Before you start
Before you start, make sure the lobster tails are split. If they are frozen, thaw them in the refrigerator overnight. Peel and devein the shrimp if needed. Measure the wine, lemon juice, and capers.
Have the Cajun butter melted and ready. If you are making the rice, start it before you begin the seafood, or use a rice cooker. The slow cooker does the rest of the work.
Ingredients at a glance (9)
- 4 split cold-water lobster tails
- 1 lb raw jumbo shrimp, peeled and deveined
- 1 fresh yellow Meyer lemon, sliced
- 2 tbsp brined capers, drained
- 1/2 cup crisp white wine, such as Sauvignon Blanc
- 1/2 cup melted Cajun garlic-paprika butter
- 2 tbsp fresh lemon juice
- Steamed jasmine rice, for serving
- Lemon wedges, for serving
Instructions
Layer and Season
- Layer the Seafood and AromaticsPlace the split lobster tails and raw jumbo shrimp in the bottom of a 6-quart slow cooker. Arrange the lemon slices over the seafood, then scatter the capers on top. Pour the white wine over everything.Look for The seafood should be nestled in the slow cooker with lemon slices and capers distributed evenly.Tip Use kitchen shears to split the lobster tails down the middle for even cooking and easy eating.
- Add the Cajun Butter and Lemon JuicePour the melted Cajun garlic-paprika butter and the fresh lemon juice over the seafood and aromatics. Do not stir; the layers will meld during cooking.Look for The butter and lemon juice should cover the top of the seafood mixture.Tip If the butter solidifies, gently warm it again before pouring.
At the end of this phase, the slow cooker contains a colorful layering of lobster tails, shrimp, lemon slices, capers, and white wine, topped with the bright red Cajun butter.
The butter may pool in spots, but that's fine. The aromas are already promising — buttery, spicy, and citrusy.
Slow-Cook to Perfection
- Slow-Cook on LowCover the slow cooker and cook on low for 2 hours, or until the lobster tails are opaque and the shrimp are pink and firm. The sauce will be bubbling gently around the edges.Look for The sauce should be bubbling, and the seafood should be cooked through.Safe temperature 145°F (63°C) internal temperature (shellfish)Tip Check the seafood at 1 hour 45 minutes to avoid overcooking; cooking times vary with the size of the seafood.
- Test for DonenessUsing tongs, check the thickest part of a lobster tail and the largest shrimp. The flesh should be opaque and reach an internal temperature of 145°F (63°C) on an instant-read thermometer.Look for The flesh is opaque and flakes easily with a fork; the shrimp are curled and pink.Safe temperature 145°F (63°C) internal temperature (shellfish)Tip Insert the thermometer sideways into the thickest part of the tail without touching the shell.
After two hours on low, the sauce is bubbling gently, and the kitchen smells of garlic, paprika, and seafood. The lobster tails are a vibrant orange-red, and the shrimp are pink and curled. The sauce has deepened in color and thickened slightly. The seafood should be opaque and tender.
Finish and Serve
- Lift Out the SeafoodUsing a slotted spoon, gently lift the lobster tails and shrimp from the sauce and transfer to a serving platter. Reserve the sauce in the slow cooker.Look for The seafood should be glistening with butter sauce and hold its shape.Tip Work gently to keep the lobster tails intact.
- Serve Over RicePlate the steamed jasmine rice on a large platter or individual plates. Arrange the lobster tails and shrimp over the rice, then spoon the warm Cajun butter sauce from the slow cooker over the top. Serve with lemon wedges on the side.Look for The butter sauce should be spooned generously over the seafood and rice.Tip For a richer presentation, drizzle extra sauce at the table.
The seafood is lifted from the sauce, glistening with butter. The rice is steamed and ready. As the sauce is spooned over, it pools around the rice and seafood, inviting you to dig in. The lemon wedges add a final bright note. The dish is ready to serve immediately.
Common mistakes
The most common mistake is overcooking the seafood. Since slow cookers vary, start checking at the 1.5-hour mark. Another mistake is not splitting the lobster tails, which prevents even cooking.
Also, avoid stirring the mixture during cooking, as this can break up the seafood. Finally, don't skip the lemon wedges at the end; their fresh acidity balances the richness of the butter sauce.
How to tell it’s done
The seafood is done when the lobster tails are opaque and the shrimp are pink and firm. The internal temperature should reach 145°F (63°C) in the thickest part of the lobster tail and the largest shrimp.
The sauce will be bubbling gently and have a rich, buttery aroma. Be careful not to overcook, as the seafood can become rubbery. Once done, remove it from the slow cooker promptly to stop the cooking.
- Shellfish: 145°F (63°C) in the thickest part
