Tips for success
Shred the cheese from a block for the smoothest melt; pre-shredded bags carry starch that resists flowing. Keep the butter warm between brushing and finishing so it stays brushable, and do not skip the post-oven brush, which is what makes the shells gleam and taste fully seasoned.
Rotate the sheet halfway through baking, since most ovens brown one side faster, and trust color over the clock for doneness.
For the dip, low heat and frequent stirring are the whole job; a lazy simmer keeps queso silky, while a boil splits it. Warm the chorizo through before it goes on top so it does not chill the surface.
If the table is far from the oven, warm the serving board or plates, because queso tightens fast on cold ceramic and a hot base buys several extra minutes of flow.
Variations
- Jalapeño heat: Stir finely diced pickled jalapeños into the cheese layer with the taco seasoning, and use a jalapeño queso for the dip to carry the heat all the way through.
- Pizza twists: Swap the taco seasoning for dried oregano and a pinch of chili flakes, use mozzarella alone, and serve the twists with warm marinara instead of queso.
- Cinnamon-sugar dessert: Skip the cheese entirely: butter the tortillas, cut and twist, bake, then roll the hot twists in cinnamon sugar and serve with chocolate sauce.
- Everything-bagel twists: Replace the taco seasoning with everything-bagel seasoning in the cheese layer and serve the twists with a creamy dip instead of queso.
Storage and make-ahead
- Fridge
- Twists in an airtight container for up to 3 days; queso covered separately for up to 4 days.
- Freezer
- Freeze baked twists in a freezer bag for up to 2 months; thaw on the counter before reheating.
- Reheat
- Bake twists at 350°F (175°C) for 5 minutes to re-crisp; rewarm queso over low heat with a splash of milk.
Let the twists cool no longer than 2 hours on the counter, then move them to an airtight container; they keep 3 days in the refrigerator. Store the queso separately in a covered container for up to 4 days. Keep the tomatoes and chorizo apart from the queso so the surface stays clean until serving time.
The twists are at their best fresh, but the prep can be split. Build the cheese sandwich and cut the strips up to a few hours ahead, then wrap the stack tightly and refrigerate it; twist just before baking so the strips do not dry out.
The garlic butter can be made a day ahead and rewarmed gently. The queso can be made ahead and reheated over low heat, loosened with a little milk if it has tightened overnight.
Serving ideas
Set the warm skillet of queso in the center of the table with the twists piled beside it on a board, and let people dunk as they go. The twists pair naturally with cold beer, limeade, or a sharp, fizzy soda, and the tomatoes and chorizo on top of the queso make the dip look dressed rather than plain.
For a larger spread, double the batch and bake on two sheets, swapping their oven positions halfway through. Add crudités or tortilla chips around the skillet for anyone who reaches the dip after the twists are gone.
If the queso thickens mid-party, stir in a splash of warm milk and set the skillet over a low flame or a tea light to keep it flowing.

Crispy Tortilla Cheese Twists with White Queso in 25 Minutes

Ingredients
- 2 tbsp unsalted butter, melted
- 1 tsp garlic, finely minced
- 1 tsp fresh parsley, finely chopped
- 2 flour tortillas, 8-inch
- 3/4 cup shredded mozzarella
- 3/4 cup shredded cheddar
- 1 tsp taco seasoning
- 2 cups white queso blanco, store-bought or made ahead, warmed
- 1/3 cup diced tomatoes, drained
- 1/3 cup cooked chorizo, crumbled
Instructions
- Melt the butter in a small bowl in the microwave or in a saucepan over low heat. Stir in the garlic and parsley, then let the mixture sit for a minute so the garlic perfumes the butter. Keep it warm; brushed-on butter spreads far more evenly than butter that has started to set.
- Lay the two flour tortillas flat on a cutting board and brush the top of each with the garlic butter, all the way to the edges. Reserve a little butter for the finished twists. A thin, complete coat matters more than a thick one; pooled butter makes the layers slide apart when cut.
- Scatter the mozzarella and cheddar over one tortilla in an even layer that reaches the edges, then sprinkle the taco seasoning over the cheese. Press the second tortilla, buttered side down, firmly on top so the layers bond. Firm pressure here is what keeps the sandwich from separating later.
- With a sharp knife or a pizza cutter, slice the stacked tortillas into strips about 1 inch wide, wiping the blade between cuts so the cheese does not drag. Make one confident pass per strip; a sawing motion shreds the tortilla edges and opens gaps where cheese can escape while baking.
- Pick up each strip, hold both ends, and twist it two or three full turns into a spiral, then lay it on a parchment-lined baking sheet. Keep the twists snug but not compressed, and leave a finger-width of space between them so hot air circulates and the edges blister instead of steaming.
- Bake at 400°F (200°C) for about 9 minutes, rotating the sheet halfway through so the twists color evenly. They are ready when deeply golden, blistered in spots, and firm to the touch. Brush the hot twists with the reserved garlic butter the moment they leave the oven so it soaks in glossy.
- While the twists bake, set the queso blanco in a small cast-iron skillet or saucepan over low heat and stir often until it loosens and bubbles gently at the edges, 5 to 6 minutes. Keep the heat low; queso that boils hard can split and turn grainy, and a slow warm-up keeps it smooth and dippable.
- Slide the warm queso off the heat and scatter the diced tomatoes and crumbled chorizo over the surface, leaving the flecks distinct on top rather than stirred in. Set the skillet in the middle of the table with the twists alongside, still warm from the oven, and serve while the queso flows.
