Tips for success
For the best texture, serve the baklava on the day it's made, when the filo is still crisp. If making ahead, store in an airtight container at room temperature for up to two days; the pastries will soften but remain delicious.
To re-crisp, place in a 300°F (150°C) oven for 5 minutes, then cool before serving. Always use a sharp knife to cut the filo, and brush each layer evenly but not excessively.
When making the syrup, be patient and let it cool completely; this is essential for the signature sizzle and crisp texture. If you prefer a less sweet dessert, reduce the sugar slightly, but keep the lemon juice to balance.
For a more pronounced pistachio flavor, toast the ground pistachios briefly in a dry skillet before using. This adds a deeper, nuttier aroma to the filling.
Variations
- Chocolate Swirl: Add 2 tablespoons of cocoa powder to the semolina cream before cooking, or drizzle melted chocolate over the finished baklava. This adds a rich, bitter contrast to the sweet syrup.
- Rose Water Infusion: Stir 1 teaspoon of rose water into the syrup after it has cooled. The floral note pairs beautifully with the pistachios and adds a Middle Eastern twist.
- Walnut Filling: Replace the pistachios with finely ground walnuts for a different nutty flavor. Toast the walnuts lightly before grinding to enhance their aroma.
- Orange Zest Syrup: Add a strip of orange zest to the syrup while simmering, then remove before pouring. The citrus brightness complements the creamy filling and adds a fresh note.
Storage and make-ahead
- Fridge
- Do not refrigerate baklava, as it will become soggy. Store at room temperature in an airtight container for up to 3 days.
- Freezer
- Freeze unbaked, assembled triangles on a baking sheet until solid, then transfer to a freezer bag for up to 2 months. Bake from frozen, adding 5-10 minutes.
- Reheat
- To re-crisp, place in a 300°F (150°C) oven for 5 minutes. Cool slightly before serving.
Store leftover baklava in an airtight container at room temperature for up to 3 days. The pastries will soften over time, so for the best texture, re-crisp them in a 300°F (150°C) oven for 5 minutes before serving. Do not refrigerate, as this will make the filo soggy.
The semolina cream and syrup can be made up to 2 days ahead and stored in the refrigerator (cream) and at room temperature (syrup).
Assemble and bake the baklava up to 1 day ahead, but pour the syrup just before serving to keep the pastry crisp. After syruping, let the baklava rest for at least 30 minutes before serving.
Serving ideas
Serve the baklava at room temperature, with a cup of strong Turkish coffee or black tea. The sweetness of the syrup pairs beautifully with the bitterness of the coffee. For a special touch, add a small scoop of vanilla ice cream or a dollop of clotted cream on the side, though the pastries are delightful on their own.
Arrange the triangles on a platter, drizzle with a little extra syrup from the pan, and sprinkle with additional crushed pistachios for a vibrant finish.
These pastries are meant to be enjoyed slowly, savoring each crunchy, creamy bite. They make a gorgeous centerpiece for a dessert table during holidays or celebrations.

Crispy Turkish Şöbiyet Baklava with Semolina Cream

Ingredients
- 20 sheets fresh Turkish baklava yufka (or filo dough)
- 150 g clarified butter, melted
- 150 g finely ground Antep pistachios
- 200 ml milk
- 40 g semolina
- 250 g granulated sugar
- 200 ml water
- 1 tsp lemon juice
Instructions
- In a medium saucepan, combine the milk and semolina. Cook over medium heat, whisking constantly, until the mixture thickens into a thick pudding, about 5 minutes. Remove from heat and let cool slightly. In a separate small saucepan, combine the sugar and water. Bring to a boil, stirring to dissolve the sugar, then add the lemon juice and simmer for 5 minutes. Set aside to cool completely.
- Preheat the oven to 375°F (190°C). Brush the bottom of a 9x13-inch baking dish with some of the clarified butter. Lay one sheet of yufka in the dish, brush it lightly with butter, and repeat with the remaining sheets, brushing each layer. Keep the stack even and flat.
- Using a sharp knife, cut the layered filo into 12 equal squares. Place a dollop of the semolina cream and a sprinkle of ground pistachios in the center of each square. Fold each square diagonally to form a triangle, pressing the edges to seal.
- Arrange the triangles in the baking dish, leaving a little space between them. Pour the remaining clarified butter over the top, making sure each triangle is coated. Bake for 30 minutes, until the pastries are puffed, golden, and shatteringly crisp.
- Remove the baklava from the oven and immediately pour the cooled syrup evenly over the hot pastries. The sizzling sound indicates the syrup is being absorbed. Let the pastries sit for at least 30 minutes to soak up the syrup.
- Dust the top of the baklava with the remaining ground pistachios. Lift a syrup-soaked triangle with your fingers or tongs and serve at room temperature.
