Tips for success

For the crispiest result, serve the chicken immediately after tossing in the glaze. If you need to hold it for a few minutes, keep the glazed chicken in a warm oven (200°F/95°C) on a wire rack, but note that the crust will soften slightly.

To reheat leftovers, place them on a baking sheet in a 400°F (200°C) oven for 5–7 minutes; this restores some crunch. Avoid microwaving, which will make the coating chewy.

If you are making this for a crowd, you can fry the chicken ahead and keep it on a wire rack at room temperature for up to an hour, then reheat it in a 375°F (190°C) oven for 3–4 minutes before tossing with the glaze.

The glaze can also be made ahead and reheated. Adjust the amount of gochujang to your heat preference—start with 2 tablespoons if you are sensitive to spice, and add more to taste.

Variations

  • Spicy Gochujang: Increase the gochujang to 4 tablespoons and add 1 teaspoon of gochugaru (Korean chili flakes) to the glaze for an extra kick. Reduce the honey to 1 tablespoon to keep the balance.
  • Garlic-Honey: Add 2 extra cloves of minced garlic and increase the honey to 3 tablespoons. This version is sweeter and more garlicky, with a milder heat.
  • Sesame-Ginger: Add 1 teaspoon of toasted sesame oil to the glaze and an extra teaspoon of grated ginger. Garnish with additional sesame seeds and a drizzle of sesame oil.
  • Oven-Baked: Instead of frying, bake the coated chicken on a wire rack over a baking sheet at 425°F (220°C) for 20–25 minutes, turning once, until crisp. Toss with the glaze and serve.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze unglazed fried chicken in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
Reheat
Reheat frozen chicken on a baking sheet at 400°F (200°C) for 10–12 minutes, then toss with warm glaze.

Store leftover chicken in an airtight container in the refrigerator for up to 3 days. The coating will soften, but the flavor remains delicious.

To reheat, place on a wire rack over a baking sheet and bake at 400°F (200°C) for 5–8 minutes, or until hot and crisp. Avoid microwaving, as it will make the coating rubbery.

You can marinate the chicken up to 2 hours ahead and keep it refrigerated. The glaze can be made up to 3 days in advance and stored in the refrigerator; reheat gently before tossing. The chicken is best fried just before serving, but you can fry it fully and reheat in the oven for a few minutes before glazing.

Serving ideas

Serve these sticky popcorn chicken bites as a main dish with steamed rice and a side of quick-pickled cucumbers or kimchi. They also make a fantastic appetizer for parties—set out toothpicks and let guests help themselves. For a game-day spread, pair them with cold beer or a tangy slaw to cut through the sweetness.

If you want to stretch the dish, serve it over a bowl of rice with a fried egg (if you are not avoiding eggs) or with a simple green salad.

The glaze is also delicious drizzled over vegetables or used as a dipping sauce for other fried items. Leftover chicken can be chopped and added to fried rice for a quick, flavorful meal.

Frequently asked questions

Can this recipe be made without a deep-fry thermometer?
Yes, but it is trickier. To test the oil temperature, drop a small piece of bread into the oil; if it sizzles and turns golden brown in about 60 seconds, the oil is around 350°F (175°C). For the first fry, the oil should be slightly cooler—bubbles should form around the chicken but not aggressively. For the second fry, the oil should be hot enough that the chicken browns in 90 seconds. Using a thermometer is more reliable and recommended for consistent results.
What is the best way to keep the chicken crispy after tossing in the glaze?
The key is to toss the chicken in the glaze just before serving, and to use a thick glaze that coats but does not soak. Make sure the chicken is very hot when you add it to the glaze, and toss quickly. Serve immediately. If you need to hold it, keep it in a warm oven on a wire rack, but the crunch will diminish over time.
Can this recipe be doubled or halved?
Absolutely. The recipe scales easily. When doubling, fry in batches to avoid overcrowding, and make sure the oil returns to temperature between batches. For halving, use a smaller pot so the oil level remains sufficient. The glaze can be halved or doubled proportionally.
Is there a substitute for gochujang if it is not available?
If you cannot find gochujang, mix 2 tablespoons of sriracha with 1 tablespoon of miso paste and a pinch of sugar. This will give a similar heat and umami, though the flavor will not be as deep. Alternatively, use 1 tablespoon of sambal oelek mixed with 1 teaspoon of soy sauce and a teaspoon of sugar.
Why does the coating sometimes fall off the chicken during frying?
The coating can fall off if the chicken is too moist or if the starch is not pressed on firmly. Pat the chicken dry before marinating, and after dredging, let the coated pieces rest for 5 minutes so the starch adheres. Also, avoid moving the chicken too soon after placing it in the oil; let it set for 30 seconds before turning.

Crispy Korean Gochujang Sticky Popcorn Chicken

Crispy gochujang popcorn chicken in a glossy red glaze, topped with sesame seeds and scallions.

Ingredients

  • 1 1/2 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • 1 cup potato starch
  • 4 cups vegetable oil, for frying
  • 3 tbsp gochujang (Korean chili paste)
  • 2 tbsp ketchup
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 1 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp toasted sesame seeds
  • 2 scallions, thinly sliced

Instructions

  1. In a large bowl, combine the chicken pieces with 2 tablespoons soy sauce and the grated ginger. Toss well to coat, then cover and refrigerate for at least 15 minutes (or up to 2 hours). When ready to cook, place the potato starch in a shallow dish. Working in batches, dredge each piece of chicken in the starch, pressing lightly so it adheres and forms craggy flakes. Shake off any excess and set the coated pieces on a plate.
  2. In a large pot, heat the vegetable oil over medium-high heat until a deep-fry thermometer reads 340°F (170°C). Carefully lower about one-third of the chicken pieces into the hot oil, making sure not to overcrowd the pot. Fry for 4 minutes, turning occasionally, until the coating is pale golden and the chicken is cooked through. Use a spider strainer to transfer the chicken to a wire rack set over a baking sheet. Repeat with the remaining batches.
  3. Increase the oil temperature to 375°F (190°C). Working in batches again, return the fried chicken to the hot oil and fry for 90 seconds, until the coating is deep amber, shatteringly crisp, and the chicken is heated through. Transfer back to the wire rack to drain. The chicken should reach an internal temperature of 165°F (74°C) if checked with an instant-read thermometer.
  4. In a wok or large skillet, combine the gochujang, ketchup, honey, brown sugar, 1 tablespoon soy sauce, and minced garlic. Place over medium heat and bring to a simmer, stirring constantly. Cook for 2 to 3 minutes, until the glaze thickens, becomes shiny, and forms a frothy, bubbling layer across the surface. Remove from heat.
  5. Add the hot, crispy chicken to the wok with the glaze. Using tongs or a spatula, toss vigorously so every piece is coated in the sticky crimson sauce. The chicken should be evenly glazed but still hold its crunch. Immediately transfer to a serving platter.
  6. Sprinkle the glazed chicken with toasted sesame seeds and sliced scallions. Serve immediately while the chicken is still hot and crispy, with extra gochujang or a side of pickled radish if desired (not shown in video).
