74°C) at the thickest part of the meat layer. Visually, the edges of the gravy should be bubbling vigorously, and the stuffing cubes on the surface should appear toasted and golden brown.

If the top is browning too quickly, you can cover it with foil. Always allow the dish to rest for 5 minutes after removing it from the oven to allow the juices to redistribute and the sauce to thicken slightly.

  • Poultry: 165°F (74°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
