Tips for success
For the crispiest rice, make sure the rice is very cold and dry before frying. Excess moisture will cause splattering and prevent a crisp crust. Pat the rice blocks with a paper towel if needed. Also, use a heavy-bottomed skillet to maintain a steady oil temperature.
When mixing the tuna, use a light hand. Over-stirring can break down the fish and make the topping mushy.
Also, taste the mixture before serving – add a pinch of salt or a few drops of soy sauce if needed. The jalapeño should be sliced thinly so it doesn't overwhelm the bite.
Variations
- Spicy Salmon Bites: Replace the ahi tuna with sushi-grade salmon, diced. Use the same spicy mayo mixture. The salmon's richness pairs beautifully with the crispy rice and jalapeño.
- Avocado Topping: Add diced avocado to the spicy tuna mixture for extra creaminess. Fold gently to avoid mashing the avocado. This adds a fresh, buttery element.
- Tempura Crunch: For extra crunch, coat the rice blocks in panko breadcrumbs before frying. This creates an even more shattering crust. Adjust cooking time to ensure the panko is golden brown.
- Mango Salsa Version: Top the crispy rice with a fresh mango salsa (diced mango, red onion, cilantro, lime juice) instead of the spicy tuna for a vegetarian option. Drizzle with a bit of sriracha aioli.
Storage and make-ahead
- Fridge
- Store leftover rice and tuna separately in airtight containers in the refrigerator for up to 1 day. Reheat rice in a hot oven to restore crispness.
- Freezer
- Freezing is not recommended as the rice texture will suffer and the raw tuna is best consumed fresh.
- Reheat
- Reheat leftover rice blocks in a 400°F (200°C) oven for 3-5 minutes until hot and crispy. Do not microwave, as it will make them soggy.
Store leftover crispy rice and tuna separately in airtight containers in the refrigerator for up to 1 day.
The rice will lose its crispness, but you can reheat it in a 400°F (200°C) oven for a few minutes to revive it. The tuna should be consumed within 24 hours. Do not freeze the tuna.
You can press the rice blocks and refrigerate them up to a day ahead. The spicy tuna mixture can also be prepared a few hours in advance and kept chilled. Fry the rice just before serving to maintain maximum crispness. Assemble the bites right before serving.
Serving ideas
Serve these crispy rice spicy tuna bites as an appetizer at parties, game day gatherings, or as a fun starter for a Japanese-inspired dinner.
Arrange them on a platter and garnish with extra jalapeño slices or a sprinkle of sesame seeds if desired. They're best enjoyed immediately while the rice is still crunchy.
For a complete meal, pair them with a light salad or miso soup. The bites are also great as a party finger food – just make sure to provide small plates and napkins.
If you're serving a crowd, you can double the recipe and fry in batches. The contrast of textures and flavors makes them a memorable dish.

Crispy Rice Spicy Tuna Bites: Crunchy Appetizer

Ingredients
- 2 cups cooked sushi rice, chilled
- 200 g sushi-grade ahi tuna, diced
- 30 ml spicy mayo
- 10 ml soy sauce
- 1 tsp sesame oil
- 1/2 cup neutral oil (such as canola or vegetable)
- 1 jalapeño, thinly sliced
- Sriracha aioli, for drizzling, to taste
Instructions
- Press the chilled sushi rice firmly into 2-inch square blocks, about 1 inch thick. Use your hands or a small mold to shape them. In a mixing bowl, combine the diced ahi tuna with spicy mayo, soy sauce, and sesame oil. Toss gently until the tuna is evenly coated.
- Place the pressed rice blocks in the refrigerator for at least 10 minutes to firm them up. This step helps them hold together during frying.
- In a large skillet, heat the neutral oil over medium-high heat until it reaches 375°F (190°C). Use a kitchen thermometer to check the temperature.
- Carefully place the chilled rice blocks into the hot oil. Shallow-fry for 3 minutes per side until golden brown and crispy. Use tongs to flip them gently. Cook until the internal temperature of the fish reaches 145°F (63°C) if serving warm, but since the tuna is served raw, ensure the rice is fully cooked and hot.
- Remove the fried rice blocks from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly for 1-2 minutes.
- Spoon a generous amount of the spicy tuna mixture onto each crispy rice block. Spread it evenly to cover the top.
- Place a thin slice of jalapeño on top of each tuna-topped rice cube. Drizzle with sriracha aioli for a final touch. Serve immediately while the rice is still crispy.
