Tips for success
To add more brightness to the finished dish, consider garnishing with freshly chopped herbs like parsley or chives just before serving. These fresh elements provide a nice color contrast and a clean, herbaceous note that balances the richness of the roasted chicken and the savory depth of the rice.
Adding a squeeze of fresh lemon juice over the finished chicken right before serving can also help cut through the richness of the rendered fat.
If you prefer a more intense flavor in the rice, you can sauté a small amount of minced onion or garlic in a pan before adding it to the baking dish. While not strictly necessary for this method, these aromatics can build a stronger foundation for the rice. Ensure they are softened slightly before combining with the rice and broth to ensure they cook through evenly in the oven alongside the chicken.
Variations
- Herb-Infused Rice: Add a teaspoon of dried thyme or rosemary to the broth mixture before baking. These woody herbs pair perfectly with the chicken and add an earthy aroma to the rice.
- Spicy Kick: Incorporate a half teaspoon of red pepper flakes into the poultry seasoning rub. This variation adds a subtle heat that cuts through the savory richness of the chicken skin.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 1 month; thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) until warmed through, or use the microwave in short intervals until heated to 165°F (74°C).
Allow the leftovers to cool completely at room temperature, but do not leave them out for more than two hours. Once cooled, transfer the chicken and rice to an airtight container.
Keep the chicken and rice together to maintain moisture, or separate them if you prefer to reheat them using different methods. Label the container with the date and store it in the refrigerator for up to three days for the best quality and safety.
You can prepare the dry rice and seasoning mix in the baking pan ahead of time, but wait to add the broth and chicken until you are ready to bake. This prevents the rice from absorbing too much liquid and becoming soft before it even hits the oven. The chicken can be seasoned and kept in the refrigerator, covered, for up to two hours before you are ready to assemble and cook the final meal.
Serving ideas
Serve this dish directly from the baking pan to maintain the heat and presentation. Each serving should include a piece of crispy-skinned chicken and a generous portion of the seasoned rice.
Because the rice has absorbed the chicken juices, it serves as a complete side dish, but it pairs wonderfully with a side of steamed green vegetables or a crisp garden salad to add freshness and crunch to the plate.
When plating, ensure you scoop from the bottom of the pan to get the most flavorful rice, as the seasoning and chicken drippings tend to concentrate there.
If you have extra pan juices, you can drizzle a small amount over the chicken and rice just before serving to add even more moisture and flavor. This simple, rustic presentation is perfect for family dinners where the focus is on hearty, comforting ingredients.
