Before you start

Before you start, make sure your chicken is cut into 1-inch cubes and your bell peppers are diced. Drain the pineapple chunks well, reserving the juice for another use if desired. Whisk together the sauce ingredients so everything is ready to pour.

You'll also want to have your cornstarch and water measured out for the slurry. This recipe comes together in just 10 minutes of prep, so get all your ingredients ready and you're on your way to a hands-off dinner.

Ingredients at a glance (12)
  • 2 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (20 oz) pineapple chunks in juice, drained
  • 1/2 cup apple cider vinegar
  • 1/2 cup ketchup
  • 1/2 cup packed brown sugar
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp cornstarch
  • 3 tbsp water
  • Steamed white rice, for serving
  • Sesame seeds, for garnish, to taste

Instructions

Phase 1: Dump and Go

  1. Layer the Ingredients
Place the cubed chicken breasts in the bottom of a 6-quart slow cooker. Scatter the diced red and green bell peppers and the drained pineapple chunks over the chicken. In a medium bowl, whisk together the apple cider vinegar, ketchup, brown sugar, and soy sauce until the sugar is dissolved. Pour the sauce evenly over the chicken and vegetables.
Look for The chicken is covered with colorful peppers and pineapple, and the sauce is a deep reddish-brown.
Tip No need to stir; the slow cooker will blend the flavors as it cooks.
  2. Cook on High
Place the lid on the slow cooker and set it to HIGH. Cook for 3 hours, or until the chicken is cooked through and tender. The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part of the largest piece. Avoid lifting the lid during cooking to maintain heat.
Look for After 3 hours, the chicken is opaque and tender, and the sauce is bubbly around the edges.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If you prefer a thicker sauce, you can cook on LOW for 4-5 hours instead, but the total time will be longer.

After layering the chicken, peppers, pineapple, and sauce, you'll see a colorful mixture with a vibrant reddish-brown liquid. The chicken should be submerged in the sauce.

At this point, everything looks raw, but that's fine—the slow cooker will work its magic. Check that all the chicken is coated in the sauce and that the peppers and pineapple are evenly distributed.

Phase 2: Slow Cook to Perfection

  1. Thicken the Sauce
In a small bowl, whisk the cornstarch and water together to make a slurry. Pour the slurry into the slow cooker and stir gently to combine. The sauce will begin to thicken immediately. Continue to cook, uncovered, for 15-20 minutes, stirring occasionally, until the sauce is glossy and coats the back of a spoon.
Look for The sauce turns from thin and watery to a translucent, glossy glaze that clings to the chicken.
Tip If the sauce is not thick enough after 15 minutes, mix another tablespoon of cornstarch with a tablespoon of water and stir in.

After 3 hours on high, the chicken will be opaque and tender, and the sauce will be bubbling around the edges. The aroma will be sweet and tangy, filling your kitchen with the promise of takeout. The chicken should be cooked through—use a thermometer to confirm it's reached 165°F (74°C). The peppers will have softened slightly but should still hold their shape.

Phase 3: Thicken and Serve

  1. Serve Over Rice
Spoon the sweet and sour chicken and peppers over steamed white rice. Garnish with a sprinkle of sesame seeds. Serve hot and enjoy the takeout-worthy flavor.
Look for The chicken is glazed and shiny, with vibrant peppers and pineapple throughout.
Tip For extra freshness, add a few chopped green onions on top if you have them, though the video doesn't include them.

After adding the cornstarch slurry and cooking for another 15-20 minutes, the sauce should be thick, glossy, and clinging to the chicken and vegetables. The color will be a deep ruby-orange, and the sauce will coat the back of a spoon. The chicken should be fork-tender, and the peppers and pineapple should be glistening. Give it a final stir and serve over rice.

Common mistakes

One common mistake is lifting the lid too often during cooking, which releases heat and extends the cooking time. Keep the lid on for the full 3 hours. Another mistake is not slicing the chicken into uniform cubes—uneven pieces cook at different rates, leaving some dry and others undercooked.

Also, be sure to drain the pineapple well; too much liquid can make the sauce watery. Finally, don't skip the cornstarch slurry—it's what gives the sauce its signature gloss and thickness.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C). Check the thickest piece with an instant-read thermometer. The sauce should be thick and glossy, coating the chicken and vegetables evenly.

If the sauce is still thin, continue cooking uncovered for a few more minutes, stirring occasionally. The peppers should be tender but still have a slight bite, and the pineapple should be warm and juicy.

  • Poultry: 165°F (74°C) in the thickest part
