Tips for success

To take this casserole to the next level, consider shredding your own Colby Jack cheese from a block rather than buying pre-shredded cheese. Pre-shredded cheese is coated with anti-caking agents that prevent it from melting smoothly, whereas freshly grated cheese melts into a beautifully gooey, molten blanket with that perfect cheese pull shown in the video.

Additionally, letting the casserole rest for a full 10 minutes after baking is essential; it allows the layers to set so you can slice and serve it neatly.

If you want to add more texture and flavor, you can slide a layer of drained black beans or canned corn between the beef and cheese layers.

For a spicier kick, mix a small can of diced green chilies into the ground beef while it simmers, or choose a hot enchilada sauce instead of mild. These simple additions customize the dish to your taste without changing the cooking times.

Variations

  • Chicken Enchilada Casserole: Substitute the seasoned ground beef with shredded rotisserie chicken tossed in a little extra enchilada sauce for a quick chicken variation.
  • Vegetarian Bean Casserole: Replace the ground beef with a mixture of black beans, pinto beans, and sweet corn seasoned with taco spices for a hearty vegetarian option.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days, ensuring they cool for no more than 2 hours at room temperature first.
Freezer
Freeze the unbaked or baked casserole tightly wrapped in foil for up to 3 months. Thaw in the fridge overnight before baking.
Reheat
Reheat individual portions in the microwave for 1 to 2 minutes, or warm the entire dish in a 350°F (175°C) oven for 15 minutes.

Store any leftover beef enchilada casserole in an airtight container in the refrigerator for up to 3 to 4 days. Alternatively, you can cover the baking dish tightly with plastic wrap or aluminum foil before refrigerating.

To preserve the texture of the tortillas, avoid leaving the leftovers at room temperature for more than 2 hours before transferring them to the fridge.

This casserole is an excellent make-ahead meal. You can fully assemble the dish, cover it tightly with foil, and store it in the refrigerator up to 24 hours before baking. When you are ready to serve, bake it directly from the fridge, adding about 5 to 10 minutes to the total baking time to ensure the center is heated through completely.

Serving ideas

Serve this comforting beef enchilada casserole hot, straight from the baking dish. It pairs wonderfully with a variety of fresh toppings that contrast with the rich, cheesy layers.

Offer bowls of sour cream, sliced black olives, diced avocados, fresh cilantro, and chopped green onions so everyone can customize their own plate. A squeeze of fresh lime juice over the top adds a bright, zesty finish.

For a complete meal, serve the casserole alongside a crisp green salad tossed with a light vinaigrette, or with a side of Mexican rice and refried beans. The fresh, crunchy vegetables of a side salad help balance the richness of the melted cheese and seasoned beef, making for a perfectly satisfying dinner experience.

Frequently asked questions

Can flour tortillas be used instead of corn tortillas?
Yes, flour tortillas can be used, but they tend to become much softer and more doughy when baked with the sauce. Corn tortillas are preferred as they maintain a better texture.
How can a soggy casserole be prevented?
Ensure the ground beef is thoroughly drained of excess fat before assembly, and avoid over-saturating the layers with too much enchilada sauce.
Can this casserole be frozen after baking?
Yes, allow the baked casserole to cool completely, wrap it tightly in plastic wrap and aluminum foil, and freeze for up to 3 months. Thaw in the refrigerator before reheating.

A spatula lifting a generous serving of beef enchilada casserole with a massive molten cheese pull from a white baking dish

Ingredients

  • 1 1/2 lb lean ground beef
  • 2 tbsp taco seasoning
  • 20 oz red enchilada sauce, divided
  • 12 corn tortillas, cut into halves or quarters
  • 2 cups shredded Colby Jack cheese, divided

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until it is browned and no longer pink, which takes about 5 to 7 minutes. Carefully drain any excess fat from the skillet to keep the casserole from becoming greasy.
  2. Reduce the heat to medium. Stir in the taco seasoning. Simmer the mixture for 3 to 5 minutes, stirring occasionally, until the beef is well coated and fragrant. Ensure the ground beef is fully cooked and reaches a safe internal temperature of 160°F (71°C).
  3. Preheat the oven to 375°F (190°C). Spread 1/2 cup of the red enchilada sauce over the bottom of a 9x13-inch baking dish. Arrange half of the corn tortillas over the sauce, overlapping them slightly to cover the bottom. Top with half of the seasoned ground beef, another 1/2 cup of enchilada sauce, and 1 cup of the shredded Colby Jack cheese.
  4. Repeat the layering process by adding the remaining corn tortillas over the cheese. Layer the rest of the seasoned ground beef over the tortillas, pour the remaining enchilada sauce evenly on top, and finish by scattering the remaining 1 cup of Colby Jack cheese over the entire surface.
  5. Place the baking dish in the preheated oven and bake for 20 to 25 minutes. The casserole is ready when the cheese is completely melted, bubbly, and has developed a beautiful golden-brown crust around the edges. Remove from the oven and let it rest for 10 minutes before slicing and serving.
