Tips for success
For the crispiest coating, make sure the mozzarella sticks are completely frozen before frying. Even a slightly soft center can cause the cheese to push through the crust.
Also, press the breadcrumbs on firmly during the second coating to create a thick, sealed layer that won't crack in the oil.
Use a deep-fry thermometer to maintain the oil at a steady 375°F (190°C). If the temperature drops too low, the sticks will absorb oil and become greasy.
Fry in small batches, letting the oil return to temperature between batches. This ensures every stick comes out golden and crunchy, not soggy.
Variations
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes to the breadcrumb mixture for a subtle heat. The spice complements the rich cheese and tangy marinara without overpowering the Italian herbs.
- Herb-Infused Marinara: Stir a tablespoon of chopped fresh basil or oregano into the warm marinara just before serving. This adds a bright, fresh note that lifts the whole dish.
- Gluten-Free Option: Use gluten-free all-purpose flour and gluten-free breadcrumbs in place of the regular flour and breadcrumbs. Ensure the panko is also gluten-free. The coating will be slightly less crunchy but still delicious.
- Air Fryer Method: After breading and freezing, place the sticks in a single layer in the air fryer basket. Spray lightly with oil and cook at 400°F (200°C) for 6-8 minutes, turning halfway, until golden and crispy.

Store leftover mozzarella sticks in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 375°F (190°C) oven for 5-7 minutes, or until heated through and crispy. Avoid microwaving, as it will make the coating soggy.
The breaded mozzarella sticks can be prepared up to 24 hours ahead. After double-breading, place them on a parchment-lined tray and freeze until solid, then transfer to a zip-top bag. Fry straight from the freezer, adding 15-30 seconds to the cook time if needed.
Serving ideas
Serve the mozzarella sticks hot, right after frying, with warm San Marzano marinara for dipping.
The contrast of the crispy, golden crust and the molten, stretchy cheese is best enjoyed immediately. Arrange them on a platter with the marinara in a small bowl in the center for easy dipping.
For a party, keep the fried sticks warm on a baking sheet in a 200°F (95°C) oven while frying the remaining batches.
This keeps them crisp without overcooking the cheese. Garnish with a sprinkle of fresh parsley or grated Parmesan if desired, though the video does not include these.

Crispy Mozzarella Sticks with Warm San Marzano Marinara

Ingredients
- 8 thick low-moisture whole milk mozzarella string sticks
- 60 g all-purpose flour
- 2 large eggs, beaten with 1 tbsp milk
- 1 tbsp milk
- 100 g Italian seasoned breadcrumbs
- 40 g panko breadcrumbs
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- vegetable oil for frying, to taste
- 150 ml warm San Marzano marinara dip
Instructions
- Place the flour in a shallow bowl. In a second bowl, whisk the eggs with the milk until combined. In a third bowl, mix the Italian seasoned breadcrumbs, panko, garlic powder, and dried oregano. Arrange the bowls in a line: flour, egg, breadcrumbs.
- Working with one mozzarella stick at a time, dredge it completely in the flour, shaking off any excess. Dip it into the egg mixture, letting the excess drip off, then roll it in the breadcrumb mixture, pressing gently to adhere. Dip the stick back into the egg mixture, then again into the breadcrumbs, pressing firmly to create a thick, even coating.
- Place the double-breaded mozzarella sticks on a parchment-lined baking sheet in a single layer, leaving space between them. Freeze for at least 1 hour, or until completely solid. This step is essential to prevent the cheese from leaking during frying.
- Pour enough vegetable oil into a large skillet or Dutch oven to come about 1 inch up the sides. Heat over medium-high heat until the oil reaches 375°F (190°C) on a deep-fry thermometer.
- Carefully add the frozen mozzarella sticks to the hot oil in batches, without crowding. Fry for exactly 90 seconds, turning occasionally with tongs, until deep golden brown and buoyant. Transfer to a paper towel-lined plate to drain.
- While the sticks fry, gently warm the San Marzano marinara in a small saucepan over low heat, stirring occasionally, until heated through.
- Let the fried mozzarella sticks rest on the paper towels for 1 minute to drain any excess oil. If desired, sprinkle with a pinch of salt while still warm.
- Arrange the mozzarella sticks on a serving plate with the warm marinara on the side for dipping. Serve immediately while the cheese is hot and stretchy.
