Tips for success
To achieve clean, professional-looking slices, dip your knife in hot water and wipe it clean between every cut. This prevents the cream and ganache from dragging across the layers, ensuring that each piece shows off the beautiful cross-section of the cake clearly.
If you prefer a more intense cherry flavor, you can macerate the cherries in a small amount of cherry liqueur for an hour before draining them and using them in the filling.
This adds a subtle depth that complements the dark chocolate notes, elevating the overall profile of the dessert for a more mature palate.
Variations
- Black Forest Cupcakes: Use the same ingredients to fill individual chocolate cupcakes. Core the center of each cupcake, pipe in the cherry filling and whipped cream, and finish with a ganache drizzle.
- Spiced Cherry Twist: Add a pinch of ground cinnamon or cardamom to the cherry filling to introduce a warm, spiced element that pairs beautifully with the rich dark chocolate sponge.
Storage and make-ahead
- Fridge
- Keep refrigerated for up to 3 days in an airtight container.
- Freezer
- The sponge can be frozen for up to 1 month, but the assembled cake does not freeze well due to the cream.
- Reheat
- This cake is best served cold and should not be reheated.
Store the assembled cake in an airtight container to prevent it from absorbing odors from other foods in the refrigerator.
Because of the whipped cream and cherry filling, it is important to keep the cake cold at all times to maintain both the texture of the cream and the food safety of the dairy components.
You can bake the sponge cake up to two days in advance if wrapped tightly in plastic wrap. The ganache can also be made ahead and stored at room temperature. However, it is best to assemble the cake with the whipped cream and cherry filling no more than a few hours before serving to ensure the best texture.
Serving ideas
Serve the cake chilled directly from the refrigerator for the best experience. The contrast between the cold cream and the room-temperature ganache is part of what makes this dessert so enjoyable.
Place each slice on a small dessert plate and consider adding a single fresh cherry on top for a classic presentation.
This cake pairs exceptionally well with a hot cup of coffee or unsweetened tea, which helps to balance the richness of the chocolate and the sweetness of the fruit.
Ensure that each serving is plated carefully to highlight the distinct layers, making for a visually appealing dessert that is sure to impress guests.

Decadent Black Forest Sheet Cake with Cream and Cherries

Ingredients
- 1 whole chocolate sponge cake, made ahead
- 2 cups cherry filling
- 2 cups heavy whipping cream, whipped
- 1 cup chocolate ganache
Instructions
- Place the pre-baked chocolate sponge cake on a flat working surface. Using a long serrated knife, carefully slice the cake horizontally into two even layers. Set the bottom layer aside on a clean serving platter or a flat tray to begin the assembly process.
- Spread the cherry filling evenly over the bottom sponge layer, leaving a small border near the edges. Carefully spread a thick, uniform layer of the whipped cream over the cherries. Place the second sponge layer on top, pressing down very gently to secure the layers together.
- Pour the glossy chocolate ganache over the top of the cake, using an offset spatula to spread it to the edges. Ensure any egg-based custard component reaches 160°F (71°C) if cooked. Allow the ganache to set slightly at room temperature before placing the cake in the refrigerator. Let the cake rest for at least thirty minutes to allow the layers to firm up before slicing.
