Tips for success
To achieve a perfectly smooth cheesecake surface, ensure all ingredients are at room temperature before mixing. This helps create a uniform batter without lumps. When folding in the Oreo chunks, use a gentle hand to keep them intact.
For the ganache, use finely chopped chocolate and warm cream to ensure a silky, lump-free mixture. If the ganache is too thick, add a splash of warm cream; if too thin, let it cool slightly before pouring.
For clean slices, dip a sharp knife in hot water and wipe it dry before each cut. This prevents the cheesecake from sticking and gives you neat, professional-looking pieces.
Serve the cheesecake chilled, straight from the refrigerator, for the best texture. If you prefer a softer ganache, let it sit at room temperature for a few minutes before serving. Store leftovers in an airtight container in the fridge for up to 5 days.
Variations
- Peanut Butter Swirl: Swirl 1/2 cup of creamy peanut butter into the filling before baking. The peanut butter adds a rich, nutty flavor that pairs well with the chocolate ganache and Oreo chunks.
- Mint Chocolate: Add 1 teaspoon of peppermint extract to the filling and use mint-flavored Oreo chunks. Top with a dark chocolate ganache and garnish with crushed peppermint candies.
- Salted Caramel: Drizzle salted caramel sauce over the cheesecake before adding the ganache. The salty-sweet combination enhances the chocolate and cookies and cream flavors.
- Cookies and Cream Deluxe: Increase the amount of crushed Oreo chunks to 300 g and fold them into the filling. Also, sprinkle extra crushed Oreos on top of the ganache for a double dose of cookies and cream.
Storage and make-ahead
- Fridge
- Store in the refrigerator, covered, for up to 5 days. Keep in an airtight container to prevent absorbing other odors.
- Freezer
- Freeze the cheesecake (without ganache) for up to 2 months. Wrap tightly in plastic wrap and foil.
- Reheat
- Not recommended; serve chilled. If the ganache needs to be rewarmed, do so gently in the microwave or over a double boiler.
Store the cheesecake in the refrigerator, covered, for up to 5 days. Keep it in an airtight container or wrap the springform pan tightly with plastic wrap. The cheesecake is best served chilled. If you have leftover ganache, store it separately in the refrigerator and reheat gently before using.
This cheesecake is ideal for making ahead. Prepare it up to 2 days in advance and keep it refrigerated. The flavors meld and the texture sets perfectly overnight. You can also freeze the cheesecake (without the ganache) for up to 2 months; thaw in the refrigerator overnight before adding the ganache and serving.

Cookies and Cream Cheesecake with Dark Chocolate Ganache

Ingredients
- 300 g dark Oreo butter crust
- 800 g whipped vanilla bean cream cheese
- 180 g icing sugar
- 300 ml double cream
- 200 g hand-crushed Oreo chunks
- 200 g warm 70% dark chocolate ganache
Instructions
- Press the dark Oreo butter crust into the bottom of a 9-inch springform pan, making sure it is even and compact. This crust is made beforehand, so simply press it into the pan and set aside.
- In a large bowl, beat the whipped vanilla bean cream cheese with the icing sugar until smooth and creamy. Gradually add the double cream and continue beating until the mixture is light and fluffy.
- Gently fold the hand-crushed Oreo chunks into the whipped cream cheese mixture using a spatula. Be careful not to overmix, as you want the Oreo pieces to remain distinct throughout the filling.
- Pour the filling over the prepared crust and spread it evenly with a spatula. Tap the pan gently on the counter to release any air bubbles.
- Place the cheesecake in a preheated oven at 325°F (163°C) and bake for 50 minutes. The edges should be set but the center should still have a slight jiggle.
- Remove the cheesecake from the oven and let it cool completely on a wire rack. Once cooled, cover the pan and refrigerate overnight, or for at least 8 hours, until fully chilled and set.
- After the cheesecake has chilled, remove it from the springform pan and place it on a serving plate. Pour the warm 70% dark chocolate ganache over the top, letting it flow down the sides.
- Slice the cheesecake with a sharp knife, wiping the blade clean between cuts. Serve chilled and enjoy the rich cookies and cream flavor with the dark chocolate ganache.
