Tips for success
For the crispiest kadayıf, make sure the skillet is not overcrowded; if necessary, toast in batches. The sugar will caramelize and help the strands crisp up, but watch closely to avoid burning.
Let the toasted kadayıf cool completely before layering, so it doesn’t soften the custard. If the top layer becomes less crunchy after chilling, you can re-toast a fresh batch and sprinkle it over just before serving.
When whipping the custard, ensure it is thoroughly chilled; this helps the whipped cream powder stabilize and incorporate air effectively. Use a large bowl to prevent splattering.
If you don’t have whipped cream powder, you can fold in lightly whipped heavy cream after whipping the custard, but the texture will be lighter and less stable. Always use a spatula to spread the custard evenly, and gently press the top kadayıf layer to help it adhere.
Variations
- Chocolate Twist: Add 1/4 cup unsweetened cocoa powder to the custard milk mixture before cooking. Stir in 1/2 cup chocolate chips after removing from heat for a rich, chocolatey version that pairs beautifully with the walnuts.
- Citrus Zest: Add the zest of one orange or lemon to the custard after cooking, and stir in 1 tablespoon of orange blossom water or lemon juice. This adds a bright, floral note that complements the nutty kadayıf.
- Spiced Walnut: Toss the toasted walnuts with 1/2 teaspoon ground cinnamon and a pinch of ground cloves before adding to the kadayıf. This warm spice blend enhances the caramel notes of the dessert.
- Berry Layer: Spread a thin layer of raspberry or strawberry jam over the bottom kadayıf layer before adding the custard. The tartness of the berries cuts through the sweetness and adds a fruity dimension.
Storage and make-ahead
- Fridge
- Cover the baking dish with plastic wrap or a lid and refrigerate for up to 3 days.
- Freezer
- This dessert can be frozen for up to 1 month. Wrap the dish tightly in plastic wrap and then foil. Thaw in the refrigerator overnight before serving.
- Reheat
- Do not reheat this dessert; it is meant to be served cold.
Store any leftover dessert in the refrigerator, covered, for up to 3 days. The top kadayıf layer may lose some of its crunch over time, but the dessert will still taste delicious. To refresh the texture, you can sprinkle a little extra toasted kadayıf on top just before serving.
This dessert is ideal for making ahead. Prepare it fully, cover, and refrigerate for up to 24 hours before serving.
The chilling time allows the flavors to meld and the layers to set firmly, making slicing easier. You can also prepare the toasted kadayıf and custard separately a day ahead, then assemble and chill the next day.
Serving ideas
Serve the dessert cold, straight from the refrigerator, for the best contrast of crunchy and creamy textures. Use a sharp knife to cut clean squares, and lift them with a spatula to keep the layers intact.
A small scoop of vanilla ice cream or a dollop of whipped cream would be a lovely addition, though the dessert is delicious on its own.
For a more elegant presentation, dust the top with a little ground cinnamon or cocoa powder before serving. You can also garnish each plate with a few extra chopped walnuts or a sprig of mint for a pop of color. This dessert pairs wonderfully with strong Turkish coffee or a glass of cold milk.

Crispy Walnut Kadayıf Custard Dessert

Ingredients
- 3 cups shredded kadayıf pastry
- 2 tbsp butter
- 1/2 cup sugar
- 1 cup chopped walnuts
- 1 liter whole milk
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tbsp butter
- 1 tsp vanilla extract
- 1 packet whipped cream powder (krem şanti)
Instructions
- Melt the butter in a large skillet over low heat. Add the shredded kadayıf pastry and sugar, stirring constantly with a spatula to coat every strand. Continue toasting for about 8–10 minutes, until the kadayıf turns golden and crisp. Add the chopped walnuts and cook for another 2–3 minutes, stirring often, until the nuts are fragrant and the mixture is a deep amber color. Remove from heat and set aside to cool slightly.
- In a large saucepan, whisk together the whole milk, sugar, all-purpose flour, and cornstarch until smooth and no lumps remain. Place over medium heat and cook, whisking constantly, until the mixture thickens and comes to a gentle boil. This should take about 10–12 minutes. Once bubbling, reduce the heat to low and cook for 1–2 minutes more, then remove from heat. Stir in the butter and vanilla extract until fully incorporated.
- Pour the hot custard into a large bowl. Press a piece of plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 30 minutes, or until completely cooled and thickened. The custard should be firm enough to hold its shape when stirred.
- Remove the chilled custard from the refrigerator. Sprinkle the whipped cream powder (krem şanti) over the top. Using an electric hand mixer on medium speed, whip the custard for 2–3 minutes, until it becomes light, fluffy, and glossy. The mixture should increase in volume and have a cloud-like texture.
- Spread half of the toasted kadayıf mixture evenly over the bottom of a large glass baking dish (about 9x13 inches). Press down gently with a spatula to create a firm base. Pour the whipped custard over the kadayıf layer and smooth the top with an offset spatula. Sprinkle the remaining toasted kadayıf mixture evenly over the custard, covering it completely.
- Cover the baking dish with plastic wrap or a lid. Refrigerate the assembled dessert for at least 4 hours, or overnight, to allow the layers to set and the flavors to meld. The dessert should be firm enough to slice cleanly.
- Remove the dessert from the refrigerator just before serving. Using a sharp knife, cut into squares or rectangles. Lift each portion with a spatula, ensuring the layers stay intact. Serve cold, scooping a generous piece onto each plate.
