Tips for success
For the best texture, use pasta shells that are medium-sized—they hold the sauce and cheese well. If you prefer a thicker sauce, remove the lid during the last 30 minutes of cooking to let some liquid evaporate.
To make the dish extra indulgent, add a sprinkle of grated Parmesan cheese on top before serving.
If you have leftover sauce, it's great for dipping bread or tossing with extra pasta. To store leftovers, let the dish cool completely, then transfer to an airtight container and refrigerate for up to 4 days.
Reheat gently in the microwave or on the stovetop, adding a splash of water or milk to loosen the sauce if needed.
Variations
- Spicy Kick: Add 1/2 teaspoon of crushed red pepper flakes or a diced jalapeño to the sauce before cooking. This adds a gentle heat that balances the creamy richness.
- Turkey Meatballs: Use ground turkey meatballs instead of beef for a lighter option. Cook to 165°F (74°C) as the safe internal temperature for poultry.
- Veggie Boost: Stir in 2 cups of baby spinach or chopped kale during the last 30 minutes of cooking. The greens wilt into the sauce, adding color and nutrients.
- Cheese Swap: Replace the provolone with shredded mozzarella or a blend of Italian cheeses. You can also add a layer of grated Parmesan between the ricotta and provolone.
Storage and make-ahead
- Fridge
- Keep leftovers refrigerated in an airtight container for up to 4 days. Reheat gently, adding a splash of milk or water to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 1-minute intervals, stirring between, or on the stovetop over medium heat until hot and bubbling.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop over medium heat, stirring occasionally, until warmed through. Add a splash of water or milk if the sauce has thickened too much.
This dish can be assembled up to 24 hours in advance. Layer the ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook on LOW for 4 to 5 hours, adding 30 minutes to the cook time to account for the cold start.
Serving ideas
Serve this hearty pasta bake straight from the slow cooker, spooning generous portions onto warm plates.
It pairs beautifully with a crisp green salad dressed with lemon vinaigrette, or with crusty bread to soak up the extra sauce. For a lighter meal, serve smaller portions alongside roasted vegetables.
This dish is a complete meal on its own, but it also works well as a side for grilled chicken or steak.
The creamy, smoky sauce and tender meatballs make it a crowd-pleaser for family dinners or casual gatherings. Garnish with fresh basil or parsley if you like, and let everyone dig in.

Crockpot Provolone Meatball Red Pepper Shells: Dump-and-Go Comfort

Ingredients
- 2 lb homestyle Italian beef meatballs
- 12 oz medium conchiglie pasta shells
- 3 cups smoky roasted red bell pepper cream sauce
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the beef meatballs in an even layer in the bottom of a 6-quart slow cooker. Spread the pasta shells over the meatballs, then pour the smoky roasted red pepper cream sauce over everything, making sure the sauce coats the pasta and meatballs evenly.
- Spoon dollops of whole-milk ricotta over the top, then sprinkle the shredded provolone evenly over the entire surface. Press the cheese down gently so it tucks into the sauce.
- Cover the slow cooker and cook on LOW for 4 hours, or until the meatballs are cooked through and the pasta is tender. Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, check that the meatballs have reached an internal temperature of 160°F (71°C) using an instant-read thermometer. The pasta should be al dente and the cheese melted and bubbly.
- Using a large spoon, scoop the cheesy pasta and meatballs onto plates or bowls. Spoon extra sauce from the slow cooker over the top. Serve hot, with a crisp green salad if desired.
