Before you start

Before starting, set up a clean workspace with three shallow bowls for the breading station. Whisk the eggs with the milk until smooth. In a separate bowl, combine the breadcrumbs, panko, garlic powder, and oregano.

Line a baking sheet with parchment paper. Have the mozzarella sticks ready. The oil should be heated just before frying, so wait until the sticks are frozen.

Ingredients at a glance (10)
  • 8 thick low-moisture whole milk mozzarella string sticks
  • 60 g all-purpose flour
  • 2 large eggs, beaten with 1 tbsp milk
  • 1 tbsp milk
  • 100 g Italian seasoned breadcrumbs
  • 40 g panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • vegetable oil for frying, to taste
  • 150 ml warm San Marzano marinara dip

Instructions

Bread and Freeze

  1. Set Up Breading Station
Place the flour in a shallow bowl. In a second bowl, whisk the eggs with the milk until combined. In a third bowl, mix the Italian seasoned breadcrumbs, panko, garlic powder, and dried oregano. Arrange the bowls in a line: flour, egg, breadcrumbs.
Look for The breadcrumb mixture should be well blended and fragrant with herbs.
Tip Use one hand for wet steps and the other for dry to keep the coating from clumping.
  2. Double Coat the Sticks
Working with one mozzarella stick at a time, dredge it completely in the flour, shaking off any excess. Dip it into the egg mixture, letting the excess drip off, then roll it in the breadcrumb mixture, pressing gently to adhere. Dip the stick back into the egg mixture, then again into the breadcrumbs, pressing firmly to create a thick, even coating.
Look for Each stick should have a thick, even coating with no bare spots.
Tip Press the breadcrumbs on firmly so the coating adheres well and seals the cheese.
  3. Freeze the Coated Sticks
Place the double-breaded mozzarella sticks on a parchment-lined baking sheet in a single layer, leaving space between them. Freeze for at least 1 hour, or until completely solid. This step is essential to prevent the cheese from leaking during frying.
Look for The sticks should be firm to the touch and completely frozen through.
Tip Freeze them uncovered for the first 30 minutes, then cover if freezing longer than 2 hours.

After this phase, the mozzarella sticks are evenly coated in a thick layer of seasoned breadcrumbs. The coating should be dry and firmly adhered, with no bare spots.

The sticks are placed on a parchment-lined tray and frozen until solid, which will take at least 1 hour. They should be completely firm to the touch before moving on to frying.

Fry to Golden

  1. Heat the Oil
Pour enough vegetable oil into a large skillet or Dutch oven to come about 1 inch up the sides. Heat over medium-high heat until the oil reaches 375°F (190°C) on a deep-fry thermometer.
Look for The oil should shimmer and register 375°F (190°C) on the thermometer.
Tip If the oil is too hot, the coating will burn before the cheese melts; if too cool, the sticks will absorb oil.
  2. Flash Fry the Sticks
Carefully add the frozen mozzarella sticks to the hot oil in batches, without crowding. Fry for exactly 90 seconds, turning occasionally with tongs, until deep golden brown and buoyant. Transfer to a paper towel-lined plate to drain.
Look for The sticks should be evenly golden brown and float to the surface when done.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Fry in small batches to keep the oil temperature steady and ensure even cooking.
  3. Warm the Marinara
While the sticks fry, gently warm the San Marzano marinara in a small saucepan over low heat, stirring occasionally, until heated through.
Look for The marinara should be steaming and fragrant.
Tip Do not let the marinara boil; gentle warming keeps the flavor bright.

The sticks are fried in hot oil at 375°F (190°C) for exactly 90 seconds. They should turn a deep golden brown and float to the surface when done. The coating will be crisp and shatter when bitten. The cheese inside should be fully melted and stretchy, with no leakage. The oil should maintain its temperature throughout the batch.

Serve and Pull

  1. Drain and Season
Let the fried mozzarella sticks rest on the paper towels for 1 minute to drain any excess oil. If desired, sprinkle with a pinch of salt while still warm.
Look for The sticks should be crispy on the outside and the cheese should be melted and stretchy inside.
Tip Resting briefly helps the coating stay crisp and prevents the cheese from running out.
  2. Serve with Marinara
Arrange the mozzarella sticks on a serving plate with the warm marinara on the side for dipping. Serve immediately while the cheese is hot and stretchy.
Look for The cheese should pull into long ribbons when a stick is broken apart.
Tip Serve right away for the best cheese pull; the coating softens as it sits.

The fried sticks are drained on paper towels briefly, then served immediately with warm marinara. When a stick is pulled apart, the cheese should stretch into a long, gooey ribbon. The coating remains crisp, and the marinara adds a tangy, herbaceous contrast. Serve hot for the best texture and cheese pull.

Common mistakes

One common mistake is not freezing the sticks long enough, which causes the cheese to leak out during frying. Another is overcrowding the pan, which drops the oil temperature and leads to greasy, soggy sticks.

Using the wrong oil temperature is also a pitfall: too hot burns the coating, too cool makes the sticks absorb oil. Finally, skipping the double-breading or pressing the crumbs on too lightly can result in a thin crust that splits.

How to tell it’s done

The mozzarella sticks are done when they are deep golden brown and float to the surface of the oil, typically after about 90 seconds. The coating should feel crisp and sound crunchy when tapped.

To check the cheese, break one stick open: the cheese should be fully melted and stretchy, with no cold or hard spots. The internal temperature of the egg coating should reach 160°F (71°C) to ensure the egg is fully cooked.
