Before you start

Before beginning the assembly, ensure the ground meat is fully cooked and cooled slightly so it does not melt the crust prematurely. Prepare the workspace by having all ingredients measured and ready, including the shredded cheese and the marinara sauce.

Preheat the oven to the required temperature and ensure the springform pan is lightly greased to prevent sticking. Having everything organized will make the layering process smooth and efficient, ensuring the crust remains easy to handle throughout the assembly phase.

Ingredients at a glance (5)
  • 2 sheets store-bought pie crust
  • 1.5 lb ground beef
  • 1 tbsp italian seasoning
  • 2 cups marinara sauce
  • 3 cups shredded mozzarella cheese

Instructions

Browning the meat

  1. Prepare the meat filling
In a large skillet over medium-high heat, brown the ground beef thoroughly until cooked through. Drain any excess fat, then stir in the Italian seasoning until well combined.
Look for meat is browned and fragrant
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the meat is fully browned to develop a deep, savory flavor for the pie.

The meat should be browned evenly across the skillet without any pink remaining. The aroma of the herbs in the seasoning should be prominent, signaling that the flavor base is ready for the assembly. Ensure the meat is drained of excess fat, as this will keep the pie from becoming greasy during the baking process.

Layering the pie

  1. Assemble the pie
Preheat the oven to 375°F (190°C). Press one sheet of pie crust into the bottom and sides of a 9-inch springform pan. Layer half of the cooked meat, half of the marinara, and half of the mozzarella. Repeat the layers, then cover with the second crust, crimping the edges to seal.
Look for crust is sealed tightly around the edges
Tip Use a fork to poke a few steam vents in the top crust before placing it in the oven.

The crust should be pressed firmly against the bottom and sides of the springform pan, leaving enough overhang to crimp with the top sheet.

Ensure the layers of meat, sauce, and cheese are distributed evenly to provide a consistent flavor in every slice. The final assembly should look neat and well-structured before entering the oven.

Baking until golden

  1. Bake and finish
Place the pie in the preheated oven and bake for 30 to 35 minutes until the crust is golden brown and the cheese is bubbling. Remove from the oven and let it rest for 10 minutes before releasing the pan sides to slice.
Look for crust is golden brown
Tip Allowing the pie to rest is essential for clean slices and a perfect cheese pull.

Look for a beautiful, deep golden brown color on the top crust. The cheese should be visibly bubbling through any steam vents, and the edges of the pie should appear firm and set. The kitchen will smell like a classic pizzeria, indicating the pie is ready to be pulled from the oven.

Common mistakes

Avoid overfilling the crust, as this can lead to leaks and a soggy bottom. Ensure the edges of the top and bottom crusts are crimped securely to prevent the filling from bubbling out during the bake.

Another common mistake is failing to let the pie rest after removing it from the oven; cutting into it too early will cause the filling to spill out rather than holding its shape in a perfect slice.

How to tell it’s done

The pie is done when the pastry crust is deep golden brown and firm to the touch. The cheese should be bubbling and slightly browned in spots, indicating it is hot throughout.

Because the ground meat is cooked prior to assembly, the internal temperature should reach at least 160°F (71°C) to ensure food safety and optimal texture. Let the pie rest for 10 minutes to allow the filling to set before slicing.

  • Ground meat: 160°F (71°C) in the thickest part
