Tips for success
For a more polished appearance, place strips of parchment paper around the base of the cake on the stand before pouring the ganache. Once the ganache has set, carefully pull the strips away to reveal a clean, professional edge on the plate. This simple trick prevents any mess from accumulating on the stand.
If you prefer a more intense chocolate flavor, consider adding a teaspoon of instant espresso powder to the ganache while heating. This enhances the cocoa notes without making the ganache taste like coffee.
Always use high-quality chocolate, as the flavor of the ganache is entirely dependent on the quality of the cocoa solids you start with.
Variations
- Berry Infusion: Add a thin layer of fresh raspberry jam between the sponge cake and the whipped vanilla cream for a bright, tart contrast to the rich chocolate.
- Salted Caramel Drizzle: Drizzle a small amount of salted caramel sauce over the ganache before adding the sprinkles to introduce a sweet and salty depth to the flavor profile.
Storage and make-ahead
- Fridge
- Keep in the refrigerator for up to 3 days, covered with a cake dome or plastic wrap to maintain freshness.
- Freezer
- The cake can be frozen for up to 1 month. Wrap the entire cake or individual slices tightly in plastic wrap and foil to prevent freezer burn.
- Reheat
- Thaw in the refrigerator overnight before serving. Do not reheat the assembled cake, as the cream will melt.
Store the assembled cake in the refrigerator to keep the cream and ganache stable. Use a cake dome or an inverted large bowl to protect the surface of the cake from absorbing other odors in the fridge.
Consume the cake within two to three days for the best quality and flavor, as the sponge can begin to dry out after this period.
You can bake the sponge cake layers up to two days in advance, wrapping them tightly in plastic wrap and storing them at room temperature.
The ganache can also be made ahead and stored in the refrigerator; simply reheat it gently in the microwave in short intervals until it reaches a pourable consistency. Assemble the cake just before serving for the freshest taste.
Serving ideas
Serve the cake chilled or at room temperature, depending on your preference. To ensure beautiful slices, use a thin, sharp knife and wipe the blade clean with a hot, damp cloth between each cut.
This prevents the cream from dragging across the cake layers and keeps the ganache finish looking pristine for every portion served.
Pair this rich chocolate dessert with a simple beverage to balance the intensity of the cocoa. A cup of unsweetened coffee or a glass of cold milk works exceptionally well, as the bitterness of the coffee or the neutrality of the milk complements the sweetness of the ganache and the cream filling perfectly.

Decadent Chocolate Layer Cake with Vanilla Cream and Ganache

Ingredients
- 2 layers chocolate sponge cake, store-bought or made ahead
- 2 cups whipped vanilla cream
- 1/2 cup chocolate ganache, warm
- 2 tbsp chocolate sprinkles
Instructions
- Place the first layer of chocolate sponge cake on a glass stand. Using an offset spatula, spread a thick, even layer of whipped vanilla cream over the surface of the cake. Place the second layer of sponge cake directly on top of the cream, pressing down gently to ensure it is level and secure.
- Slowly pour the warm chocolate ganache over the center of the top cake layer. Use the back of a spoon to gently guide the ganache toward the edges, allowing it to drip down the sides of the cake in a natural, glossy fashion. Continue until the top is fully covered and the drips have settled.
- While the ganache is still set but slightly tacky, sprinkle the chocolate sprinkles evenly over the top of the cake. To ensure the egg-based cream is safe, heat the cream mixture to 160°F (71°C) before whipping and assembling. Allow the cake to rest for 15 minutes in a cool spot to let the ganache firm up before serving.
