Tips for success

For the best flavor, use freshly shredded Pepper Jack cheese—pre-shredded varieties often contain anti-caking agents that prevent smooth melting.

If you like extra heat, add a diced jalapeño or a pinch of cayenne to the sauce before cooking. The casserole is forgiving, so feel free to adjust the spice level to taste.

To make this recipe even easier, prepare the pork and chiles a day ahead. Sear the pork, chop the chiles, and store them in the refrigerator.

In the morning, just layer everything in the slow cooker and turn it on. The casserole also freezes well, so you can make a double batch and save half for later.

Variations

  • Chicken version: Substitute boneless, skinless chicken thighs for the pork. Cook on low for 4-5 hours, then shred and proceed as directed. The chicken will be just as tender and soak up the green chile sauce beautifully.
  • Add beans: Stir in 1 can of drained black beans or pinto beans along with the chiles. This adds heartiness and stretches the casserole to feed more people. You can also use refried beans as a layer in the casserole.
  • Extra smoky: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of liquid smoke to the sauce before cooking. This deepens the smoky flavor and gives the casserole a barbecue-inspired twist.
  • Vegetarian: Replace the pork with 3 cups of roasted sweet potatoes or butternut squash cubes. Cook on low for 4-5 hours, then stir in the cheese and tortillas. The result is a hearty, meatless version that still delivers on flavor.

Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if the casserole seems dry.

This casserole can be assembled the night before and refrigerated, then cooked the next day. Or cook it fully and freeze for up to 3 months. Thaw in the refrigerator overnight and reheat in a 350°F (175°C) oven until hot and bubbly.

Serving ideas

Serve this casserole with warm tortillas, tortilla chips, or a simple green salad. The creamy avocado and chipotle crema add a cool, smoky contrast to the spicy, cheesy casserole.

It's a complete meal on its own, but you can also add a side of refried beans or Spanish rice.

For a festive presentation, serve the casserole straight from the slow cooker, topped with a generous swirl of chipotle crema and a sprinkle of fresh cilantro. Offer extra lime wedges and hot sauce on the side for guests who want more heat.

Frequently asked questions

Can this casserole be made without searing the pork?
While searing adds depth, you can skip it if time is short. The pork will still become tender, but the flavor will be less rich. If skipping, consider adding a teaspoon of smoked paprika to the sauce for a smoky note.
What if Hatch chiles are not available?
Use canned diced green chiles (drained) or roasted poblano peppers. Poblanos are milder, so add a small jalapeño if you want more heat. Roasting fresh poblano chiles under the broiler until charred gives the best substitute.
Can this recipe be doubled?
Yes, but use a larger slow cooker (at least 8 quarts) and increase the cooking time to 8-9 hours on low. Make sure the slow cooker is no more than two-thirds full to ensure even cooking. The leftovers freeze well.
Why does the casserole turn out watery?
If the pork releases too much liquid, the casserole can become soupy. To fix this, remove the lid for the last 30 minutes of cooking to let excess moisture evaporate. Also, avoid adding extra liquid beyond what the sauce provides.
Can this be assembled the night before?
Yes, assemble the casserole in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook on low for 7 hours. Add 30 minutes to the cooking time if starting from cold.

Crockpot Hatch Green Chile Pulled Pork Enchilada Casserole

Prep 20 minCook 7 hTotal 7 h 20 minServes 8
A steaming Crockpot filled with pulled pork, green chiles, and melted cheese.

Ingredients

  • 3 lb pork shoulder, cut into chunks
  • 2 cups roasted Hatch green chiles, chopped
  • 16 oz sour cream green enchilada sauce
  • 12 corn tortillas, charred and cut into strips
  • 2 cups Pepper Jack cheese, shredded
  • 1/2 cup diced white onion
  • 1/4 cup fresh cilantro leaves
  • 1 Hass avocado, cubed
  • 1/2 cup smoky chipotle crema

Instructions

  1. Heat a large skillet over medium-high heat. Add the pork shoulder chunks and sear on all sides until deeply browned, about 6-8 minutes total. Work in batches if needed to avoid crowding the pan. Transfer the seared pork to the slow cooker insert. Let it rest for 3 minutes before slicing.
  2. Add the roasted Hatch green chiles, sour cream green enchilada sauce, charred corn tortilla strips, and 1 cup of the Pepper Jack cheese to the slow cooker. Gently stir to combine everything, making sure the tortillas are coated with the sauce.
  3. Cover the slow cooker and cook on LOW for 7 hours. Avoid lifting the lid during cooking to keep the heat steady. After 7 hours, the pork should shred easily with a fork. Let it rest for 3 minutes before slicing.
  4. Using two forks, shred the pork directly in the slow cooker. Stir the shredded pork into the sauce and tortilla mixture. Taste and adjust seasoning with salt and pepper if needed. Let it rest for 3 minutes before slicing.
  5. Sprinkle the remaining 1 cup of Pepper Jack cheese evenly over the top of the casserole. Cover the slow cooker and let it sit for 5-10 minutes, or until the cheese is fully melted and bubbly.
  6. Spoon the casserole onto plates and top with diced white onion, fresh cilantro leaves, cubed Hass avocado, and a swirl of smoky chipotle crema. Serve hot.
