Before you start

Before starting, thaw the lobster tails and shrimp if frozen. Split the lobster tails in half lengthwise with a sharp knife, if not already done.

Smash the garlic cloves with the flat side of a knife to release their flavor. Melt the Cajun butter and stir in the lemon juice. Have the corn kernels ready. Set out the slow cooker and a slotted spoon for serving.

Ingredients at a glance (8)
  • 4 split cold-water lobster tails
  • 1 lb raw jumbo shrimp, peeled and deveined
  • 2 cups frozen sweet corn kernels
  • 12 cloves garlic, smashed
  • 1/2 cup melted Cajun garlic-paprika butter
  • 2 tbsp fresh lemon juice
  • Steamed white jasmine rice, for serving
  • Lemon wedges, for serving

Instructions

Layer and Sauce

  1. Layer the Seafood
Place the split lobster tails and raw jumbo shrimp in the bottom of a 7-quart slow cooker. Spread them in an even layer so they cook evenly. The lobster tails can overlap slightly, but try to keep the shrimp in a single layer.
Look for The seafood should cover the bottom of the Crockpot in a single-ish layer.
Tip If the lobster tails are frozen, thaw them overnight in the refrigerator before starting.
  2. Add Corn and Garlic
Scatter the frozen sweet corn kernels and the smashed garlic cloves over the seafood. The corn will absorb the butter sauce as it cooks, and the garlic will soften and mellow.
Look for The corn and garlic should be evenly distributed over the seafood.
Tip Smashing the garlic cloves helps release their flavor without mincing.
  3. Pour the Butter Sauce
In a small bowl, stir together the melted Cajun garlic-paprika butter and fresh lemon juice. Pour the mixture evenly over the seafood, corn, and garlic. Do not stir—the sauce will distribute as it melts.
Look for The butter sauce should coat the top of the ingredients.
Tip If the butter solidifies, warm it briefly to melt again before pouring.

At the end of this phase, the slow cooker contains an even layer of lobster tails and shrimp, topped with corn and garlic, and drizzled with the crimson butter sauce.

The ingredients look vibrant and glossy. The garlic and corn are scattered evenly, and the butter sauce pools in the bottom. This is the raw setup—no heat yet.

Slow Cook and Check

  1. Slow Cook on Low
Cover the slow cooker and cook on low for 3 hours, or until the lobster tails are opaque and the shrimp are pink and firm. The sauce will bubble gently around the edges. Do not open the lid during cooking to check—each time the lid is lifted, heat escapes and extends the cooking time.
Look for The sauce should be bubbling gently, and the seafood should be opaque and fragrant.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip For the most tender results, cook on low rather than high.
  2. Check the Temperature
Check that the thickest part of a lobster tail and a shrimp reach 145°F (63°C) on an instant-read thermometer. The shrimp should be pink and curled, and the lobster meat should be white and opaque. If not yet done, cover and cook for 15 more minutes.
Look for The thermometer should read 145°F (63°C) when inserted into the thickest part.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Insert the thermometer sideways into the tail meat, not through the shell.

After 3 hours on low, the sauce is bubbling gently around the edges, and the aroma of Cajun spices and garlic fills the kitchen. The lobster tails are opaque, and the shrimp are pink and curled. The corn is tender, and the garlic has softened. The internal temperature should read 145°F (63°C) to ensure safe doneness.

Serve and Enjoy

  1. Serve Over Rice
Using a slotted spoon, transfer the seafood, corn, and garlic to a platter or individual bowls. Serve immediately over steamed white jasmine rice with lemon wedges on the side. Spoon extra butter sauce from the slow cooker over each serving.
Look for The seafood should be glossy with butter sauce.
Tip The rice soaks up the rich Cajun butter—don't skimp on the sauce.

The seafood is lifted out with a slotted spoon, glossy with butter sauce. The corn and garlic cling to the seafood. Served over steamed rice with lemon wedges, the dish looks like a gourmet seafood boil. The sauce is rich and spicy, with a bright lemon finish. Every bite is tender and flavorful.

Common mistakes

A common mistake is overcooking the seafood, which makes it tough and rubbery. Stick to the low heat and check the temperature at the 3-hour mark.

Another mistake is lifting the lid frequently to peek—this releases heat and extends cooking time. Keep the lid on until the minimum time. Also, avoid stirring the ingredients after adding the butter, as this can break up the lobster tails.

How to tell it’s done

The dish is done when the lobster meat is opaque and the shrimp are pink and firm. The internal temperature should reach 145°F (63°C) in the thickest part of the lobster tail and the center of a shrimp.

The sauce will be bubbling gently and the corn tender. If the seafood is not yet done, cover and cook for 15 more minutes, then check again.

  • Shellfish: 145°F (63°C) in the thickest part
