Tips for success
For the crispiest feta, do not stir it once it goes into the skillet. Let the heat do the work, and resist the urge to flip or move it. The lacy edges form when the feta browns and caramelizes in the oil. Use a spatula to gently lift the edges to check for doneness, but avoid breaking the crust.
To get a perfectly glossy yolk, keep the heat medium and do not cover the skillet. If you prefer a more set yolk, cook for an additional 30 seconds. The lime juice is a bright, acidic counterpoint to the rich feta and egg; do not skip it. For an extra kick, add a few drops of hot sauce before serving.
Variations
- Spicy Honey Drizzle: After squeezing the lime, drizzle a teaspoon of honey over the top for a sweet-spicy contrast. The honey will caramelize slightly on the hot feta, adding a new layer of flavor.
- Herb Topping: Sprinkle with fresh chopped chives, parsley, or cilantro before serving. The herbs add a fresh, bright note that cuts through the richness of the feta and egg.
- Smoked Salmon Version: Top the finished dish with a few slices of smoked salmon for a luxurious brunch. The salty salmon pairs beautifully with the crispy feta and soft egg.
- Vegetable Boost: Add a handful of baby spinach or a few cherry tomatoes to the skillet just before the egg is done. The vegetables will soften and add color and nutrition to the dish.
Storage and make-ahead
- Fridge
- Store leftover crispy feta egg in an airtight container in the refrigerator for up to 1 day. The texture will soften, but the flavor remains good.
- Freezer
- Freezing is not recommended, as the crispy feta and egg texture will become rubbery and watery upon thawing.
- Reheat
- Reheat leftovers in a dry skillet over medium heat for 2 to 3 minutes, flipping once, until warmed through and the feta is crisp again.
This dish is best enjoyed immediately, as the crispy feta will soften as it sits. If you have leftovers, store them in an airtight container in the refrigerator for up to 1 day.
Reheat in a dry skillet over medium heat for about 2 minutes to restore some crispness, but the texture will not be the same as fresh.
You can prepare the components ahead of time: crumble the feta, slice the bread, and cut the avocado (toss with lime juice to prevent browning).
Store them separately in the refrigerator. When ready to cook, just heat the skillet and proceed. The egg is best cooked fresh, so do not assemble the dish in advance.
Serving ideas
Serve the crispy chili feta egg hot, straight from the skillet, on a warm plate. The contrast between the crunchy feta crust, the soft egg yolk, and the creamy avocado is the star.
Cut the toast in half to show the yolk and the crispy edges. A side of fresh fruit or a simple green salad makes a nice accompaniment.
For a heartier meal, add a handful of arugula or baby spinach on top before serving. You can also drizzle with a little extra chili oil for more heat.
This dish is satisfying on its own, but it also pairs well with roasted potatoes or a bowl of yogurt. The lime wedge is essential for brightening the flavors.

Crispy Chili Feta Egg on Sourdough

Ingredients
- 60 g Greek sheep feta
- 15 ml Sichuan chili crisp oil
- 1 pasture-raised egg
- 1 slice thick sourdough bread
- 1/2 ripe avocado
- 1/2 lime
Instructions
- Heat a non-stick skillet over medium heat. Add the Sichuan chili crisp oil and let it sizzle for a few seconds. Crumble the Greek feta into a circle in the center of the skillet, leaving a gap in the middle. Let the feta begin to melt and bubble around the edges.
- Crack the pasture-raised egg directly into the center of the feta ring. Let the egg settle and begin to cook, allowing the whites to spread slightly into the melting feta.
- Let the feta and egg cook undisturbed for 3 minutes, or until the feta has melted into a lacy, golden-brown crust and the egg whites are fully set. The edges of the feta should be frilly and deeply browned, while the yolk remains glossy and soft.
- While the egg cooks, toast the sourdough slice until deeply charred and crisp. Rub the cut side of the avocado over the hot toast, mashing it lightly with a fork.
- Using a spatula, carefully slide the crispy feta egg out of the skillet and onto the prepared sourdough. The lacy feta crust should stay intact, cradling the egg.
- Squeeze the lime half over the top, allowing the juice to hit the crispy feta and the yolk. Serve immediately while the feta is shatteringly crisp and the yolk is still glossy.
