Tips for success
For the best char, make sure the charcoal is at its peak heat—covered with gray ash and glowing red. If using a gas grill, preheat on high for at least 10 minutes.
The key to juicy kebabs is the tail fat; do not skip it. If you cannot find lamb tail fat, ask your butcher for beef suet or extra lamb fat.
When rolling the wraps, fold the sides in first and then roll tightly from the bottom, tucking the filling as you go.
Toasting the wraps on the grill over medium heat gives them a crispy texture without burning. If you prefer a softer wrap, skip the final toasting and serve immediately.
Variations
- Spicy Adana: Add 1 teaspoon of red pepper flakes or a minced fresh chili to the meat mixture for extra heat. Increase the paprika to 1 tablespoon and use hot paprika for a deeper kick.
- Chicken Adana Wrap: Substitute the lamb and beef with ground chicken or turkey. Add 1 tablespoon of olive oil to keep the meat moist, and reduce the tail fat to 2 tablespoons. Grill until the chicken reaches 165°F (74°C).
- Vegetarian Wrap: Replace the meat with a mixture of cooked lentils, mushrooms, and walnuts, seasoned with the same spices. Form into patties or use a skewer to grill. Omit the tail fat and adjust seasoning to taste.
- Herb-Infused: Add 2 tablespoons of chopped fresh mint and 1 tablespoon of chopped fresh oregano to the meat mixture. This adds a bright, aromatic note that pairs well with the sumac onions.

Store leftover wraps in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a hot grill or in a skillet over medium heat for 2-3 minutes per side, until heated through and crisp. Avoid microwaving, as it makes the bread soggy.
The kebab mixture can be prepared up to 24 hours in advance and kept refrigerated. Shape the mixture onto skewers and cover with plastic wrap.
The sumac onions and roasted vegetables can also be made a day ahead. Assemble the wraps just before grilling to keep the bread from becoming soggy.
Serving ideas
Serve the Adana kebab wrap immediately after toasting, while the bread is still crisp and the meat is warm and juicy.
Slice each wrap in half diagonally to show off the colorful filling. A side of pickled vegetables or a simple tomato-cucumber salad would complement the smoky flavors.
For a complete meal, serve with a side of Turkish-style rice pilaf or grilled vegetables. Extra sumac onions on the side add a bright, tangy contrast. A squeeze of lemon over the wrap before eating enhances the flavors. This dish is best enjoyed fresh off the grill.

Crispy Turkish Adana Kebab Wrap with Charred Peppers

Ingredients
- 500 g (about 1 lb) minced lamb and beef
- 1/2 cup minced red bell pepper
- 1/4 cup finely chopped lamb tail fat
- 3 cloves garlic, minced
- 2 tsp paprika
- 1 1/2 tsp sea salt
- 4 large lavash flatbreads
- 1 cup sliced red onions tossed with sumac
- 2 roasted green peppers, sliced
- 2 roasted tomatoes, sliced
- 1/2 cup fresh parsley leaves
Instructions
- In a large bowl, combine the minced lamb and beef, minced red bell pepper, chopped tail fat, garlic, paprika, and sea salt. Knead the mixture with your hands for about 5 minutes until it becomes tacky and well combined. Cover and refrigerate while you prepare the grill.
- Divide the meat mixture into 4 equal portions. Press each portion onto a wide flat iron skewer, shaping it into a long, flat ribbon about 1 inch thick. Make sure the meat is firmly attached and evenly distributed.
- Light the charcoal and wait until it is covered with a fine gray ash and glowing red. Arrange the coals in a single layer for direct heat. Place the grill grate over the coals and let it heat for 5 minutes.
- Place the skewers on the hot grill. Cook for 4-5 minutes per side, turning once, until the meat is charred at the edges and cooked through to 160°F (71°C). Use tongs to turn the skewers carefully.
- While the kebabs are still on the grill, lay the lavash flatbreads directly over the skewers. Press gently so the bread absorbs the spiced meat juices. Warm for 30-60 seconds per side, until pliable and lightly toasted.
- Using a fork or tongs, slide the cooked kebab off the skewer onto a cutting board. Repeat with the remaining skewers. Let the meat rest for 3 minutes before assembling the wraps.
- Place a warm lavash on a work surface. Lay a portion of kebab meat in the center, then top with sumac onions, roasted green peppers, roasted tomatoes, and fresh parsley. Fold the sides over the filling and roll tightly into a cylinder.
- Place the assembled wraps on the grill over medium heat. Toast for 1-2 minutes per side, until the bread is golden and crispy. Press lightly with a spatula to ensure even crisping.
- Remove the wraps from the grill and let them cool for 1 minute. Slice each wrap in half diagonally and serve immediately, with extra sumac onions on the side if desired.
