Tips for success

For the crispiest crust, roll the dough as thin as possible without tearing. A thickness of about 1/8 inch works best. Use a dry pan that is thoroughly preheated—this ensures immediate blistering and browning.

If the pan smokes, reduce the heat slightly. Brushing with melted butter immediately after cooking locks in flavor and adds a beautiful sheen.

To keep multiple gözleme warm while cooking the rest, place them on a baking sheet in a 200°F oven. Do not stack them directly on top of each other, as they may become soggy.

If making ahead, reheat in a dry skillet over medium heat to restore crispness, then brush with a little extra butter if desired.

Variations

  • Spicy Sausage: Add 1/2 cup cooked and crumbled spicy sausage to the potato filling for an extra savory kick. Reduce the salt slightly to account for the sausage's seasoning.
  • Herb and Feta: Replace half the kaşar cheese with crumbled feta and add 2 tablespoons chopped fresh dill. The feta adds a tangy, salty flavor that pairs well with the potatoes.
  • Spinach and Cheese: Fold 1 cup of chopped cooked spinach into the potato mixture along with the kaşar. Squeeze the spinach dry before adding to avoid a watery filling.
  • Mushroom and Thyme: Sauté 1 cup sliced mushrooms with a little butter until golden, then mix into the potato filling with 1 teaspoon fresh thyme leaves. This adds an earthy depth.

Storage and make-ahead

Fridge
Store leftover gözleme in an airtight container in the refrigerator for up to 3 days. Reheat in a dry skillet to restore crispness.
Freezer
Freeze cooked and cooled gözleme in a single layer on a baking sheet, then transfer to a zip-top bag for up to 2 months.
Reheat
Reheat in a dry skillet over medium heat for 2-3 minutes per side until hot and crisp. Avoid microwaving to maintain the crispy crust.

The filling can be prepared up to 1 day ahead and refrigerated. The dough can also be rolled and filled in advance, then stored in the refrigerator between sheets of parchment. Cook the gözleme just before serving for the best texture.

Serving ideas

Serve the gözleme hot, sliced into triangles, with a side of hot Turkish black tea. The tea's slight bitterness balances the richness of the buttery crust and creamy filling.

For a more substantial meal, serve with a simple salad of cucumbers, tomatoes, and olives.

Gözleme is best enjoyed immediately after cooking, when the crust is at its crispiest. If serving a crowd, keep them warm in a low oven and brush with a little extra melted butter just before serving.

The contrast of the crackling crust and soft, cheesy filling is the highlight of this dish.

Frequently asked questions

Can this recipe be made gluten-free?
Yes, use a gluten-free pizza dough or flatbread dough. Ensure all other ingredients are gluten-free, and check the kaşar cheese label for any gluten additives. The cooking method remains the same.
What can be used instead of kaşar cheese?
Mozzarella or provolone are the closest substitutes, offering a similar melt and mild flavor. For a sharper taste, try a young cheddar or Monterey Jack. The filling will still be creamy and delicious.
Why does the dough sometimes tear when filling?
Tearing usually happens if the dough is too cold or rolled too thin. Let the dough come to room temperature before rolling, and avoid overfilling. If a tear occurs, patch it with a small piece of dough and press to seal.
Can the gözleme be cooked on a grill?
Yes, a grill can work. Heat it to medium-high and cook the gözleme directly on the grates for 2-3 minutes per side. Use a clean, oiled grate to prevent sticking, and be careful with the dough.
How should leftover gözleme be reheated?
Reheat in a dry skillet over medium heat for 2-3 minutes per side until hot and crisp. Avoid microwaving, as it will make the crust soft. If frozen, reheat directly from frozen, adding a couple of extra minutes.

Golden blistered Turkish gözleme sliced into triangles, showing creamy potato and melted cheese filling.

Ingredients

  • 4 medium russet potatoes, boiled
  • 3 tbsp unsalted butter, softened
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • 1 cup shredded kaşar cheese
  • 1 lb store-bought pizza dough or flatbread dough, at room temperature
  • 1/4 cup unsalted butter, melted

Instructions

  1. Place the boiled potatoes in a large bowl. Add the softened butter, salt, black pepper, red pepper flakes, and chopped parsley. Mash until fluffy and well combined, then fold in the shredded kaşar cheese until evenly distributed.
  2. Divide the dough into 4 equal pieces. On a lightly floured surface, roll each piece into a thin circle or oval, about 1/8 inch thick. Keep the remaining dough covered while working.
  3. Place a quarter of the potato-cheese filling on one half of each rolled dough circle, leaving a 1-inch border. Fold the other half over the filling and press the edges firmly to seal, using your fingers or a fork.
  4. Place a dry cast iron skillet or griddle over medium-high heat. Let it heat for 2-3 minutes until a drop of water sizzles and evaporates immediately.
  5. Carefully place one gözleme onto the hot dry pan. Cook for 2-3 minutes until the bottom is golden brown and blistered. The dough will bubble and char in spots.
  6. Flip the gözleme using a spatula. Cook for another 2-3 minutes until the second side is golden and blistered. Press gently with the spatula to ensure even browning.
  7. Remove the gözleme from the pan and immediately brush liberally with melted butter on both sides. The butter will sizzle and soak into the crispy crust.
  8. Cook and butter the remaining gözleme one at a time, keeping the cooked ones warm in a low oven (200°F) while finishing the rest.
  9. Transfer the warm gözleme to a cutting board. Slice into triangles or wedges and serve immediately with hot Turkish black tea.
