Tips for success
To elevate the presentation, serve the shredded chicken in a shallow bowl topped with a sprinkle of fresh cilantro and a squeeze of lime juice.
The acidity of the lime cuts through the richness of the cream cheese, adding a bright finish that complements the Southwestern flavor profile of the dish perfectly. For an extra crunch, serve alongside warm corn tortilla chips.
If you find the sauce is thicker than you prefer, add a splash of chicken stock or water to adjust the consistency.
This allows you to customize the dish to your liking, whether you prefer a thicker dip-like consistency for chips or a saucier version to serve over rice or quinoa. Always stir slowly to ensure all ingredients are evenly distributed before serving.
Variations
- Spicy Santa Fe: Add one minced jalapeño or a teaspoon of crushed red pepper flakes during the layering phase to increase the heat level and add a fresh, spicy kick to the dish.
- Tex-Mex Loaded: Stir in a cup of shredded cheddar or Monterey Jack cheese along with the cream cheese during the final shredding phase for an extra cheesy and indulgent experience.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe bag or container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat or in the microwave in 30-second intervals until warmed through, stirring occasionally to maintain the creamy sauce.
Allow any leftovers to cool for no more than two hours before transferring them to an airtight container. Keep the container in the refrigerator to maintain freshness.
The chicken can be stored for up to three days, though it is best enjoyed within the first 48 hours to preserve the integrity of the cream cheese sauce and the texture of the chicken.
This dish is perfect for meal prep. You can assemble the ingredients in the slow cooker insert the night before and keep it in the refrigerator, then simply place it in the base and turn it on in the morning. This saves precious time on busy days, allowing you to come home to a ready-to-eat meal without any additional preparation or stress.
Serving ideas
This Santa Fe chicken is incredibly versatile. For a hearty dinner, serve it over a bed of cilantro-lime rice or inside warm flour tortillas for quick tacos. The creamy texture makes it a fantastic topping for baked potatoes or a filling for stuffed bell peppers, providing a flavorful main course that fits any weeknight routine.
For a lighter approach, serve the chicken in lettuce wraps or alongside a fresh green salad with a lime vinaigrette. The bold flavors of the Santa Fe mix pair beautifully with the crispness of fresh greens, providing a balanced dining experience.
Regardless of how you choose to serve it, the combination of creamy, spicy, and savory elements is sure to be a hit.
