Tips for success

For an extra golden crust, brush the top with a simple egg wash before placing it into the oven. This adds a beautiful sheen and enhances the crunch of the pastry. If you prefer a more robust flavor, consider adding a sprinkle of grated parmesan cheese over the top crust during the last five minutes of the baking time.

If the pie crust is difficult to work with, keep it chilled until the very last second before pressing it into the pan. Cold dough is much easier to manage and will result in a flakier texture once baked. If the dough tears, simply press it back together with your fingers, as the filling will hold everything in place once baked.

Variations

  • Spicy Meatball Pie: Add a teaspoon of crushed red pepper flakes to the ground meat while browning. This introduces a subtle heat that cuts through the richness of the cheese and sauce, perfect for those who enjoy a bit of spice in their Italian-style dishes.
  • Vegetable-Packed Pie: Sauté finely diced bell peppers, onions, and mushrooms with the ground meat. This adds texture and flavor complexity while increasing the overall volume of the filling, making the pie even more hearty and satisfying for a complete meal.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure the pie is completely cooled before refrigerating to maintain the best quality.
Freezer
Wrap individual slices in plastic wrap and then foil; store in a freezer-safe bag for up to 2 months. Thaw in the refrigerator before reheating.
Reheat
Reheat in a preheated oven at 350°F (175°C) for 15 to 20 minutes until the crust is crisp and the center is thoroughly hot.

If any leftovers remain, allow them to cool completely at room temperature for no more than two hours. Once cooled, wrap the pie slices tightly in plastic wrap or store them in an airtight container to maintain freshness.

Proper storage ensures the crust remains as crisp as possible for the next day, though it will naturally soften slightly over time.

You can assemble the pie up to 24 hours in advance and keep it refrigerated until you are ready to bake. If baking from cold, add an extra 5 to 10 minutes to the total baking time to ensure the center is heated through.

This makes the dish an excellent choice for hosting dinners where you want to minimize time spent in the kitchen.

Serving ideas

Serve this pie warm, ideally accompanied by a crisp green salad with a light vinaigrette to balance the richness of the meat and cheese.

A side of additional warmed marinara sauce is also a great option for those who enjoy extra sauciness with their meal. The pie is substantial enough to serve as a standalone main course for a satisfying dinner.

When slicing, use a sharp serrated knife to cut through the crispy top crust cleanly. A thin spatula is ideal for lifting the slices out of the springform pan, ensuring the integrity of the layers remains intact on the plate.

Presenting the pie on a wooden board or a slate adds a rustic touch that complements the homemade nature of the dish.

Frequently asked questions

Can this pie be made in a standard pie dish?
Yes, a standard 9-inch deep-dish pie plate works well. Note that it may not provide the same height as a springform pan, so adjust the filling amounts accordingly to avoid overflowing.
Why does the crust become soggy?
The most common reason for a soggy crust is not draining the fat from the ground meat sufficiently. Ensure the meat is well-browned and drained before adding it to the pie to keep the crust crisp.
Can different types of meat be used?
Ground turkey or a blend of ground beef and pork are excellent alternatives. A mix of meats often provides a more complex flavor profile, which can elevate the overall taste of the finished pie.

Ingredients

  • 2 sheets store-bought pie crust
  • 1.5 lb ground beef
  • 1 tbsp italian seasoning
  • 2 cups marinara sauce
  • 3 cups shredded mozzarella cheese

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef thoroughly until cooked through. Drain any excess fat, then stir in the Italian seasoning until well combined.
  2. Preheat the oven to 375°F (190°C). Press one sheet of pie crust into the bottom and sides of a 9-inch springform pan. Layer half of the cooked meat, half of the marinara, and half of the mozzarella. Repeat the layers, then cover with the second crust, crimping the edges to seal.
  3. Place the pie in the preheated oven and bake for 30 to 35 minutes until the crust is golden brown and the cheese is bubbling. Remove from the oven and let it rest for 10 minutes before releasing the pan sides to slice.
