Tips for success
For the best texture, use refrigerated shredded hashbrowns rather than frozen. If using frozen, thaw them completely and squeeze out excess moisture.
This prevents the casserole from becoming watery. Also, be generous with the nonstick spray or use a slow cooker liner to make cleanup a breeze. The casserole will release easily and slice cleanly.
Feel free to customize the toppings to your liking. Sliced jalapeños, hot sauce, or a dollop of guacamole would be delicious additions.
For a spicier casserole, use pepper Jack cheese or add a pinch of cayenne to the egg mixture. You can also swap the bell peppers for diced green chiles for a milder, smoky flavor. The recipe is versatile and forgiving.
Variations
- Spicy Chorizo & Jalapeño: Add 1-2 diced jalapeños (seeds removed for less heat) to the bell pepper layer. Use pepper Jack cheese instead of cheddar-Jack for an extra kick. Top with sliced fresh jalapeños before serving.
- Southwest Style: Replace the bell peppers with 1 cup frozen corn and 1 can (4 oz) diced green chiles. Use a Mexican cheese blend and add a teaspoon of ground cumin to the egg mixture. Serve with a drizzle of salsa verde.
- Loaded Potato Breakfast: Swap the chorizo for 1 lb cooked, crumbled bacon. Add 1/2 cup chopped green onions to the layers. Use sharp cheddar cheese and top with extra bacon bits and chives before serving.
- Vegetarian Fiesta: Omit the chorizo and add 1 can (15 oz) black beans, rinsed and drained, and 1 cup sautéed mushrooms. Use a Mexican cheese blend and add 1 tsp smoked paprika to the egg mixture.

Serving ideas
Serve this casserole warm, straight from the slow cooker, for a casual brunch or family breakfast.
The toppings are essential—creamy avocado, tangy sour cream, fresh pico de gallo, and a squeeze of lime brighten the rich, cheesy casserole. Offer extra lime wedges and hot sauce on the side for guests to customize their plates.
This dish is hearty enough to be the star of a holiday morning or a weekend gathering. Pair it with fresh fruit, warm tortillas, or a simple green salad for a complete meal.
Leftovers are just as delicious, making it a great option for meal prep. Enjoy it as a breakfast-for-dinner option too, served with a side of refried beans.

Crockpot Cheesy Chorizo Egg & Hashbrown Fiesta Breakfast Casserole

Ingredients
- 30 oz shredded hashbrowns
- 1 lb fresh Mexican chorizo, browned
- 2 medium bell peppers, sliced
- 12 large eggs
- 1/2 cup heavy cream
- 2 tbsp taco seasoning
- 3 cups shredded cheddar-Jack cheese
- 1 Hass avocado, sliced, for serving
- 1/2 cup sour cream, for serving
- 1 cup pico de gallo, for serving
- 1/4 cup fresh cilantro, chopped, for serving
- 1 lime, cut into wedges, for serving
Instructions
- Heat a large skillet over medium-high heat. Add the fresh Mexican chorizo and cook, breaking it up with a spatula, until browned and cooked through, about 6 to 8 minutes. Transfer the cooked chorizo to a plate lined with paper towels to drain excess grease. Slice the bell peppers into thin strips.
- In a large mixing bowl, crack the 12 eggs and add the heavy cream and taco seasoning. Whisk vigorously until the eggs are fully beaten and the mixture is smooth and slightly frothy.
- Lightly coat the inside of a 6-quart slow cooker with nonstick spray. Spread half of the shredded hashbrowns evenly over the bottom. Top with half of the browned chorizo and half of the sliced bell peppers. Pour half of the egg mixture over this layer. Sprinkle with half of the shredded cheddar-Jack cheese. Repeat the layers with the remaining hashbrowns, chorizo, peppers, egg mixture, and cheese.
- Cover the slow cooker with the lid. Cook on LOW for 6 hours or on HIGH for 4 hours, until the egg custard is set and the cheese is bubbling and golden around the edges.
- Turn off the slow cooker and let the casserole rest for 10 minutes. Slice into squares and serve warm, topped with sliced avocado, a dollop of sour cream, pico de gallo, chopped cilantro, and a squeeze of fresh lime juice.
