There’s something irresistible about a golden, crunchy mozzarella stick that stretches into a long, cheesy ribbon when you pull it apart.

This recipe delivers exactly that, with a double-breaded coating seasoned with garlic and oregano, and a flash-fry that gives a shatteringly crisp exterior while keeping the cheese perfectly melted.

Served with warm San Marzano marinara for dipping, these sticks are a crowd-pleasing appetizer that comes together quickly once the sticks are frozen.

Why this recipe works

The double-breading technique is the key to a sturdy crust that seals the cheese completely. Coating the sticks in flour, then egg, then breadcrumbs, and repeating the egg and breadcrumb layers creates a thick, even shell that crisps up beautifully and prevents the mozzarella from leaking out during frying.

Freezing the breaded sticks solid before frying is essential. The frozen cheese acts as a barrier, giving the coating time to turn golden and crispy without the cheese melting too quickly and bursting through the crust. This step ensures every stick comes out perfectly intact with that irresistible cheese pull.

Notes and substitutions

Use thick, low-moisture whole milk mozzarella string sticks for the best texture and melting. Low-moisture cheese melts slowly and evenly, giving you that stretchy pull without becoming runny. If you can only find part-skim, it will still work, but the pull may be less dramatic.

The breadcrumb mixture combines Italian seasoned breadcrumbs with panko for extra crunch. The Italian breadcrumbs bring herbs and flavor, while the panko adds a light, airy crispness.

Garlic powder and dried oregano reinforce the Italian seasoning without overpowering the cheese. For the marinara, a good-quality San Marzano sauce makes a difference, but any favorite jarred marinara will do.

  • Italian seasoned breadcrumbs: Plain breadcrumbs plus 1/2 tsp Italian seasoning and 1/4 tsp salt
  • San Marzano marinara: Your favorite jarred marinara or tomato sauce
  • Whole milk mozzarella string sticks: Part-skim mozzarella string cheese (may pull less)

Equipment

  • Large skillet or Dutch oven
  • Deep-fry thermometer
  • Three shallow bowls
  • Baking sheet
  • Parchment paper
