Tips for success
For the best texture, chop the pistachios by hand rather than using a food processor, which can easily turn them into a powder. The coarse pieces provide a satisfying crunch in every bite.
When toasting the kataifi, keep a close eye on it—it can go from golden to burnt in seconds. Stir constantly and remove from the heat as soon as it turns golden brown.
To make the chocolate shavings easier to grate, chill the chocolate block in the freezer for 10 minutes before grating. This prevents it from melting and sticking to the grater. If you want a smoother top, you can melt a small amount of chocolate and drizzle it over the top layer before chilling, but the grated texture is part of the charm.
Variations
- Dark Chocolate Version: Use dark chocolate (70% cacao) instead of milk chocolate for a less sweet, more intense flavor. The bitterness of the dark chocolate pairs beautifully with the sweet pistachio filling. Adjust the amount of pistachio paste to taste.
- Add a Layer of Tahini: For a Middle Eastern twist, spread a thin layer of tahini over the chocolate base before adding the pistachio filling. The sesame flavor adds depth and richness. Use about 1/4 cup of tahini.
- Spiced Pistachio Filling: Add 1/2 teaspoon of ground cardamom or cinnamon to the pistachio filling for a warm, aromatic note. This complements the nuts and chocolate beautifully. Mix the spice with the pistachio paste before combining.
- White Chocolate Shell: Replace the milk chocolate with white chocolate for a sweeter, creamier bar. The white chocolate also makes the green filling pop visually. Use high-quality white chocolate and follow the same method.
Storage and make-ahead
- Fridge
- Store the chocolate bar in an airtight container in the refrigerator for up to 1 week.
- Freezer
- Wrap the bar tightly in plastic wrap and then in foil. Freeze for up to 2 months. Thaw in the refrigerator overnight before serving.
- Reheat
- No reheating needed—serve chilled or at room temperature.
Store the chocolate bar in an airtight container in the refrigerator for up to 1 week. The chocolate may develop a slight bloom (white streaks) if stored for longer, but it will still taste fine.
For the best texture, let the bar sit at room temperature for 5 minutes before serving, so the chocolate softens slightly and the filling becomes creamy.
The filling can be made up to 2 days ahead and stored in an airtight container in the refrigerator. The assembled bar can be made up to 3 days ahead and kept chilled.
If making ahead, wait to cut or break the bar until just before serving to keep the edges clean. The chocolate base and top can also be grated ahead and stored in a sealed bag in the refrigerator for up to 2 days.
Serving ideas
Serve the chocolate bar at room temperature for the best flavor and texture. Break it into rustic shards and arrange on a platter.
It pairs beautifully with strong coffee or espresso, which balances the sweetness of the milk chocolate. For a special occasion, dust with a little powdered sugar or edible gold leaf, but the bar is stunning on its own.
This bar is also wonderful as a gift. Wrap it in parchment paper and tie with twine, or place the shards in a clear cellophane bag. The vibrant green filling makes it a showstopper on any dessert table. If serving to a crowd, cut the bar into small squares or rectangles—they're rich, so a little goes a long way.

Crispy Pistachio Dubai Chocolate Bar with Toasted Kataifi

Ingredients
- 1 1/2 cups whole green pistachios, shelled
- 1 cup kataifi pastry (shredded phyllo), thawed
- 1/2 cup pistachio paste (or pistachio butter)
- 12 oz Belgian milk chocolate, finely chopped
Instructions
- Place the whole green pistachios on a cutting board. Using a sharp chef's knife, chop them rhythmically across the nuts until you have coarse pieces. Aim for a mix of larger chunks and smaller bits for texture. Set aside.
- Heat a dry skillet over medium heat. Add the kataifi pastry and toast, stirring constantly, until golden brown and crispy, about 3-5 minutes. Transfer to a bowl and let cool completely.
- In a medium bowl, combine the chopped pistachios, toasted kataifi, and pistachio paste. Stir with a spatula until the mixture is well combined and holds together slightly. Set aside.
- Using a box grater, grate the solid block of Belgian milk chocolate into a fresh pile of chocolate shavings. Work over a large plate or bowl to catch all the shavings.
- Line an 8-inch square baking pan with parchment paper, leaving overhang on two sides. Press the grated chocolate into the bottom of the pan in an even layer, using the back of a spoon to compact it.
- Spoon the pistachio-kataifi mixture over the grated chocolate base. Spread it evenly with a spatula, pressing gently to create a smooth, thick layer.
- Grate the remaining chocolate (or use extra chocolate shavings) and sprinkle it over the filling, pressing gently to form a top layer. Smooth the surface with a spatula.
- Place the pan in the refrigerator and chill for at least 1 hour, or until the chocolate is firm and set.
- Lift the bar out of the pan using the parchment overhang. Place on a cutting board and break into pieces with your hands or cut with a sharp knife. Serve immediately.
