Tips for success
For an extra-crispy crust, let the dredged tenders rest on the wire rack for 10-15 minutes before frying. This allows the coating to adhere better and helps prevent it from falling off during cooking.
Also, shaking off excess flour before frying ensures a light, craggy texture rather than a thick, doughy coating.
To keep the chicken warm while frying subsequent batches, place the cooked tenders on a wire rack set over a baking sheet in a 200°F (93°C) oven.
This maintains crispness without steaming. If making a large batch, you can double the recipe, but always fry in small batches to maintain oil temperature.
Variations
- Spicy Kick: Add 1-2 teaspoons cayenne pepper to the flour mixture and a dash of hot sauce to the marinade for a spicy version. Increase black pepper in the sauce to taste.
- Honey Mustard Glaze: After frying, toss the chicken fingers in a mixture of 1/4 cup honey and 2 tablespoons Dijon mustard for a sweet and tangy glaze.
- Garlic Parmesan: While the chicken is still hot, sprinkle with grated Parmesan cheese and an extra pinch of garlic powder for a savory twist.
- Gluten-Free: Use a gluten-free all-purpose flour blend in place of regular flour and ensure the Worcestershire sauce is gluten-free. Cornstarch is naturally gluten-free.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven for 10-15 minutes to restore crispness.
- Freezer
- Freeze cooked chicken fingers in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat frozen or refrigerated chicken fingers in a 375°F oven on a wire rack for 10-15 minutes (longer if frozen) until hot and crisp.
Store leftover chicken fingers in an airtight container in the refrigerator for up to 3 days.
To reheat, place them on a wire rack over a baking sheet and heat in a 375°F (190°C) oven for 10-15 minutes, or until heated through and crisp. Avoid microwaving, as it will make the coating soggy.
The chicken can be marinated up to 4 hours in advance, and the sauce can be made up to a week ahead. For the best texture, dredge and fry just before serving.
If you need to prep ahead, you can dredge the tenders and refrigerate them for up to 2 hours before frying, but the coating may become slightly less crisp.
Serving ideas
Serve these chicken fingers hot with the Cane's sauce on the side for dipping. They pair perfectly with crinkle-cut fries, coleslaw, and Texas toast for a complete meal. For a lighter option, serve over a green salad or with roasted vegetables.
These fingers also make great party food—arrange them on a platter with extra sauce and toothpicks for easy grabbing. For a game-day spread, serve alongside other finger foods like onion rings, mozzarella sticks, or fried pickles.

- salt, to taste
- 2 cups all-purpose flour
- 3 tbsp cornstarch
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 cup mayonnaise
- 4 tbsp ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1/2 tsp black pepper
Instructions
- In a large bowl, whisk together the buttermilk, 2 tablespoons garlic powder, 1 tablespoon black pepper, 1 tablespoon smoked paprika, and salt to taste. Add the chicken tenders and turn to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- In a small bowl, stir together the mayonnaise, ketchup, Worcestershire sauce, 1 teaspoon garlic powder, and 1/2 teaspoon black pepper until smooth. Cover and refrigerate until ready to serve.
- In a shallow dish, whisk together the flour, cornstarch, 2 teaspoons garlic powder, 1 teaspoon smoked paprika, 1 teaspoon salt, and 1 teaspoon black pepper. Place a wire rack over a baking sheet nearby.
- Remove the chicken from the buttermilk marinade, letting excess drip off. Dredge each tender in the flour mixture, pressing gently to adhere. Shake off any excess and place on the wire rack. Repeat with all tenders.
- Pour about 2 inches of oil into a deep skillet or Dutch oven. Heat over medium-high until a deep-fry thermometer registers 350°F (175°C).
- Carefully place a few dredged tenders into the hot oil, without crowding. Fry for 4-5 minutes per side, until deep golden brown and cooked through. Transfer to a clean wire rack and repeat with remaining tenders.
- Let the fried chicken fingers rest on the wire rack for 2-3 minutes. Serve hot with the Cane's sauce on the side for dipping.
