Tips for success
To add another layer of flavor, consider adding a pinch of smoked paprika or cayenne pepper to the cheese sauce. This will enhance the smoky notes of the cheddar and provide a subtle heat that cuts through the richness of the pork fat. If you prefer a crunchier topping, you can sprinkle a handful of panko breadcrumbs over the mac and cheese before broiling, which will toast beautifully alongside the glazed pork cubes.
When working with the bourbon glaze, be extremely cautious if using a gas stove, as the alcohol can flare up when added to a hot pan. Pour the bourbon away from the heat source if you are concerned about flames. The goal is to reduce the bourbon until the raw alcohol scent has dissipated, leaving only the complex, oaky sweetness that pairs so perfectly with the saltiness of the pork and the creaminess of the cheese.
Variations
- Spicy Maple-Bourbon: Add one tablespoon of chopped chipotle peppers in adobo sauce to the glaze for a smoky, spicy kick that pairs beautifully with the richness of the pork and cheese.
- Herb-Crusted Variation: Mix fresh chopped thyme and rosemary into the cheese sauce for an earthy aromatic profile that complements the sweetness of the maple syrup and the smokiness of the cheddar.
Storage and make-ahead
- Fridge
- Keep in an airtight container for up to 3 days. Ensure the food cools to room temperature within 2 hours before refrigerating.
- Reheat
- Reheat in a 350°F oven until warmed through, or use the microwave in short intervals, stirring occasionally, until the sauce is creamy and hot again.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Because the dish contains dairy and pork, it is important to let it cool to room temperature for no more than 2 hours before moving it into the fridge.
When storing, try to keep the crispy topping separate if possible to maintain its texture, although the sauce will naturally soften the pork slightly over time as it sits in the refrigerator.
You can prepare the cheese sauce and cook the pasta ahead of time. Keep them stored separately in the refrigerator and combine them just before you are ready to assemble and broil.
The pork belly can also be seared and glazed in advance, though it is best to quickly reheat it in a skillet to restore its crispiness before placing it on top of the pasta for the final broiling step. This ensures the best textural experience when you are ready to serve.
Serving ideas
Serve this dish immediately while it is piping hot and the cheese sauce is at its creamiest. It is a very rich and filling meal, so it pairs best with a light, acidic side salad featuring vinaigrette-dressed greens to help balance the decadence of the pork and cheese.
A side of roasted asparagus or steamed broccoli can also provide a fresh, crisp contrast to the dense, creamy pasta, making for a more well-rounded and satisfying dining experience.
Present the dish directly in the baking vessel for a rustic, family-style presentation. Ensure that the pork belly is evenly distributed across the top so that every serving includes a generous portion of the crispy, glazed meat.
Garnish generously with the fried shallots and scallions just before bringing it to the table to ensure they retain their crunch and color. This simple presentation highlights the high-quality ingredients and the effort put into the preparation, making it perfect for hosting.

Crispy Maple-Bourbon Pork Belly Mac and Cheese

Ingredients
- 350 grams pork belly, cubed
- 30 milliliters bourbon
- 2 tbsp maple syrup
- 450 grams pasta shells
- 600 milliliters smoked cheddar and Gruyère cheese sauce
- to taste fried shallots
- to taste chopped scallions
Instructions
- Place the cubed pork belly into a preheated cast-iron skillet over medium-high heat. Sear the cubes, turning occasionally, until the skin is crispy and the fat has rendered. Ensure the internal temperature reaches 145°F (63°C). Once cooked, remove from heat and let rest for 3 minutes before proceeding.
- Pour the bourbon into the skillet with the crispy pork belly, allowing it to sizzle and reduce slightly. Stir in the maple syrup to coat the cubes thoroughly until they become sticky and glossy.
- Cook the pasta shells in salted boiling water until al dente. Drain well. In a separate large saucepan, heat the smoked cheddar and Gruyère cheese sauce until it reaches 88°C (190°F), then stir in the cooked pasta shells until fully coated.
- Transfer the pasta mixture to a baking dish and top with the sticky maple-bourbon pork belly. Place under a preheated broiler at 215°C (420°F) for a few minutes until the top is bubbling. Remove from the oven and garnish with fried shallots and chopped scallions before serving.
