Before you start

Before beginning, ensure your slow cooker is clean and placed on a stable, heat-resistant surface. Check that your chicken breasts are thawed completely if they were previously frozen to ensure food safety and even cooking.

Have your two forks ready for the shredding stage, and prepare your garnishes like fresh cilantro by washing and chopping them in advance, so they are ready to add as soon as the slow cooker cycle completes.

Ingredients at a glance (8)
  • 3 lbs chicken breasts
  • 1 can black beans, drained
  • 1 cup sweet corn
  • 1 can diced tomatoes and green chiles
  • 1 tbsp ground cumin
  • 8 oz block cream cheese
  • fresh cilantro, for serving
  • tortilla chips, for serving

Instructions

Layering

  1. Layering Ingredients
Place the chicken breasts at the bottom of the slow cooker. Add the black beans, sweet corn, diced tomatoes and green chiles, and ground cumin. Top with the block of cream cheese.
Look for Layering ingredients correctly ensures even cooking throughout the slow cooker cycle.
Tip Keep the chicken breasts in a single layer to ensure they cook evenly without crowding.

At this stage, the slow cooker should be neatly filled with the chicken at the base, followed by the beans, corn, tomatoes, and the block of cream cheese on top. Everything is raw, and no water needs to be added, as the ingredients will release enough moisture during the cooking process to create a perfect sauce.

Slow Cooking

  1. Slow Cooking
Cover the slow cooker with the lid and set to low. Cook for 4.5 hours until the chicken is tender and fully cooked to 165°F (74°C).
Look for The chicken is done when it easily shreds with a fork and reaches the target temperature.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during the first four hours to maintain the consistent internal temperature required for slow cooking.

The kitchen should be filled with the aromatic scent of cumin and zesty green chiles. The lid should remain undisturbed.

Upon checking after 4.5 hours, the chicken should be tender and the cream cheese should look melted and soft, ready to be incorporated into the surrounding ingredients during the final shredding phase.

Shredding

  1. Shredding and Serving
Using two forks, shred the chicken directly in the slow cooker. Stir the melted cream cheese into the chicken and vegetable mixture until smooth and creamy. Serve warm with tortilla chips and fresh cilantro.
Look for The sauce should be thick and fully incorporated with the shredded chicken.
Tip If the sauce is too thick, stir in a small splash of chicken broth or water to reach desired consistency.

The chicken should pull apart effortlessly with two forks. As you stir, the cream cheese should blend completely with the juices from the tomatoes and beans to form a smooth, creamy, and vibrant sauce. The final dish should be warm, fragrant, and ready to be served immediately with your choice of sides.

Common mistakes

A common mistake is opening the lid too frequently, which allows heat to escape and increases the total cooking time significantly. Another error is failing to ensure the chicken is fully submerged or layered correctly, which can lead to uneven cooking.

Additionally, ensure the cream cheese is placed on top of the other ingredients so it melts downward into the mixture rather than sticking to the bottom of the ceramic pot, which could cause scorching.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C). The meat should be opaque throughout and shred easily with a fork without any resistance.

The sauce should be fully melted and integrated, with a thick, creamy consistency that coats the back of a spoon. If the chicken still feels firm or the sauce is watery, continue cooking for an additional 15 minutes before checking again.

  • Poultry: 165°F (74°C) in the thickest part
