Tips for success
For a deeper flavor, you can sear the pork shoulder in a hot skillet before placing it into the slow cooker, though this is optional. If you choose to sear, ensure the pan is very hot and you develop a nice brown crust on all sides.
This extra step adds a layer of complexity to the gravy that many find desirable. Remember to deglaze the pan with a bit of the vinegar broth to capture all those flavorful browned bits.
If you find the gravy is too thin at the end of the cooking cycle, you can remove the meat and whisk in an additional tablespoon of gingersnap crumbs or a cornstarch slurry. Let it simmer on high for an additional 10 minutes.
Conversely, if the sauce is too thick, simply stir in a small amount of warm water or broth until you reach your desired consistency. Always taste and adjust the seasoning with salt and pepper before serving.
Variations
- Beef Sauerbraten: Substitute the pork shoulder with a beef chuck roast. The cooking time will remain similar, but the beef will offer a deeper, richer flavor profile that pairs wonderfully with the tangy vinegar base.
- Spiced Apple Version: Add a cup of diced tart apples to the slow cooker along with the onions and carrots. The sweetness of the apples complements the gingersnap crumbs and adds a bright fruitiness to the gravy.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat on the stovetop over low heat until simmering, or in the microwave in 1-minute intervals until heated through.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Ensure the meat is completely covered by the gravy to prevent it from drying out during storage.
When cooling leftovers, do not leave them at room temperature for more than 2 hours. Promptly place them in the refrigerator to maintain food safety and quality. Properly stored, the flavors will often deepen, making the dish even better the next day.
This dish is an excellent candidate for making ahead. You can prepare the entire roast a day in advance, as the flavors meld and improve while resting in the refrigerator. Simply reheat the portion you need on the stove or in the microwave.
If making ahead, shred the meat before storing so it is ready to serve immediately upon reheating. This makes it a perfect option for meal prepping your dinners for the upcoming week.
Serving ideas
Serve this Sauerbraten hot, directly from the slow cooker or transferred to a deep serving bowl. It pairs beautifully with classic German sides like buttered spaetzle, boiled potatoes, or braised red cabbage, which help soak up the rich, tangy gravy. A dollop of sour cream on the side can add a nice contrast, though it is perfectly delicious on its own as a hearty, standalone meal.
For a complete presentation, garnish the dish with a sprinkle of fresh parsley or chives to add a pop of color against the deep brown gravy. Ensure each serving includes a generous portion of the carrots and onions, as these have absorbed all the wonderful flavor of the braising liquid. Serve with a crisp side salad to balance the richness of the pork and provide a fresh, crunchy element to your plate.

Easy Slow Cooker Sauerbraten Pork Roast

Ingredients
- 3 lb pork shoulder roast
- 1 large yellow onion, sliced
- 2 cups carrots, sliced into coins
- 1/2 cup gingersnap cookie crumbs
- 1 cup vinegar broth
Instructions
- Place the pork shoulder roast into the center of the slow cooker insert. Arrange the sliced onions and carrot coins around the sides of the meat. Sprinkle the gingersnap cookie crumbs evenly over the top of the roast to build the flavor base for the gravy.
- Pour the vinegar broth over the pork and vegetables. Cover the slow cooker with the lid. Set the slow cooker to cook on low for 8 hours or on high for 4 hours until the pork is fork-tender.
- Once the cooking time is complete, verify the pork has reached an internal temperature of 145°F (63°C). Carefully remove the roast to a cutting board, shred the meat into chunks, and return it to the gravy. Allow the meat to rest for at least 3 minutes before serving to ensure tenderness.
