Tips for success

For the best texture, use day-old rice or rinse the rice well before adding to the filling. This prevents the rice from becoming too sticky.

If you prefer a spicier kick, add a pinch of red pepper flakes or use hot paprika in the butter. To make the rolls ahead, assemble them in the cups and refrigerate overnight, then bake as directed—just add 10 minutes to the baking time.

When plating, spread the garlic yogurt in a circular swoosh for an elegant look. The sizzling paprika butter should be drizzled just before serving so it stays warm and vibrant.

If the rolls are too large, you can slice them in half to show the beautiful layers. Serve with extra yogurt on the side for those who want more tang.

Variations

  • Lamb and Mint: Swap the ground beef for ground lamb and add 1 tablespoon of chopped fresh mint to the filling. The mint brightens the rich lamb and pairs beautifully with the garlic yogurt.
  • Spicy Turkish: Add 1 teaspoon of red pepper flakes or a pinch of cayenne to the filling for heat. Use hot paprika in the butter instead of sweet, and serve with extra chili flakes on the side.
  • Vegetarian: Replace the beef with a mixture of cooked lentils and mushrooms, and use vegetable broth for the sauce. Omit the butter and use olive oil for the paprika drizzle to keep it plant-based.
  • Herbed Yogurt: Stir chopped fresh dill, parsley, or chives into the garlic yogurt for an herby twist. This adds freshness and complements the spiced filling.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Keep the rolls in their broth to maintain moisture.
Freezer
Freeze cooked rolls in a freezer-safe container with some broth for up to 2 months. Thaw overnight in the fridge before reheating.
Reheat
Reheat in a covered skillet over medium heat with a splash of broth or water, or microwave in 30-second intervals until hot.

Store leftover cabbage rolls in an airtight container in the refrigerator for up to 3 days. Keep the broth with the rolls to prevent them from drying out.

Reheat gently in the microwave or in a covered skillet over low heat, adding a splash of water or broth if needed. The rolls can also be kept in the freezer for up to 2 months.

The cabbage rolls can be fully assembled in the cups a day ahead and kept covered in the refrigerator. When ready to bake, pour the warm broth over and bake as directed, adding 10 minutes to the cooking time. The garlic yogurt and paprika butter can also be prepared ahead and stored separately.

Serving ideas

Serve the cabbage rolls warm, straight from the oven, over a bed of chilled garlic yogurt. The contrast between the hot, savory rolls and the cool, creamy yogurt is delightful.

Drizzle the sizzling paprika butter over the top just before serving, and garnish with fresh herbs like parsley or dill if desired.

This dish pairs well with crusty bread or a simple green salad to balance the richness. For a heartier meal, serve with bulgur pilaf or roasted vegetables. The rolls are substantial enough to be a main course, but can also be served as a show-stopping side dish at a dinner party.

Frequently asked questions

Can this recipe be made gluten-free?
Yes, this recipe is naturally gluten-free as long as the tomato paste and spices are certified gluten-free. Always check labels on spices and tomato paste to ensure no cross-contamination. Serve with gluten-free bread if desired.
What type of cabbage is best for this recipe?
Savoy cabbage is ideal because its leaves are large, tender, and flexible. Green cabbage also works well, but it may require longer boiling to become pliable. Avoid napa cabbage as it is too delicate and may tear during assembly.
Can the cabbage rolls be made without the cup-molding technique?
Yes, you can roll the filling in the cabbage leaves like traditional stuffed cabbage rolls. However, the cup-molding method ensures uniform shape and makes the rolls easier to assemble. If rolling by hand, just fold the leaves over the filling and secure with toothpicks if needed.
What can be used instead of ground beef?
Ground lamb, turkey, or chicken are great substitutes. Adjust the cooking time to ensure the meat reaches a safe internal temperature (165°F for poultry, 160°F for beef or lamb). For a vegetarian version, use cooked lentils and mushrooms.
How do you keep the cabbage rolls from falling apart?
Make sure to pack the filling firmly into the cups and fold the cabbage leaves over completely. Letting the rolls rest for 10 minutes after baking also helps them set. Use a wide spatula to transfer them to the serving platter.

Golden cup-molded Turkish stuffed cabbage rolls on a platter with garlic yogurt and paprika butter

Ingredients

  • 12 large leaves savoy cabbage leaves
  • 1 lb ground beef (80% lean)
  • 1/2 cup uncooked white rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 2 tbsp tomato paste
  • 2 cups water
  • 3 tbsp olive oil
  • 1 cup plain yogurt, for serving
  • 2 tbsp butter, for paprika butter
  • 1 tsp paprika, for paprika butter

Instructions

  1. Bring a large pot of salted water to a boil. Add the cabbage leaves and blanch for 2-3 minutes until pliable and translucent. Remove and drain on paper towels. In a bowl, combine ground beef, rice, onion, garlic, salt, black pepper, and smoked paprika. Mix until just combined.
  2. Select 4 glass dessert cups or small bowls. Place one cabbage leaf in each cup, letting the edges hang over the rim. Press the leaf against the sides to line the cup completely. If needed, use a second leaf to cover any gaps.
  3. Divide the meat-rice filling among the cups, pressing it down firmly into the cabbage-lined cups. Fill to about 3/4 full, leaving room for the rice to expand during baking.
  4. Fold the overhanging cabbage leaves over the filling to enclose it completely. Place a baking dish over the cup, then carefully invert the cup onto the dish, releasing the cabbage dome. Repeat with the remaining cups.
  5. In a small saucepan, whisk together tomato paste, water, and olive oil. Warm over medium heat until the tomato paste is dissolved and the broth is smooth. Season with a pinch of salt if desired.
  6. Pour the warm tomato broth over the cabbage domes, covering the bottom of the dish. Cover the baking dish with a lid or aluminum foil. Bake in a preheated oven at 375°F (190°C) for 45 minutes, or until the rice is tender and the beef is cooked through.
  7. Remove the baking dish from the oven and let it rest for 10 minutes. This allows the juices to redistribute and makes the rolls easier to handle.
  8. While the rolls rest, stir a pinch of salt into the yogurt and set aside. In a small skillet, melt the butter over medium heat. Add the paprika and stir for 30 seconds until fragrant and sizzling. Remove from heat.
  9. Spread the garlic yogurt on a serving platter. Carefully place the cabbage domes on top. Drizzle with the sizzling paprika butter. Slice open one dome with a chef's knife to reveal the steaming filling.
