Tips for success

For the crispiest crust, bake the pides on a preheated baking sheet or a pizza stone. Place the baking sheet in the oven while it preheats, then carefully transfer the shaped pides onto the hot sheet.

The intense bottom heat will help create a shatteringly crisp base. If you don't have a stone, a heavy-duty baking sheet works well.

To get the most dramatic cheese pull, use a cheese that melts well, such as kaşar, mozzarella, or a blend. Grate the cheese yourself rather than buying pre-shredded, as pre-shredded cheese often contains anti-caking agents that can affect melting.

Also, serve the pides immediately after baking—the cheese will be at its stretchiest. If you need to reheat them, do so in a hot oven (400°F) for a few minutes to restore crispness.

Variations

  • Spicy Sausage Pide: Add cooked, crumbled spicy sausage (such as merguez or chorizo) along with the mushrooms. Sauté the sausage first to render fat and crisp it, then sprinkle over the cheese before baking. This adds a hearty, spicy kick.
  • Spinach and Feta Pide: Replace the mushrooms with a handful of fresh spinach leaves, and use crumbled feta instead of some of the kaşar. Wilt the spinach briefly in a hot pan to remove excess moisture. The salty feta pairs beautifully with garlic.
  • Tomato and Olive Pide: Add a layer of thinly sliced tomatoes and a scattering of Kalamata olives over the cheese. The acidity of the tomatoes cuts through the richness, and the olives add a briny depth. Use dried oregano for an extra herby note.
  • Caramelized Onion and Mushroom Pide: Slow-cook sliced onions in butter until deeply caramelized, then spread them over the garlic paste before adding the cheese and mushrooms. The sweetness of the onions complements the earthy mushrooms and adds a luxurious touch.

Storage and make-ahead

Fridge
Store leftovers in the refrigerator for up to 3 days in an airtight container.
Freezer
Freeze baked pides for up to 2 months. Wrap tightly in plastic wrap and foil. Reheat from frozen in a 350°F oven for 10–15 minutes.
Reheat
Reheat in a 350°F oven for 5–7 minutes, or until crisp and heated through. Avoid microwave.

Store leftover pides in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet and warm in a 350°F (175°C) oven for 5–7 minutes, or until heated through and the crust is crisp again. Avoid microwaving, as it will make the crust soggy.

The dough can be made up to 1 day ahead. After the first rise, punch it down, cover, and refrigerate. Bring to room temperature before shaping and baking.

The garlic butter paste can also be made ahead and stored in the refrigerator for up to 3 days. Let it come to room temperature before spreading on the dough.

Serving ideas

Serve these mini pides warm, straight from the oven, as a main dish with a simple green salad or a bowl of soup.

They also make excellent party appetizers—cut them into smaller pieces and serve on a platter with a side of yogurt sauce or a sprinkle of fresh herbs. The crispy crust and gooey cheese are best enjoyed immediately.

For a complete meal, pair the pides with a Turkish-inspired spread: olives, pickled vegetables, and a bowl of cacık (yogurt with cucumber). They also work well as a side to grilled meats or as a hearty snack. If you have leftovers, they can be sliced and toasted for a delicious breakfast or lunch.

Frequently asked questions

Can this recipe be made without yeast?
Yeast is essential for the dough to rise and develop the characteristic pide texture. Without it, the bread will be dense and flat. If you want a quick alternative, you could use self-rising flour and skip the yeast, but the result will be more like a flatbread than a pide.
What is the best cheese for a good cheese pull?
Kaşar cheese is traditional and gives an excellent stretch. Low-moisture mozzarella is a reliable substitute. Avoid pre-shredded cheese as it often contains anti-caking agents that prevent smooth melting. Grating your own cheese from a block yields the best results.
Can the dough be prepared in advance?
Yes, the dough can be made up to a day ahead. After the first rise, punch it down and refrigerate it in a covered bowl. Let it come to room temperature before shaping. The garlic butter paste can also be made ahead and stored in the fridge for up to 3 days.
Why is the bottom of the pide not crispy?
A soggy bottom can result from too much moisture in the toppings or baking on a cold sheet. Ensure the mushrooms are dry and not overloading the pide. Preheat the baking sheet in the oven so the dough starts cooking immediately on the hot surface.
Can these pides be frozen?
Yes, baked pides freeze well. Cool them completely, wrap tightly in plastic wrap and foil, and freeze for up to 2 months. Reheat from frozen in a 350°F (175°C) oven for 10–15 minutes until hot and crisp.

Mini garlic mushroom pide with golden crust and melted cheese pull

Ingredients

  • 1 cup warm milk
  • 1 tsp active dry yeast
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 1/2 cups all-purpose flour
  • 12 cloves garlic, peeled
  • 2 tbsp unsalted butter, softened
  • black pepper to taste
  • 1/2 tsp paprika
  • 2 tbsp fresh parsley, chopped
  • 250 g shredded kaşar cheese (or mozzarella)
  • 200 g button mushrooms, sliced
  • 1 tsp red pepper flakes

Instructions

  1. In a large bowl, combine the warm milk, yeast, and salt. Let stand for 5 minutes until the yeast is foamy. Add the olive oil and flour, and mix until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
  2. While the dough rises, heat a small skillet over medium heat and add the garlic cloves with a splash of oil. Cook, stirring, until the garlic is golden and fragrant, about 3–4 minutes. Remove from heat and let cool slightly. Mash the garlic with the softened butter, black pepper, paprika, and parsley until a smooth paste forms.
  3. Punch down the risen dough and divide it into 4 equal pieces. On a lightly floured surface, roll each piece into an oval about 8 inches long and 5 inches wide. Transfer the ovals to a parchment-lined baking sheet.
  4. Spread a generous layer of the garlic butter paste over each dough oval, leaving a small border around the edges. Sprinkle the shredded cheese evenly over the paste, then scatter the sliced mushrooms on top. Finish with a pinch of red pepper flakes.
  5. Preheat the oven to 410°F (210°C). Bake the pides for 18 minutes, or until the crust is golden brown and blistered and the cheese is melted and bubbling. The edges should be crisp and deep golden.
  6. Remove the pides from the oven and let them cool for 2–3 minutes. Slice each pide diagonally with a sharp knife to expose the gooey cheese. Serve warm, with extra red pepper flakes if desired.
