Before you start

Before beginning the assembly, ensure the chocolate sponge cake layers are completely cooled to room temperature or chilled. If the layers were baked ahead, they should be stored in an airtight container. Prepare the whipped vanilla cream just before assembly to ensure maximum freshness and volume.

Set out the glass cake stand, the offset spatula, and all ingredients within easy reach. Having the ganache warmed to a pourable, yet not runny, consistency is key to achieving that perfect, glossy drip finish without saturating the cake.

Ingredients at a glance (4)
  • 2 layers chocolate sponge cake, store-bought or made ahead
  • 2 cups whipped vanilla cream
  • 1/2 cup chocolate ganache, warm
  • 2 tbsp chocolate sprinkles

Instructions

Layering the sponge

  1. Layering the cake
Place the first layer of chocolate sponge cake on a glass stand. Using an offset spatula, spread a thick, even layer of whipped vanilla cream over the surface of the cake. Place the second layer of sponge cake directly on top of the cream, pressing down gently to ensure it is level and secure.
Look for The cream should be spread to the edges of the cake layer.
Tip Ensure the cake layers are completely cool before applying the cream to prevent melting.

The cake layers are securely stacked with an even layer of vanilla cream in between. The structure should feel stable and level, with no significant gaps between the sponge and the cream filling.

The edges of the cream should be visible but not overflowing, creating a clean line where the two layers meet.

Pouring the ganache

  1. Applying the ganache
Slowly pour the warm chocolate ganache over the center of the top cake layer. Use the back of a spoon to gently guide the ganache toward the edges, allowing it to drip down the sides of the cake in a natural, glossy fashion. Continue until the top is fully covered and the drips have settled.
Look for The ganache should have a smooth, mirror-like finish.
Tip If the ganache is too thick, warm it slightly in the microwave for a few seconds.

The ganache has been poured over the top and is cascading gracefully down the sides. The surface of the cake should be completely coated, and the drips should have reached the base of the cake stand. The finish should look glossy and smooth, with no dull patches or visible streaks from the spoon.

Final resting

  1. Adding the final touch and cooking the cream
While the ganache is still set but slightly tacky, sprinkle the chocolate sprinkles evenly over the top of the cake. To ensure the egg-based cream is safe, heat the cream mixture to 160°F (71°C) before whipping and assembling. Allow the cake to rest for 15 minutes in a cool spot to let the ganache firm up before serving.
Look for The sprinkles should adhere well to the ganache surface.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Use a sharp knife dipped in hot water for the cleanest slices.

The ganache has firmed up to a set, slightly tacky consistency that holds the sprinkles in place. The entire assembly should appear cohesive and well-proportioned. The cake is now ready to be sliced and served, with the ganache and cream layers holding their shape perfectly upon being cut.

Common mistakes

Avoid applying the ganache while it is still steaming hot, as this will melt the whipped cream layer and cause the cake to lose its structural integrity. Similarly, do not attempt to assemble the cake while the sponge layers are warm, as the cream will deflate and slide off.

Another common mistake is over-whipping the cream, which can result in a grainy texture; stop as soon as stiff peaks form. Finally, ensure the cake is placed on a level surface to prevent the ganache from pooling unevenly on one side.

How to tell it’s done

The cake is considered ready once the ganache has set sufficiently to hold its shape on the sides of the cake, which typically takes about 15 minutes of resting. When slicing, the knife should pass through the layers easily without the filling squeezing out.

The texture should be consistent throughout, with the ganache firm enough to provide a slight resistance upon contact, while the interior remains moist and soft. The egg-based cream must reach 160°F (71°C) to be fully cooked.
