Tips for success
For the most tender lobster, avoid cooking on high. The low setting allows the meat to cook gently without becoming tough.
If you're in a hurry, you can cook on high for 1 1/2 to 2 hours, but check the temperature early to prevent overcooking.
To make your own Cajun butter, combine 1/2 cup melted butter with 1 teaspoon Cajun seasoning, 1/2 teaspoon smoked paprika, and 1/2 teaspoon garlic powder.
The lemon juice brightens the sauce and balances the richness. Adjust the amount of Cajun seasoning to suit your heat preference.
Variations
- Spicy Andouille Addition: Add 1/2 pound sliced andouille sausage with the seafood for a smoky, spicy boost. The sausage will infuse the butter sauce with extra depth and richness.
- Extra Vegetables: Toss in 2 cups of baby potatoes or quartered red potatoes with the corn. They will cook in the butter sauce and become tender and flavorful.
- Mild Butter Swap: For a milder version, replace the Cajun butter with 1/2 cup melted butter mixed with 1 teaspoon smoked paprika and 1/2 teaspoon garlic powder. Omit the lemon juice for a less tangy sauce.
- Crab Legs Addition: Add 1 pound of thawed snow crab legs on top of the seafood. They will heat through in the sauce and make the dish even more decadent.
Storage and make-ahead
- Fridge
- Store leftovers in a sealed container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop until just warm.
- Freezer
- Freeze in an airtight container for up to 2 months. Thaw overnight in the refrigerator before reheating gently.
- Reheat
- Reheat in a skillet over medium-low heat with a splash of water or butter to prevent drying. Or microwave in 30-second bursts until warm.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The seafood will release some liquid, so reheat gently in a skillet or microwave until just warmed through. Avoid boiling, which can toughen the seafood.
The ingredients can be prepped a day ahead: split the lobster tails, peel the shrimp, smash the garlic, and measure the corn. Keep them refrigerated in separate containers.
When ready to cook, layer everything in the slow cooker and proceed. The butter sauce can also be mixed ahead and refrigerated; melt it before pouring.
Serving ideas
Serve the seafood boil over steamed white jasmine rice to soak up the rich butter sauce. Add lemon wedges on the side for a bright, citrusy squeeze. A green salad or crusty bread makes a nice accompaniment to round out the meal.
For a more casual presentation, serve the seafood directly from the slow cooker with a slotted spoon, letting guests build their own plates.
Provide extra napkins and a bowl for shells. The dish is hearty enough to be a main course on its own.

Crockpot Bayou Butter Garlic Corn Lobster Tails

Ingredients
- 4 split cold-water lobster tails
- 1 lb raw jumbo shrimp, peeled and deveined
- 2 cups frozen sweet corn kernels
- 12 cloves garlic, smashed
- 1/2 cup melted Cajun garlic-paprika butter
- 2 tbsp fresh lemon juice
- Steamed white jasmine rice, for serving
- Lemon wedges, for serving
Instructions
- Place the split lobster tails and raw jumbo shrimp in the bottom of a 7-quart slow cooker. Spread them in an even layer so they cook evenly. The lobster tails can overlap slightly, but try to keep the shrimp in a single layer.
- Scatter the frozen sweet corn kernels and the smashed garlic cloves over the seafood. The corn will absorb the butter sauce as it cooks, and the garlic will soften and mellow.
- In a small bowl, stir together the melted Cajun garlic-paprika butter and fresh lemon juice. Pour the mixture evenly over the seafood, corn, and garlic. Do not stir—the sauce will distribute as it melts.
- Cover the slow cooker and cook on low for 3 hours, or until the lobster tails are opaque and the shrimp are pink and firm. The sauce will bubble gently around the edges. Do not open the lid during cooking to check—each time the lid is lifted, heat escapes and extends the cooking time.
- Check that the thickest part of a lobster tail and a shrimp reach 145°F (63°C) on an instant-read thermometer. The shrimp should be pink and curled, and the lobster meat should be white and opaque. If not yet done, cover and cook for 15 more minutes.
- Using a slotted spoon, transfer the seafood, corn, and garlic to a platter or individual bowls. Serve immediately over steamed white jasmine rice with lemon wedges on the side. Spoon extra butter sauce from the slow cooker over each serving.
