Tips for success
For an extra-crispy exterior, press the wraps down firmly with a burger press while cooking. This creates more surface contact with the hot skillet, leading to a deeper golden crust.
If you don't have a burger press, use a heavy spatula and press down gently. Also, don't overcrowd the skillet—cook the wraps in batches if necessary to ensure they crisp up evenly.
Make the burger sauce ahead of time and store it in the refrigerator for up to a week. The flavors meld together and even improve after a few hours.
You can also double the beef recipe and freeze half for a quick meal later. When reheating, use a skillet or toaster oven to bring back the crispiness—microwaving will make the tortilla soggy.
Variations
- Spicy Chipotle Wraps: Add 1-2 tablespoons chopped chipotle peppers in adobo to the burger sauce for a smoky, spicy kick. Use pepper jack cheese instead of cheddar and top with fresh jalapeño slices before folding.
- Bacon Cheeseburger Wraps: Cook 4 slices of bacon until crisp, then crumble and mix into the beef. Use cheddar or American cheese and add a drizzle of ranch dressing to the burger sauce for extra creaminess.
- BBQ Burger Wraps: Swap the burger sauce for a mix of barbecue sauce and mayonnaise. Add caramelized onions and smoked gouda cheese for a sweet, smoky flavor. Top with crispy fried onions before serving.
- Mushroom Swiss Wraps: Sauté 1 cup sliced mushrooms with the beef until golden. Use Swiss cheese instead of cheddar and add a spoonful of Dijon mustard to the burger sauce. Finish with a sprinkle of fresh thyme.

Serving ideas
Serve these wraps hot, straight from the skillet, with extra burger sauce on the side for dipping. They're perfect for a casual dinner, game-day spread, or lunchbox treat. Pair them with a simple green salad, sweet potato fries, or a bowl of tomato soup for a complete meal.
For a fun presentation, slice the wraps in half on a diagonal and arrange them on a platter with the cut sides facing up to show off the gooey cheese and juicy beef.
Garnish with extra pickle slices or a sprinkle of sesame seeds if desired. These wraps are best enjoyed immediately, while the tortilla is still crispy.

Crispy Smash Cheeseburger Wraps Ready in Minutes

Ingredients
- 1 lb 80/20 ground beef
- 1/2 cup finely diced yellow onion
- 2 cloves minced garlic
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt to taste
- Black pepper to taste
- 1/2 cup mayonnaise
- 2 tbsp yellow mustard
- 2 tbsp sweet pickle relish
- 1 tsp white vinegar
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 4 large flour tortillas (10-inch)
- 8 slices sharp cheddar cheese
- 1/2 cup sliced dill pickles (crinkle-cut)
- 2 tbsp butter, for griddling
Instructions
- In a small bowl, whisk together the mayonnaise, yellow mustard, sweet pickle relish, white vinegar, garlic powder, and paprika until smooth and creamy. Set aside.
- Heat a large cast-iron skillet over medium-high heat. Add the ground beef and break it apart with a spatula. Add the diced onion, minced garlic, tomato paste, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook, stirring occasionally, until the beef is browned and the onion is soft, about 6 to 8 minutes.
- Lay the tortillas on a clean work surface. Spread a generous layer of burger sauce over each tortilla, leaving a 1-inch border. Divide the cooked beef among the tortillas, placing it in the center. Top each with two slices of cheddar cheese and a few pickle slices.
- Fold the bottom edge of each tortilla over the filling, then fold in the sides, and roll tightly into a sealed square pocket. Press gently to secure the seam.
- Melt the butter in the same skillet over medium heat. Place the wraps seam-side down in the skillet. Press down with a spatula or burger press to flatten slightly. Cook until golden brown and crispy, about 2 to 3 minutes per side, flipping carefully to brown all sides.
- Transfer the wraps to a cutting board and let them rest for 2 minutes. Slice each wrap in half on the diagonal to reveal the juicy filling.
- Serve the wraps immediately with the remaining burger sauce on the side for dipping.
