Before you start
Before starting, boil the potatoes until fork-tender, then drain and let them cool slightly. Make sure the dough is at room temperature for easy rolling. Set out the softened butter, salt, pepper, red pepper flakes, chopped parsley, and shredded kaşar cheese.
Have a dry cast iron skillet or griddle ready, along with a pastry brush and melted butter for brushing. Prepare a clean work surface with a little flour for rolling.
Ingredients at a glance (9)
- 4 medium russet potatoes, boiled
- 3 tbsp unsalted butter, softened
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes
- 1/4 cup fresh parsley, chopped
- 1 cup shredded kaşar cheese
- 1 lb store-bought pizza dough or flatbread dough, at room temperature
- 1/4 cup unsalted butter, melted
Instructions
Prepare the Filling and Dough
- Boil and Mash the PotatoesPlace the boiled potatoes in a large bowl. Add the softened butter, salt, black pepper, red pepper flakes, and chopped parsley. Mash until fluffy and well combined, then fold in the shredded kaşar cheese until evenly distributed.Look for The filling is creamy with visible flecks of parsley and melted cheese strands.Tip Make sure the potatoes are still warm when mashing so the butter and cheese melt into the filling.
- Divide and Roll the DoughDivide the dough into 4 equal pieces. On a lightly floured surface, roll each piece into a thin circle or oval, about 1/8 inch thick. Keep the remaining dough covered while working.Look for The dough is thin enough to see through slightly but still holds together.Tip Rolling the dough thinly ensures a crispy crust after cooking.
The potatoes are mashed until fluffy with butter, salt, pepper, red pepper flakes, and parsley, then mixed with shredded kaşar cheese.
The dough is divided and rolled into thin circles. The filling is thick and creamy, and the dough is pliable and thin enough to see through slightly.
Cook on the Hot Dry Pan
- Fill and Seal the GözlemePlace a quarter of the potato-cheese filling on one half of each rolled dough circle, leaving a 1-inch border. Fold the other half over the filling and press the edges firmly to seal, using your fingers or a fork.Look for The edges are sealed and the filling is evenly distributed without bursting.Tip Press out any air pockets before sealing to prevent the gözleme from puffing unevenly.
- Heat the PanPlace a dry cast iron skillet or griddle over medium-high heat. Let it heat for 2-3 minutes until a drop of water sizzles and evaporates immediately.Look for The pan is hot enough to create immediate sizzling.Tip No oil is needed; the dough will crisp directly on the dry pan.
- Cook the First SideCarefully place one gözleme onto the hot dry pan. Cook for 2-3 minutes until the bottom is golden brown and blistered. The dough will bubble and char in spots.Look for The bottom is deep golden with dark blisters.Tip Do not move the gözleme while cooking the first side; let it develop a crust.
- Flip and Cook the Second SideFlip the gözleme using a spatula. Cook for another 2-3 minutes until the second side is golden and blistered. Press gently with the spatula to ensure even browning.Look for Both sides are golden brown with crispy blisters.Tip If the pan gets too hot, reduce the heat to medium to avoid burning.
- Brush with Melted ButterRemove the gözleme from the pan and immediately brush liberally with melted butter on both sides. The butter will sizzle and soak into the crispy crust.Look for The crust glistens with butter and smells rich and toasty.Tip Brushing while hot ensures the butter absorbs into the crust.
Each gözleme is cooked on a dry hot pan until the bottom is golden and blistered, then flipped and cooked until the second side is equally browned. The dough bubbles and chars in spots, releasing a toasty aroma. The crust is crisp and the cheese is melted and stretchy.
Butter and Serve
- Repeat with Remaining DoughCook and butter the remaining gözleme one at a time, keeping the cooked ones warm in a low oven (200°F) while finishing the rest.Look for All gözleme are cooked and kept warm.Tip Stacking them with parchment between layers prevents sticking.
- Slice and ServeTransfer the warm gözleme to a cutting board. Slice into triangles or wedges and serve immediately with hot Turkish black tea.Look for The crust crackles as you slice through it.Tip Serve right away for the crispiest texture.
The cooked gözleme is brushed with melted butter on both sides, giving it a glossy sheen. It is sliced into triangles and served hot with Turkish tea. The crust crackles audibly when cut, and the filling is creamy and well-seasoned.
Common mistakes
A common mistake is rolling the dough too thick, which results in a doughy, undercooked center. Another is using too much filling, causing the gözleme to burst open during cooking.
Overcrowding the pan or flipping too early can prevent proper browning. Also, avoid using oil in the pan; the dry heat is essential for the blistered crust. Finally, don't skip brushing with butter—it adds flavor and helps the crust stay crisp.
How to tell it’s done
The gözleme is done when both sides are deep golden brown with blistered spots and the crust is crisp to the touch. The filling should be hot and the cheese fully melted.
If you insert a knife into the center, it should come out hot. The crust should crackle slightly when pressed. Serve immediately for the best texture.
