Tips for success
For the crispiest results, use coarse cornmeal and make sure the anchovies are very dry before dredging. Shake off any excess cornmeal, as a thick, clumpy coating can become gummy.
Fry in a hot pan with enough oil to coat the bottom generously, and resist the urge to move the fish until the crust is set. The flip is the most dramatic step, but a gentle hand and a flat lid make it foolproof.
Serve Hamsi Tava immediately after cooking, while the crust is still shatteringly crisp. The dish is traditionally eaten with lemon and perhaps a simple salad of arugula and red onion.
If you have leftovers, reheat them in a hot oven or toaster oven to restore the crunch, rather than microwaving, which will make the crust soggy.
Variations
- Herbed Cornmeal: Add 1 teaspoon of dried oregano or thyme to the cornmeal mixture for an herby note. The herbs toast along with the cornmeal, adding depth to the crust.
- Spicy Hamsi: Mix 1/2 teaspoon of red pepper flakes or a pinch of cayenne into the cornmeal for a subtle heat. Serve with a dollop of yogurt sauce for cooling contrast.
- Sardine Substitute: Use fresh sardines instead of anchovies. They are larger, so adjust cooking time slightly and serve as a hearty main course.
- Gluten-Free Option: Use gluten-free cornmeal (ensure it's certified gluten-free) and check that all other ingredients are gluten-free. This version is naturally gluten-free and just as crispy.
Storage and make-ahead
- Fridge
- Store leftover hamsi tava in an airtight container in the refrigerator for up to 2 days. Place paper towels between layers to absorb moisture.
- Freezer
- Freezing is not recommended, as the crust will become soggy upon thawing.
- Reheat
- To reheat, place the fish on a baking sheet and warm in a 375°F (190°C) oven for 5-7 minutes until crisp.
Leftover Hamsi Tava can be stored in the refrigerator for up to 2 days. Place the cooled fish in an airtight container, separated by paper towels to absorb excess moisture. Reheat in a 375°F (190°C) oven for 5-7 minutes to crisp the crust.
The anchovies can be cleaned and butterflied up to a day ahead; keep them refrigerated.
The cornmeal coating can be mixed in advance, but coat the fish just before frying to prevent the cornmeal from becoming soggy. The entire dish is best cooked fresh, but the prep can be done ahead.
Serving ideas
Serve Hamsi Tava as a main course with a side of lemony greens or a simple tomato and onion salad. The crispy fish pairs beautifully with a cold glass of rakı or a crisp white wine.
For a casual meal, place the skillet in the center of the table and let everyone tear off pieces of the golden wheel.
This dish is also wonderful as an appetizer or meze, served in smaller portions with extra lemon wedges. The contrast of the crunchy cornmeal crust and the tender, briny fish is irresistible. Encourage guests to eat with their hands—the crunch is part of the experience.

Crispy Turkish Hamsi Tava: Pan-Fried Black Sea Anchovies

Ingredients
- 1 1/4 lb fresh anchovies, cleaned and butterflied
- 1 cup coarse yellow cornmeal
- 1 tsp sea salt
- 3 tbsp neutral oil (such as sunflower or canola)
- 2 tbsp butter
- 1 lemon, cut into wedges
Instructions
- Pat the cleaned, butterflied anchovies dry with paper towels. In a large bowl, combine the cornmeal and sea salt. Add the anchovies and toss gently until each piece is evenly coated with the cornmeal mixture.
- Heat the oil in a large skillet over medium-high heat until shimmering. Arrange the coated anchovies in a snug radial pinwheel pattern, tails facing inward, to form a solid disk.
- Cook the anchovies over medium-high heat for about 4 minutes, without moving them, until the bottom is deep golden and crackling crisp.
- Place a flat lid or plate over the skillet. Carefully invert the skillet in one smooth motion, transferring the anchovy cake onto the lid. Slide the cake back into the skillet, cooked side up.
- Add the butter to the skillet around the edges. Cook for 3 minutes more until the second side is golden and crisp, and the fish reaches an internal temperature of 145°F (63°C).
- Slide the crispy anchovy cake onto a serving plate. Squeeze fresh lemon juice over the top just before serving. Tear into the crackling crust and enjoy warm.
