Tips for success
For the crispiest carnitas, spread the shredded meat in a single layer on the baking sheet and broil in batches if needed. Overcrowding will steam the meat instead of crisping it.
Use a metal spatula to turn the pieces so they brown on multiple sides. A little char is good—don't be afraid of dark spots.
Save the leftover braising liquid. It's packed with flavor and can be drizzled over the carnitas before serving or used to moisten leftovers when reheating.
If you have time, let the cooked pork cool in the liquid for extra juiciness, but this is optional. The recipe is forgiving and adaptable to your schedule.
Variations
- Spicy Chipotle: Add 2 chopped chipotle peppers in adobo sauce to the slow cooker along with the spices. This gives the carnitas a smoky, spicy kick that pairs well with the citrus and cola.
- Garlic-Lime: Stir 4 minced garlic cloves and the zest of one lime into the braising liquid. The garlic adds depth, while the lime zest brightens the citrus flavor even more.
- Pineapple Cola: Substitute 1 cup of pineapple juice for half of the cola. The pineapple adds tropical sweetness and a hint of tang, creating a different but equally delicious flavor profile.
- Crispy Carnitas Tacos: After broiling, stuff the carnitas into corn tortillas and pan-fry them until the tortillas are golden and crisp. Top with cabbage slaw and a drizzle of crema for a crunchy, satisfying taco.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Keep the meat and braising liquid together to maintain moisture.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat with a splash of braising liquid until hot and slightly crispy. Or microwave in 30-second bursts, stirring between.
Store leftover carnitas in an airtight container in the refrigerator for up to 4 days. Keep the braising liquid separately if you have extra.
Reheat gently in a skillet or microwave, adding a splash of liquid to restore moisture. The crispy texture won't fully return after refrigeration, but the flavor remains.
You can cook the pork a day ahead and keep it in the refrigerator with the braising liquid. When ready to serve, shred the cold meat and broil as directed—it will crisp up beautifully.
The braising liquid can also be made ahead and stored separately. This makes the recipe perfect for entertaining.
Serving ideas
Serve the carnitas on warm corn tortillas with diced white onion and fresh cilantro. A squeeze of lime juice brightens every bite. For a heartier meal, add a side of refried beans or Mexican rice. These tacos are also great with pickled jalapeños or a drizzle of hot sauce if you like heat.
Beyond tacos, the carnitas are delicious in burrito bowls, on tostadas, or tucked into quesadillas. They can also be served over rice with a spoonful of the braising liquid. The versatility makes them a great meal-prep option—cook once and enjoy several different meals throughout the week.

Crispy Crockpot Carnitas with Orange and Cola

Ingredients
- 4 lb pork shoulder (butt), cut into 2-inch cubes
- 2 tbsp cumin-oregano spice blend
- 2 Valencia oranges, halved
- 1 cup Mexican Coca-Cola
- 12 corn tortillas, charred
- 1/2 cup diced white onion
- 1/4 cup fresh cilantro leaves
- 1 lime, cut into wedges
Instructions
- Place the cubed pork shoulder in the slow cooker insert. Sprinkle the cumin-oregano spice blend over the pork and toss to coat evenly. Squeeze the juice from the halved oranges over the meat, then pour the cola over everything. Ensure the pork is mostly submerged in the liquid.
- Cover the slow cooker and cook on LOW for 8 hours, until the pork is fork-tender and easily shreds. The meat should be deeply infused with the orange and cola flavors, and the braising liquid should be aromatic and slightly reduced. Let it rest for 3 minutes before slicing.
- Transfer the cooked pork to a cutting board. Using two forks, shred the meat into bite-sized pieces, discarding any large chunks of fat. Skim excess fat from the braising liquid if desired, and reserve about 1 cup of the liquid for crisping.
- Preheat the broiler. Spread the shredded pork in an even layer on a rimmed baking sheet. Ladle about 1/2 cup of the reserved braising liquid over the meat. Broil for 5–7 minutes, until the edges are browned and crispy. Stir and repeat with more liquid if needed. Let it rest for 3 minutes before slicing.
- While the carnitas broil, char the corn tortillas over an open flame or in a dry skillet until lightly blistered and pliable. Keep them warm wrapped in a clean kitchen towel.
- Pile the crispy carnitas onto the warm tortillas. Top with diced white onion, fresh cilantro leaves, and a squeeze of lime juice. Serve immediately while the meat is still crisp.
