Tips for success

For a deeper color and flavor, you can add a teaspoon of dry mustard powder along with the seasoned salt. This is a traditional Southern addition that helps cut through the richness of the dairy and enhances the sharpness of the cheddar cheese. The mustard flavor will not be distinct in the final dish but will provide a subtle complexity that rounds out the overall profile of the sauce.

If you prefer a slightly more golden top, you can carefully remove the mac and cheese from the slow cooker and place it into a shallow baking dish under the broiler for two to three minutes. This is entirely optional but can provide a beautiful finish if you are serving this for a special occasion and want that extra visual impact of a browned, crusty top layer before bringing it to the table.

Variations

  • Spicy Kick: Stir in one tablespoon of chopped pickled jalapeños or a dash of hot sauce along with the cheeses to add a subtle heat that cuts through the richness of the dairy.
  • Bacon Topped: Fold in a half-cup of cooked, crumbled bacon bits during the final stirring stage to introduce a smoky, salty crunch that pairs perfectly with the sharp cheddar cheese.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freezing is not recommended as the dairy-based sauce may separate upon thawing and reheating.
Reheat
Reheat gently in the microwave or on the stovetop over low heat, adding a small splash of milk to restore the creaminess.

Store any leftover mac and cheese in an airtight container to prevent it from drying out. Because of the high dairy content, it is important to cool the leftovers to room temperature within two hours of cooking before placing them in the refrigerator.

This safety step prevents bacteria growth and maintains the quality of the sauce, ensuring that it remains safe and delicious for up to three days after the initial preparation.

This dish is best enjoyed fresh, but you can prepare the cheese mixture and keep it chilled until you are ready to combine it with the pasta. It is not recommended to cook the pasta ahead of time, as it will continue to absorb liquid and become mushy.

If you need to save time, shred your cheese and measure all your ingredients the day before, so you can simply assemble and start the slow cooker when the time comes.

Serving ideas

This mac and cheese is a hearty side dish that pairs wonderfully with roasted meats, such as smoked brisket, glazed ham, or roast chicken. The creamy, rich profile complements savory, protein-heavy dishes, making it a staple for holiday feasts or Sunday family gatherings.

To add a touch of freshness, serve alongside a crisp green salad with a tangy vinaigrette, which helps balance the richness of the cheese-laden pasta.

When serving, use a large spoon to scoop out portions, ensuring that everyone gets a bit of the crispy, caramelized edge. A light dusting of additional smoked paprika or even some freshly chopped chives can provide a nice visual contrast and a hint of color to the plate.

Serve immediately while the sauce is at its peak creamy consistency and the edges are still warm and firm from the slow cooker.

Frequently asked questions

Can pre-shredded cheese be used for this recipe?
While it is possible to use pre-shredded cheese, it is highly recommended to shred your own cheese from blocks. Pre-shredded varieties are coated in starches like cellulose to prevent clumping, which can interfere with the melting process and result in a sauce that is slightly grainy rather than perfectly smooth and velvety.
Why is the mac and cheese sauce thin after two hours?
If the sauce appears too thin, it may be due to the specific starch content of the macaroni used or the moisture levels in the slow cooker. Simply stir the mixture well and let it continue to cook with the lid slightly ajar for an additional 10 to 15 minutes. This allows extra moisture to evaporate and helps the sauce thicken to the desired consistency before serving.
Can this be made in a larger size slow cooker?
Yes, you can use a larger slow cooker, but keep in mind that the surface area will be greater, which may lead to faster evaporation. If the sauce appears to be thickening too quickly, you may need to reduce the final caramelization time or add a splash of milk to maintain the creamy texture. The cooking times provided are optimized for a standard 6-quart slow cooker.

Ingredients

  • 16 oz uncooked elbow macaroni
  • 12 oz evaporated milk
  • 1 1/2 cups whole milk
  • 1 stick salted butter, melted
  • 8 oz cream cheese
  • 1 tsp seasoned salt
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Colby Jack cheese
  • 1 cup shredded mozzarella cheese
  • smoked paprika for serving

Instructions

  1. Generously butter the interior of your slow cooker. Add the uncooked elbow macaroni, evaporated milk, whole milk, melted salted butter, cream cheese, and seasoned salt to the pot. Stir the mixture well to ensure the cream cheese is distributed throughout the liquid.
  2. Cover the slow cooker and cook on LOW for 2 hours. After the initial cooking time, remove the lid and stir in the shredded sharp cheddar, Colby Jack, and mozzarella cheeses until completely melted and smooth.
  3. Replace the lid and continue cooking for an additional 20 minutes to allow the edges to develop a golden, caramelized crust. Once the edges are set and golden, turn off the slow cooker and scoop the mac and cheese onto plates. Sprinkle lightly with smoked paprika before serving.
