Tips for success
For the best texture, use chicken thighs rather than breasts—they stay juicy and forgiving during high-heat searing. Dicing them into small, uniform pieces ensures they cook quickly and evenly.
If you want extra heat, add a pinch of cayenne to the marinade, or for a milder version, remove the seeds from the chipotle peppers before blending.
To get a perfectly crispy tortilla, make sure the skillet is dry and hot before adding the burritos. Don't use oil—the tortillas will crisp up beautifully on their own.
If you're making a larger batch, keep the toasted burritos warm in a 200°F oven while you toast the rest. This also helps the cheese stay melty.
Variations
- Vegetarian Option: Replace the chicken with 2 cups of diced portobello mushrooms or extra-firm tofu. Sauté with the same spices and chipotle paste until browned and cooked through. The rest of the assembly stays the same.
- Extra Smoky: Add 1 tsp of smoked paprika to the marinade and use a splash of liquid smoke when searing. Toast the burritos over a slightly higher heat for a deeper char, but watch carefully to avoid burning.
- Cheese Swap: Use pepper jack cheese for a spicier kick, or a blend of queso fresco and mozzarella for a milder, creamier melt. You can also add a few slices of avocado inside before toasting, though it's not in the original.
- Gluten-Free: Use gluten-free tortillas, such as those made from cassava or almond flour. Check that the chipotle peppers in adobo are gluten-free (most are). The rest of the ingredients are naturally gluten-free.
Storage and make-ahead
- Fridge
- Store sealed in the fridge for up to 3 days. Reheat in a dry skillet to restore crispness.
- Freezer
- Wrap cooled burritos individually in foil and freeze for up to 2 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat frozen or thawed burritos in a 375°F oven for 15-20 minutes, or in an air fryer at 350°F for 8-10 minutes, until hot and crispy.
Store leftover burritos in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a dry skillet over medium heat for 2-3 minutes per side, or in an air fryer at 350°F for 5 minutes, until heated through and crispy again. Avoid microwaving, as it makes the tortilla soft and soggy.
The chipotle paste can be made up to 3 days ahead and stored in the refrigerator. The chicken can be marinated up to 2 hours in advance.
Assemble the burritos (without toasting) up to a few hours ahead, wrap them tightly in plastic wrap, and refrigerate. When ready to eat, toast them in a dry skillet as directed, adding 1-2 minutes per side to ensure the center is hot.
Serving ideas
Serve these burritos whole or sliced in half, with extra lime wedges on the side for squeezing over the top. A dollop of sour cream or guacamole would be a cool contrast to the smoky heat, though the video doesn't show them—add them if you like, but they're not necessary.
The burritos are substantial enough to be a meal on their own, but they also pair well with a simple side salad or Mexican rice.
For a casual dinner, set out the burritos on a platter and let everyone grab their own. The crispy exterior and juicy filling make them a crowd-pleaser. If you're packing them for lunch, wrap each toasted burrito in foil to keep the crispness, and reheat in a toaster oven to restore the crunch.

Crispy Chipotle Chicken Burritos with Lime

Ingredients
- 4 oz chipotle peppers in adobo sauce
- 5 cloves garlic
- 2 tsp vegetable oil
- 2 lb boneless skinless chicken thighs, diced
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- salt to taste
- 1 tbsp lime juice
- 2 tbsp vegetable oil
- 4 large flour tortillas, warmed
- 2 tbsp chipotle sauce
- 1 cup shredded crisp lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/2 cup shredded cheese (such as Monterey Jack or cheddar)
Instructions
- In a blender or food processor, combine the chipotle peppers in adobo, garlic cloves, and 2 tsp vegetable oil. Blend until smooth, scraping down the sides as needed, to form a thick paste.
- In a large bowl, combine the diced chicken thighs with 3 tbsp of the chipotle paste (reserve the rest for spreading on tortillas), paprika, cumin, oregano, salt to taste, and lime juice. Stir until every piece is evenly coated. Cover and refrigerate while you prepare the other ingredients, or up to 30 minutes.
- Heat 2 tbsp vegetable oil in a large skillet over high heat until shimmering. Add the marinated chicken in a single layer (work in batches if needed) and sear without stirring for 2-3 minutes to get a good char. Then cook, stirring occasionally, for 5-6 minutes more until the chicken is charred at the edges, deeply smoky, and cooked through. The internal temperature should reach 165°F (74°C).
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds. Keep them covered to stay pliable.
- Lay a warm tortilla on a flat surface. Spread 1/2 tbsp of the reserved chipotle sauce (from the paste) over the center of the tortilla. Layer with shredded lettuce, a portion of the cooked chipotle chicken, diced tomatoes, red onion, and 2 tbsp of shredded cheese. Fold the sides inward, then roll tightly from the bottom to form a compact cylinder.
- Heat a dry skillet over medium heat. Place the burritos seam-side down in the skillet and toast for 2 minutes per side, turning carefully with tongs, until golden brown and crispy on all sides. The cheese inside should be melted and the exterior crunchy.
- Remove the burritos from the skillet and let them rest for 2 minutes. Slice each in half diagonally to display the molten cheese and saucy layers. Serve hot.
