Tips for success
For the best texture, do not overmix the batter. Stop folding as soon as the flour is incorporated, even if a few streaks remain. Overmixing activates the gluten, making the muffins tough. Also, use a light hand when folding in the strawberries and chocolate to avoid crushing the berries.
To get perfectly domed tops, fill the muffin cups generously and start baking at a high temperature. The initial blast of heat sets the top quickly, forcing the batter to rise upward.
If you prefer a more even crumb, you can skip the high-heat step and bake at 375°F (190°C) the entire time, but the tops will be flatter.
Variations
- Nutty Crunch: Fold in 1/2 cup of chopped walnuts or pecans along with the chocolate chips for added crunch. Toast the nuts first to enhance their flavor.
- Berry Swap: Replace the strawberries with an equal amount of raspberries or blueberries. If using frozen berries, do not thaw them before folding into the batter to prevent bleeding.
- Mocha Twist: Increase the espresso powder to 1 1/2 teaspoons to intensify the chocolate flavor. You can also add 1 tablespoon of instant coffee dissolved in 1 tablespoon of hot water.
- Gluten-Free Option: Substitute the all-purpose flour with a 1:1 gluten-free baking flour blend. Make sure the blend contains xanthan gum for structure. The texture will be slightly more tender.
Storage and make-ahead

- Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature or warm before serving.
- Freezer
- Wrap individually in plastic wrap and place in a freezer bag. Freeze for up to 3 months. Thaw at room temperature or reheat directly from frozen.

Store the muffins in an airtight container at room temperature for up to 3 days. To keep them moist, place a paper towel in the container to absorb excess moisture.
If the weather is humid, they may last slightly less. For best flavor, bring to room temperature before serving or warm briefly in the microwave.
The muffin batter can be made ahead and stored in the refrigerator for up to 24 hours. Fill the muffin cups and bake as directed, adding a couple of minutes to the baking time if the batter is cold.
Baked muffins can be frozen for up to 3 months; thaw overnight in the refrigerator and reheat before serving.
Serving ideas
These muffins are delicious warm, especially when the chocolate chips are still melted. Serve them with a pat of butter or a drizzle of honey for extra indulgence.
They also pair well with a glass of cold milk or a hot cup of coffee. For a brunch spread, arrange them on a platter with fresh fruit and yogurt.
If you have leftover muffins, they make a great on-the-go breakfast or snack. Wrap them individually in plastic wrap and keep them in the freezer for a quick treat. To reheat, pop one in the microwave for 15-20 seconds or toast it in a toaster oven for a crisp exterior and soft center.

Double Chocolate Strawberry Banana Muffins

Ingredients
- 3 ripe bananas
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 1/2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp espresso powder
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
- 1 cup diced strawberries
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup strawberry slices
Instructions
- Heat the oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners. In a large bowl, mash the ripe bananas with a fork until mostly smooth. Whisk in the eggs, melted butter, oil, granulated sugar, brown sugar, maple syrup, vanilla extract, and sour cream until the mixture is silky and well combined.
- In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, espresso powder, and salt. Whisk to combine evenly. Add the dry ingredients to the wet mixture and fold with a spatula until just a few streaks of flour remain. Do not overmix.
- Gently fold the chocolate chips and diced strawberries into the batter until evenly distributed. The batter will be thick and chunky.
- Scoop the batter into the prepared muffin tin, filling each cup about three-quarters full. Top each muffin with extra chocolate chips and a few strawberry slices, pressing them lightly into the surface.
- Place the muffin tin in the oven and bake at 425°F (220°C) for 5 minutes. This initial high heat helps create a tall, domed top.
- Reduce the oven temperature to 375°F (190°C) and continue baking for 15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. The tops should spring back when lightly pressed.
- Remove the muffin tin from the oven and let the muffins cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely. The internal temperature of the muffins should reach 160°F (71°C) to ensure the eggs are fully set.
- Serve the muffins warm or at room temperature. For the ultimate experience, split one open while warm to see the molten chocolate and juicy berries.
