Tips for success
To ensure your homemade Mexican pizza maintains its incredible crunch, pay close attention to the moisture content of your ingredients.
Always drain your diced tomatoes thoroughly in a fine-mesh strainer before scattering them over the top, as excess tomato juice can quickly soften the melted cheese and the crispy tortilla underneath. Similarly, make sure your pre-cooked seasoned beef is warm but not swimming in liquid or grease when you spread it onto the tortillas.
Customize your toppings to suit your taste, but add them only right before serving to preserve the pizza's crunch. If you prefer a bit of heat, consider adding sliced jalapeños or a drizzle of your favorite hot sauce.
For an extra creamy texture, dollop the sour cream in the center and spread it gently, or use a squeeze bottle to create an elegant zigzag pattern across the top before slicing. Freshness is key to balancing the rich beef and cheese.
Variations
- Vegetarian Bean Pizza: Swap the seasoned ground beef for warm, seasoned refried black or pinto beans spread directly onto the crispy tortillas.
- Spicy Jalapeño Pizza: Add sliced fresh or pickled jalapeños and a drizzle of hot sauce before melting the cheese for an extra kick.
Storage and make-ahead
- Fridge
- Store leftover cooked ground beef and fresh toppings in separate airtight containers in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended for assembled pizzas as the fried tortillas will lose their crispiness and become soggy upon thawing.
- Reheat
- Reheat the beef in a skillet over medium heat, then assemble with fresh fried tortillas and melt the cheese under the broiler.
These Mexican pizzas are best enjoyed immediately while the tortillas are hot and crispy. If you have leftovers, store the components separately to prevent sogginess. Keep the cooked seasoned ground beef in an airtight container in the refrigerator for up to three days. Store any leftover fried tortillas in a dry, zip-top bag at room temperature. Reassemble and heat the pizza when you are ready to eat to preserve that perfect texture.
You can easily prep the ingredients ahead of time to make assembly incredibly fast. Cook and season the ground beef up to two days in advance, then store it in the refrigerator. Chop your fresh tomatoes, olives, and green onions ahead of time and keep them in separate containers in the fridge. When you are ready to serve, simply warm up the beef, assemble the layers with your pre-fried tortillas, and melt the cheese under the broiler.
Serving ideas
Serve these crispy Mexican pizzas immediately after assembly on a large wooden board or a rustic platter to keep the presentation casual and inviting. Pair them with a side of Mexican rice, refried beans, or a simple green salad with a tangy cilantro-lime dressing for a complete and satisfying meal.
They make a fantastic centerpiece for a family game night or a casual weekend dinner party with friends, offering a fun and interactive dining experience.
Provide extra bowls of sour cream, fresh salsa, guacamole, and hot sauce on the side so everyone can customize their slices to their liking. Since the pizza is loaded with delicious toppings, it can be a bit messy to eat, so be sure to have plenty of napkins on hand.
Slicing it into clean quarters with a sharp knife makes it easy for everyone to grab a piece while keeping the toppings intact and ensuring every bite has the perfect crunch.

Crispy Homemade Mexican Pizza with Seasoned Beef

Ingredients
- 4 fried flour tortillas, store-bought or made ahead
- 1/2 lb seasoned ground beef, cooked and warm (made ahead)
- 1 cup shredded cheese
- 1/4 cup sour cream, for serving
- 1/2 cup diced tomatoes
- 2 tbsp sliced black olives
- 2 tbsp sliced green onions
Instructions
- Place two of the golden fried tortillas on a baking sheet. Evenly spread the warm seasoned ground beef across both tortillas. Sprinkle half of the shredded cheese directly over the beef layer, then place the remaining two fried tortillas on top of each to create a sandwich.
- Sprinkle the remaining shredded cheese evenly over the top of the upper tortillas. Place the baking sheet under your broiler for 2 to 3 minutes, or in a preheated oven at 400°F (200°C) for 5 minutes, until the cheese is completely melted, bubbly, and the ground beef inside reaches a safe temperature of 160°F (71°C).
- Remove the warm pizzas from the heat. Spoon a dollop of sour cream into the center of each pizza, then scatter the diced tomatoes, sliced black olives, and green onions over the top.
- Transfer the towering pizzas to a wooden board. Use a large, sharp knife to slice firmly down through the stacked crispy tortillas, creating a clean, loud crunch as you cut them into quarters, and serve immediately.
