Tips for success

To elevate the presentation, serve each portion with a small scoop of vanilla ice cream or a dollop of unsweetened whipped cream. The contrast between the warm, molten chocolate and the cold cream adds a sophisticated touch to the dessert.

If you prefer a slightly more intense chocolate flavor, you can sprinkle a tiny pinch of espresso powder over the dry pudding mix before adding the butter.

If you find the edges of your slow cooker tend to run hot, you can place a piece of parchment paper around the edges of the insert before adding the ingredients. This acts as a buffer and helps prevent the cake from over-browning. Always ensure that you are using a slow cooker with a reliable heat setting to avoid any uneven cooking issues during the two-hour window.

Variations

  • Peanut Butter Twist: Add a half-cup of creamy peanut butter dollops over the chocolate chips before adding the pudding layer. The peanut butter will melt into the chocolate, creating a classic flavor combination.
  • Caramel Drizzle: Substitute half of the chocolate chips with caramel bits. The caramel will melt into the pudding layer, adding a chewy, sweet contrast to the deep chocolate flavor of the cake.

Storage and make-ahead

Fridge
Store in the refrigerator for up to 3 days in an airtight container.
Freezer
Not recommended for freezing as the texture of the molten center will be compromised upon thawing.
Reheat
Reheat individual portions in the microwave for 30 to 45 seconds until warm, or in a preheated oven at 300°F (150°C) until heated through.

Store any leftovers in an airtight container once the cake has cooled completely to room temperature. Keeping the cake in the refrigerator helps maintain its texture, as the molten center will firm up slightly, making it easier to handle for future servings.

Ensure the container is sealed tightly to prevent the cake from absorbing any other odors from the refrigerator, which can alter the delicate chocolate flavor.

This dish is best prepared and served fresh. However, you can assemble the dry layers in the slow cooker insert ahead of time and store it in the refrigerator.

When ready to cook, simply pour the melted butter over the layers and start the cooking process. Do not add the butter until just before you are ready to turn on the slow cooker, as the moisture will begin to work on the dry ingredients immediately.

Serving ideas

Serve the warm cake in shallow bowls to contain the molten lava center. Using a large spoon, gently scoop through all the layers to ensure each serving contains a mix of the cake top and the rich, gooey chocolate base. Because the dessert is very rich, smaller portions are often sufficient to satisfy a craving for something sweet.

Enhance the serving experience by adding fresh berries, such as raspberries or strawberries, which provide a slight acidity that cuts through the intense chocolate sweetness.

A light dusting of cocoa powder or a few fresh mint leaves can also make the plating look more professional. Ensure the plates are ready before you begin scooping, as the cake is best enjoyed while still warm.

Frequently asked questions

Can this be made in a smaller slow cooker?
A 6-quart slow cooker is recommended for this recipe. Using a significantly smaller vessel may cause the cake to cook unevenly or overflow, while a much larger one might result in a thinner, drier cake. Adjustments to the cooking time would be necessary if the size is changed.
What happens if the cake mix is stirred?
Stirring the ingredients will destroy the necessary layering that creates the lava effect. The dump cake method relies on the ingredients staying in their respective positions so they can interact as the butter melts, resulting in the desired texture. Always leave the layers undisturbed.
Can a different type of pudding mix be used?
Yes, other flavors of instant pudding mix can be used to experiment with different taste profiles. Vanilla or white chocolate pudding can work well with the chocolate cake mix, creating a different flavor balance, though the classic chocolate-on-chocolate approach is the traditional choice for this recipe.

Ingredients

  • 1 box chocolate cake mix
  • 1 handful semisweet chocolate chips
  • 1 packet instant chocolate pudding mix
  • 3/4 cup unsalted butter, melted

Instructions

  1. Add the dry chocolate cake mix directly into the bottom of the slow cooker insert. Spread it out evenly with a spatula to ensure a level foundation for the subsequent layers.
  2. Scatter the handful of chocolate chips over the cake mix layer. Follow this by sprinkling the dry instant chocolate pudding mix evenly over the chocolate chips, covering the surface completely.
  3. Pour the melted butter evenly over the top of the pudding layer, trying to cover as much of the dry mix as possible. Cover the slow cooker with the lid and cook on low for two hours.
  4. Once the cooking time is complete, turn off the slow cooker and allow the cake to rest for 10 minutes. This helps the molten center thicken slightly before serving onto plates.
