Before you start

Before beginning, ensure the oven rack is positioned in the center to allow for even heat circulation. Gather all ingredients and measure the rice and broth accurately, as the ratio of liquid to grain is critical for proper steaming.

Pat the chicken thighs thoroughly dry with clean paper towels, as excess moisture on the surface can prevent the skin from crisping effectively. Prepare the baking pan by ensuring it is clean and dry, and have your meat thermometer ready for checking the final internal temperature of the chicken.

Ingredients at a glance (4)
  • 4 pieces chicken thighs, bone-in and skin-on
  • 1 1/2 cups long grain white rice, rinsed
  • 3 cups chicken broth
  • 1 tbsp poultry seasoning

Instructions

Base Preparation

  1. Prepare the Oven and Base
Preheat the oven to 400°F (200°C). In a 9x13 inch baking pan, combine the rinsed rice, chicken broth, and half of the poultry seasoning. Stir until the seasoning is evenly distributed throughout the liquid.
Look for The rice should be evenly spread across the bottom of the pan.
Tip Rinsing the rice removes excess starch and ensures it stays fluffy.

The rice mixture should look uniform, with the seasoning evenly distributed throughout the broth in the baking pan. The surface should be flat and the rice evenly spread to ensure it cooks consistently across the entire pan. Check that the broth covers the rice completely before adding the chicken, as this is essential for the steaming process that will occur during the baking phase.

Seasoning and Assembly

  1. Season and Arrange Chicken
Pat the chicken thighs dry with paper towels. Rub the chicken skin with the remaining poultry seasoning. Place the chicken thighs skin-side up directly on top of the rice mixture in the baking pan.
Look for The chicken skin should be facing upward to ensure it gets crispy during the roasting process.
Tip Dry skin is the secret to getting a golden, crispy finish in the oven.

The chicken thighs should be arranged in a single layer with the skin side facing upward. Each piece should be well-coated in seasoning. Check that the chicken is resting securely on top of the rice bed, allowing heat to flow underneath the meat. There should be no overlapping of chicken pieces, which would prevent the skin from crisping correctly and could lead to uneven cooking times.

Baking and Finishing

  1. Bake and Serve
Bake in the preheated oven for 45 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the rice is tender. Remove from the oven and let rest for 5 minutes before serving to allow the juices to redistribute.
Look for The chicken skin should be deep golden brown and the rice should have absorbed most of the liquid.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer to ensure the chicken is cooked safely.

At the end of the baking phase, the kitchen will smell savory and aromatic. The chicken skin should appear dark golden brown and slightly rendered. When you lift a piece of chicken with a spoon, the rice beneath should be steaming and tender.

Check the internal temperature of the chicken one last time to ensure it has reached the safe threshold before removing the pan from the oven to rest.

Common mistakes

A common mistake is using too much liquid, which results in mushy rice rather than individual, fluffy grains. Another error is overcrowding the pan, which prevents proper heat flow and can lead to uneven cooking.

Avoid the temptation to stir the rice during the baking process, as this releases starch and alters the texture. Finally, failing to dry the chicken skin thoroughly before seasoning will result in soft, rubbery skin instead of the desired crispy texture that defines this classic dish.

How to tell it’s done

The chicken is done when the internal temperature reaches 165°F (74°C) when measured at the thickest part of the thigh, away from the bone. At this stage, the skin should be deeply golden and slightly crisp to the touch.

The rice should be tender, with no visible liquid remaining at the bottom of the pan. If the rice still seems slightly firm or there is excess liquid, return the pan to the oven for an additional five minutes.

  • Poultry: 165°F (74°C) in the thickest part
