Tips for success
To ensure the best flavor, lightly toast your hazelnuts in a dry skillet before crushing them. This intensifies their natural oils and adds a deeper, more complex nuttiness that complements the praline paste.
Be careful not to burn them, as the sugars in the nuts can turn bitter very quickly. Once toasted, let them cool entirely before adding them to the filling mixture to maintain the integrity of the other ingredients.
If you find the chocolate is setting too quickly while you are filling the molds, place the molds in a slightly warmer area or gently re-warm the chocolate for a few seconds.
Conversely, if the kitchen is very hot, keep the filled molds in a cool spot to ensure the chocolate does not bloom or lose its glossy finish. Patience is key when working with chocolate, especially when aiming for that perfect, professional-looking shine on your finished bars.
Variations
- Dark Chocolate Version: Replace the milk chocolate with a high-quality 60% dark chocolate to create a more sophisticated, less sweet bar. The depth of the dark cocoa pairs excellently with the nutty hazelnut praline.
- Pistachio Twist: Swap the hazelnut praline paste for a high-quality pistachio butter and use crushed roasted pistachios instead of hazelnuts. This creates a vibrant green, nutty filling with a unique, earthy flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to one week if your kitchen is warm.
- Freezer
- Freezing is not recommended as it can affect the texture of the kataifi and cause the chocolate to bloom upon thawing.
- Reheat
- Do not reheat; these bars are designed to be eaten at room temperature.
Store the finished chocolate bars in an airtight container in a cool, dry place away from direct sunlight. Exposure to heat will cause the chocolate to soften and lose its temper, while humidity can cause the sugar to bloom, resulting in a dull or speckled appearance. If kept in a stable environment, these bars will maintain their crisp texture and fresh flavor for up to two weeks.
These bars can be made ahead of time and are perfect for gifting or special occasions. Once set, they can be stored at room temperature for several days. If you need to make them further in advance, they can be refrigerated, but be sure to bring them back to room temperature before serving to allow the flavors to fully bloom and to ensure the best possible mouthfeel for the praline interior.
Serving ideas
Serve these bars at room temperature to allow the creamy praline center to soften slightly, which enhances the contrast with the crunchy kataifi.
They make an excellent accompaniment to a cup of strong espresso or a rich black tea, as the bitterness of the coffee pairs beautifully with the sweet, nutty profile of the Gianduja. For an elegant presentation, you can lightly dust the tops with a touch of edible gold leaf or extra crushed hazelnuts.
When serving, consider cutting the bars into smaller bite-sized pieces if you are presenting them as part of a dessert platter. This allows guests to enjoy the complex textures without the bars being too overwhelming.
Because the kataifi can be quite delicate, use a warm, sharp knife if you choose to slice them, wiping the blade clean between each cut to ensure the edges remain clean and professional in appearance.

Crispy Gianduja and Kataifi Chocolate Bars

Ingredients
- 2 cups golden toasted kataifi shards
- 1 cup roasted hazelnut praline paste
- 1/2 cup hazelnut chocolate spread
- 1/4 cup crushed toasted Piedmont hazelnuts
- 16 oz 38% milk chocolate, tempered
Instructions
- In a large mixing bowl, combine the golden toasted kataifi shards, roasted hazelnut praline paste, hazelnut chocolate spread, and crushed toasted Piedmont hazelnuts. Fold the ingredients together gently using a spatula until the mixture is uniform and the kataifi is well coated in the nut pastes. Ensure the kataifi maintains some of its structural integrity for the best final texture.
- Gently melt the milk chocolate over a double boiler until it reaches 86 degrees Fahrenheit (30 degrees Celsius). Pour a thin layer of the tempered chocolate into the cavities of the chocolate bar molds, tilting the molds to coat the sides completely. Spoon the thick Gianduja kataifi mixture into the center of each cavity, leaving a small gap at the top to seal with the remaining chocolate.
- Pour the remaining tempered chocolate over the filling to cap the bars, smoothing the surface with an offset spatula. Transfer the molds to the refrigerator and allow the bars to set for exactly twenty-five minutes. Once fully set, carefully unmold the bars and serve at room temperature to enjoy the contrast between the crisp shell and the creamy hazelnut interior.
