Tips for success

For the crispiest loukoumades, serve them within minutes of frying. If you need to keep them warm, place them on a wire rack in a low oven (200°F) for up to 15 minutes, but do not cover them, as steam will make them soggy. When drizzling the honey, use a spoon to ensure even coverage. If you prefer a less sweet dessert, serve the honey on the side so each person can add their own amount.

The dough can be made ahead and refrigerated after the first rise; punch it down and store it in an airtight container for up to 24 hours. Before frying, let it come to room temperature and give it a gentle stir.

The oil temperature is critical—invest in a deep-fry thermometer if you don't have one. After frying, allow the oil to cool completely before straining and discarding it. Do not pour hot oil down the drain.

Variations

  • Chocolate Drizzle: Instead of honey syrup, drizzle the loukoumades with melted dark chocolate and sprinkle with sea salt. The bitterness of the chocolate pairs beautifully with the fried dough.
  • Citrus Honey: Add the zest of one orange to the honey syrup and a squeeze of orange juice. The citrus brightens the flavor and adds a fresh aroma.
  • Sesame Crunch: Replace the walnuts with toasted sesame seeds and drizzle with tahini mixed with honey. This adds a nutty, slightly savory note.
  • Spiced Sugar: Toss the warm loukoumades in cinnamon sugar instead of honey for a simpler, crunchy coating. Serve with a dollop of whipped cream.

Storage and make-ahead

Fridge
Store leftover loukoumades in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to restore some crispness.
Freezer
Freeze unfried dough balls on a parchment-lined baking sheet, then transfer to a freezer bag for up to 2 months.
Reheat
Reheat fried loukoumades in a 350°F oven for 5-7 minutes, or in an air fryer at 350°F for 3-4 minutes, until hot and crisp.

Loukoumades are best enjoyed fresh, but leftovers can be stored in an airtight container at room temperature for up to 1 day. They will lose their crispness but remain delicious. To reheat, place them on a baking sheet in a 350°F oven for 5-7 minutes, or until warmed through. The honey syrup can be stored separately in a jar at room temperature for up to 2 weeks.

The dough can be prepared up to 24 hours in advance. After the initial rise, cover the bowl and refrigerate. The cold will slow the yeast, but the dough will still be usable.

When ready to fry, let the dough sit at room temperature for 30 minutes to warm up. The honey syrup can also be made ahead and gently reheated before serving. The walnuts can be toasted and crushed up to 3 days in advance.

Serving ideas

Serve loukoumades warm, piled high on a platter, with the honey syrup drizzled generously over the top. The contrast of the hot, crisp balls with the cool, fragrant honey is irresistible.

For a more elegant presentation, skewer two or three balls on a wooden stick, as they do at Athens night markets. This makes them easy to eat and visually appealing. Pair with a cup of strong Greek coffee or a glass of cold milk.

Loukoumades are versatile: they can be served as a dessert, a sweet breakfast, or a festive snack. For a richer version, add a dollop of Greek yogurt on the side. The tanginess of the yogurt balances the sweetness of the honey.

You can also sprinkle with sesame seeds or ground pistachios instead of walnuts. The recipe is easily doubled for a crowd—just fry in batches and keep the finished balls warm in a low oven.

Frequently asked questions

Why do the loukoumades become soggy after frying?
Sogginess usually happens if the oil is not hot enough, causing the balls to absorb excess oil. Maintain a steady 360°F and fry in small batches. Also, drain them immediately on paper towels and serve right away.
Can the dough be made without ouzo?
Yes, ouzo is optional. It adds a subtle anise flavor and helps crisp the dough, but you can omit it or substitute with 1 teaspoon of lemon juice or brandy.
How do you keep the honey from crystallizing?
Honey naturally crystallizes over time. To keep it liquid, store it in a warm place and gently warm it in a water bath if it solidifies. Do not microwave it too long, as overheating can alter the flavor.
Can this recipe be made gluten-free?
Yes, you can substitute the all-purpose flour with a gluten-free all-purpose blend that contains xanthan gum. The texture may be slightly different, but the balls will still be delicious. Ensure the blend is designed for yeast baking.
What is the best oil for frying loukoumades?
Use a neutral oil with a high smoke point, such as vegetable, canola, or sunflower oil. These oils won't interfere with the flavor and can withstand the high frying temperature without burning.

Crispy Greek Honey Balls (Loukoumades) in 30 Minutes

A close-up of golden, crispy Greek loukoumades drenched in shimmering thyme honey and topped with crushed walnuts.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup warm water (about 110°F/43°C)
  • 2 1/4 tsp active dry yeast (one packet)
  • 1 tbsp honey
  • 1 tsp ouzo (optional)
  • 1/4 tsp salt
  • 2 cups vegetable oil, for frying
  • 1/2 cup Greek thyme honey
  • 1/2 cup walnuts, toasted and crushed
  • 1/2 tsp ground cinnamon

Instructions

  1. In a large mixing bowl, stir the warm water and honey together. Sprinkle the yeast over the top and let it sit for 5 minutes until frothy. Add the flour, salt, and ouzo (if using). Whisk vigorously until a smooth, thick batter forms. The dough should be too soft to knead, similar to a very thick pancake batter. Cover the bowl with a clean kitchen towel and let it rise in a warm spot for 30 minutes, until doubled in volume and bubbly.
  2. Pour the vegetable oil into a deep, heavy-bottomed pot, filling it at least 2 inches deep. Attach a deep-fry thermometer to the side of the pot. Heat the oil over medium-high heat until it reaches 360°F (182°C). Adjust the heat as needed to maintain this temperature throughout frying.
  3. Dip a spoon in the hot oil to coat it, then scoop a walnut-sized portion of the risen dough. Use another oiled spoon or your finger to push the dough off the spoon into the hot oil. Fry in batches of 5-6 balls, making sure not to overcrowd the pot. Roll the balls continuously with a slotted spoon so they brown evenly on all sides. Fry for about 3 minutes, until deep golden brown and puffed.
  4. Using a slotted spoon, transfer the fried loukoumades to a plate lined with paper towels. Let them drain briefly, about 1 minute, while you fry the remaining dough. Do not let them sit too long, as they will lose their crispness.
  5. In a small saucepan, gently warm the Greek thyme honey over low heat until it is runny and fragrant. Do not let it boil. Stir in the ground cinnamon. Keep the honey warm while you finish frying.
  6. Place the warm loukoumades on a serving platter. Drizzle generously with the warm honey syrup, making sure each ball is coated. Sprinkle with the crushed walnuts and a final dusting of cinnamon. Serve immediately while still warm and crisp.
